Corn Stuffed Meatloaf Recipe
Ingredients:
1 1/2 pounds lean ground beef, 1/3 cup finely chopped onion, 1/4 teaspoon black pepper, 1/2 teaspoon chili powder, 3/4 teaspoon salt, 1 1/2 cups whole kernel corn, canned or frozen, 1 cup soft bread crumbs, 1 tablespoon dried parsley flakes, 1 egg (slightly beaten), 1/2 teaspoon salt, 1/4 teaspoon pepper.
Preparation:
Combine ground beef, salt, pepper, and chili powder. On a large piece of wax paper or foil, form beef mixture in a large container. Mix all left ingredients. Top meat with stuffing mixture to within 3/4-inch of edges and roll up like a jelly roll.
Seal ends to keep corn mixture in. Place roll in a baking dish (with sides). Bake meatloaf at 350° F for about 1 hour to 1 hour and 15 minutes. Now it is ready to serve.
