Fried Cod Fingers Recipe
Ingredients
1. Cod fillets, skinned (2lbs)
2. oil (for frying)
3. lemon (1)
4. freshly ground pepper (to taste)
5. chervil and chopped parsley (1/4c)
6. oil (1/4c)
7. salt (to taste)
For Batter:-
1. Flour (1c + 2tbsp)
2. beer (1/2c)
3. eggs, separated (2)
Method Of Preparation:-
1. Take an earthenware dish, cut codfish fillets in finger shaped and place them on dish. Take lemon and squeeze it out in a small bowl and then pour lemon juice and oil over the fish. Now dust a little salt, pepper, chervil and chopped parsley over it.
2. Take a bowl, add flour in it and then put egg yolk with a pinch of salt in it. Mix egg yolk with flour to form the batter and then add beer in it. Make a thick pan cake batter and keep it aside.
3. Take a bowl, beat egg whites in it and put into the batter and mix with spoon to form light batter. Take a deep frying pan, place it over heat and then heat oil in it for frying.
4. Now drain the cod fingers, dip them in batter and then put them in hot oil to fry. When they get golden color then drain them on paper towel. Serve the fried cod fingers hot with fried parsley or tartar sauce.
