Water Chestnuts Rubies Recipe

Ingredients
1. Water chestnuts (500gms)
2. salt (1/2tsp)
3. water (3/4c)
4. peeled, grated coconut (800gms)
5. pandan leaves, knotted (3 to 4 pieces)
6. water (1/2c)
7. sugar (200gms)
8. tapioca flour (1c)
9. water (1tsp)
10. red food coloring (1/4tsp)

Method of preparation:-
1. Take a pot, add ½ cup of water, sugar, pandan leaves in it to make syrup and keep this mixture to simmer for about 10 to 15 minutes over low heat. Take off the pan from heat and keep it to cool.

2. Take ¾ cup of water; mix grated coconut and ½ teaspoon of salt in it. Press this mixture to make coconut milk. Keep it to chill. Take water chestnuts, clean them thoroughly small knife. Remove the dirt if any. Peel and rinse the chestnuts again. Then cut it into small pieces of 5mm in size.

3. Take a large mixing bowl, mix red food coloring in 1 teaspoon of water. Add diced water chestnuts in it to coat them properly. Then roll these colored chestnuts in tapioca flour until get coated.

4. Keep a large pot of water to boil and then add coated water chestnuts in it and keep them stirring. Then take off the pan from heat and soak them in cold water until the chestnuts get ready to serve.

5. Take a small dessert bowl, pour ½ cup of chilled coconut milk in it with some crushed ice. Then add ¼ cup of rubies and a tablespoon of syrup in it to taste.

Makes about 8 to 10 servings
