Moroccan Spiced Cod With Orange And Black Olives Recipe
Ingredients
1. Cod fish fillets (1pound)
2. finely chopped fresh parsley (2tbsp)
3. pitted black olives of good quality like nicoise, Kalamata or gaeta (1/3c)
4. extra virgin olive oil (3tbsp)
5. orange juice (1/4 to 1/3 c)
6. ras el hanout (1 1/2tbsp)
7. lemon wedges (for serving)
Method Of Preparation:-
1. First heat the oven to 425 degrees F. Take a baking dish, place fish in it and coat it with ras el hanout.
2. Take a bowl of medium size; add olive oil and orange juice in it. Mix them well and then pour the mixture over the fish in the dish. Then dust the olives over the fish.
3. Now place the baking dish in preheated oven and bake the fish at 425 degrees F for about 10 to 15 minutes until it gets flake easily with fork. The time of baking depends upon the thickness of the fish.
4. When the fish gets cooked then takes it out from oven, transfer it into a serving dish and decorate it with chopped parsley and lemon wedges. Now it is ready to serve.
