Spanish Rice Pudding Recipe

Ingredients
1. Short grain white rice in Spanish food (3/4c)
2. granulated white sugar (1/4c)
3. whole milk (5c)
4. salt (1/8tsp)
5. butter (2tbsp)
6. heavy cream (1c)
7. egg yolks (2)
8. golden seedless raisins pre soaked in warm water (3/4c)
9. vanilla extract (1/4c)
10. ground cinnamon (optional)

Method Of Preparation:-
1. Take a heavy bottomed saucepan of medium size, place it on low heat. Add rice, milk and salt in it and mix the ingredients. Keep it to simmer for about 20 to 30 minutes until the rice becomes soft.

2. While cooking the rice, stir the mixture so that the rice does not stick to the bottom of the pan. When the mixture gets cooked then takes off the pan from heat and then adds egg yolks, vanilla, sugar and raisins in it.

3. Mix the ingredients properly and keep it for about 10 minutes. Vanilla and sugar get mixed very quickly and give nice smell. Then add butter and heavy cream in it and mix them well.

4. Take separate serving bowls or ramekins, put rice pudding in these bowl and sprinkle ground cinnamon on the top. It can be served warm or place it in the refrigerator for overnight and then serve it.
