Finikia Recipe
Ingredients
1. All purpose flour (2 1/2c)
2. corn oil (1/2c)
3. grated zest of (1 orange)
4. superfine sugar (1/2c)
5. butter, softened (1/2c)
6. orange juice (1/2c)
7. ground cloves (1tsp)
8. ground cinnamon (1tsp)
9. baking powder (4tsp)
10. semolina (1 1/2c)
11. Finely chopped walnuts (1/2c, for garnish)
For syrup:-
1. Water (1c)
2. lemon juice (2tsp)
3. cinnamon (1stick)
4. honey (1/2c)
5. white sugar (1c)
Method Of Preparation:-
1. First heat the oven to 350 degrees F or 175 degrees C. Take cookie sheets, grease them and keep them aside. Take a large bowl, add orange zest, superfine sugar and butter in it and then cream this mixture. Slowly add oil in it and beat it until the mixture becomes light and fluffy.
2. Take a bowl, mix flour, semolina, cloves, cinnamon and baking powder in it. Then add flour mixture alternately with orange juice into the fluffy mixture. Beat the mixture until it becomes thicken. Place the mixture on lightly floured surface and then knead it to for firm dough.
3. Take about 1tablespoon of dough and make small balls or ovals. Then place the cookies on greased cookie sheets about 2-inch apart. Place the sheets in oven and bake at 350 degrees F for about 25 minutes until the cookies changes to golden color. Take out the sheets from oven and keep the cookies to cool on sheets.
4. To Make Syrup; take a saucepan of medium size, place it over medium heat. Add water, honey, white sugar, lemon juice and cinnamon stick in it. Keep this mixture to boil for about 10 minutes.
5. Then take out the cinnamon stick. Dip cookies, one at a time in the mixture while it is boiling hot. Place them on rack to dry and then dust walnuts over them. Now store the cookies in sealed container and keep them at room temperature.
Makes about 60 cookies
