Broiled Tilapia with Sweet Potato Crust And Vanilla Cream Sauce Recipe
Ingredients
1. Cooked and peeled sweet potatoes (3)
2. fresh orange juice ( 4tsp)
3. fresh lemon juice (3tsp)
4. minced ginger (1/2tsp)
5. salt (1tsp)
6. unsalted butter (1tbsp)
Crust:-
1. Roasted pecans (1c)
2. melted butter (2tbsp)
3. graham crackers (3)
Sauce:-
1. Pure vanilla extract (1tbsp)
2. heavy cream (5tbsp)
3. seafood seasoning or creole seasoning (a pinch)
4. fish stock or shrimp stock or water (2tbsp)
Method of preparation:-
1. Take sweet potatoes, juices, butter, salt and ginger and grind them and then keep this mixture aside. Grind the grahram crackers, pecans and butter together.
2. Cover the fish with the sweet potato mixture and then sprinkle the pecans mixture over the sweet potato mixture. Broil the mixture for about 4 minutes until get golden brown.
3. Take a frying pan, add cream, vanilla, fish stock and seafood seasoning. Keep it to boil and cook for 45 seconds or until the alcohol in the vanilla is gone and the sauce coats the back of a spoon.
4. Take a plate, pour the sauce in it and then broiled fish fillets on the top and serve it.
