Chinese Almond Cookies Recipe

Ingredients
Flour (2 cups), baking soda ( ½ tsp), butter ( ½ cup), white sugar (3/4 cup add more if needed), almond extract (2 ½ tsp), lightly beaten egg (1), baking powder ( ½ tsp), salt ( 1/8 tsp), shortening (1/2 cup), egg (1) and blanched almonds (1/4 pound whole one for each cookie).

Method Of Preparation:-
First heat the oven to 325 degrees F. Take a large bowl, mix flour, salt, baking soda and baking powder in it. Take another bowl of medium size, mix butter or margarine, sugar and shortening in it and beat the mixture with an electric mixer. Then add almond extract and egg in it and beat it until it gets well blended. Then add it to the flour mixture and mix it well. Make the dough of this mixture with your fingers. Divide the dough into 2 rolls of 10 to 12 inches long. Wrap the dough balls and place them in refrigerator for about 2 hours. Now take a roll of dough, score it at ¾ inch intervals to make 15 pieces and cut the dough. Make ball of each piece of dough and then place them on the lightly greased cookie tray. Press an almond in the center of each cookie. Apply the beaten egg on each cookie before baking. Now place the cookie tray in oven and bake the cookies for about 15 to 18 minutes until they get golden brown. Keep them to cool and then store them in air tight container.
