Grilled Chicken Thighs With Curry Butter Recipe

Ingredients
1. Chicken thighs, skin on (12)
2. curry powder (1tbsp)
3. garlic (2tbsp)
4. finely diced red onion (1/2)
5. unsalted butter, at room temperature (8ounces+1tbsp)
6. salt and freshly ground pepper (to taste)
7. olive oil

Method of preparation:-

1. To prepare curry butter, take a large saucepan, place it over heat. Melt 1 tablespoon unsalted butter in it and then saute the garlic, onions in it until they get soft. Then add 1 tablespoon curry powder. Take off the pan from heat and keep it to cool.

2. Take a food processor; add 8 tablespoon of butter and the mixture of garlic and onions in it. Mix salt and pepper in it and keep it aside.

3. Now prepare a charcoal or wood grill and keep it to burn down to coals. Rub olive oil on chicken thighs and then sprinkle salt and pepper over them to taste. Then stuff 1 tablespoon of curry butter under the skin.

4. Place the chicken thighs on grill and grill them for about 5 minutes on each side until the chicken gets cooked.
