Spanish Chicken Curry Recipe

Ingredients
1. Chicken, cut into 12 pieces (1 1/2kg)
2. ghee or butter (50gms)
3. chopped spring onions (6 to 8)
4. cucumber, sliced lengthwise (4)
5. ginger and garlic paste (1 1/2tsp)
6. water
7. salt (to taste)
8. coarsely ground black pepper (to taste)
9. freshly ground red chilies (1tsp)
10. onions, quartered (3med.)
11. capsicum, sliced lengthwise (4 to 6)
12. bottle tomato Ketchup (3/4med.)

Method of preparation:-
1. Take chicken, boil it with garlic and ginger in a pot. When the chicken gets soft then strain the stock and keep it aside.

2. Take a heavy bottomed pan, heat butter or ghee in it and add onions in it and fry them. Then add capsicum, cucumber, spring onions in the pan and pour the tomato ketchup, pepper, salt and ground red chili in it and cook it.

3. Then add chicken and stock in it and keep it to simmer for about 10 minutes. When it gets ready then serve it over boiled rice.
