Oven Roasted Stuffed Fish With Fresh Herbs And Pomegranate Paste

Ingredients
1. Whole White fish (1large cavity cleaned, scales removed)
2. turmeric
3. pepper
4.salt
5. berberis (optional)
6. butter (1/2tbsp)
7. pomegranate paste (3tbsp)
8. dried sour plums (5small)
9. ground walnut (2tbsp)
10. grated garlic (2cloves)
11. grated onion (1small)

Fish herb mix Ingredients (250gms):-
1. Cilantro
2. parsley
3. mint
4. spring onion
5. tare (or replace chive)
6. Zeleng-o-Anarijie (or replace with rosemary)
7. sersem (optional)
8. pooneh (optional)

Sauce Ingredients:-
1.Tomato Paste (2tbsp)
2. walnut (1c)
3. turmeric
4. salt
5. pepper
6. black plums (1large cup)
7. oil (1/2tbsp)
8. diced onion (1large)

Method of preparation:-

1. First heat the oven to 400 degrees F. Take fish; season it from inside and out side with salt, pepper and turmeric.

2. To make the stuffing, take a blender; blend the grated onion, berberis, garlic, walnut, sour plums and pomegranate paste with the herb mix.

3. Now stuff this mixture in the cavity of the fish and then close the cavity with needle and thread. Apply the melted butter over the fish.

4. Take a roasting dish, spray it with some oil and then place the stuffed fish on it. Place the fish in the preheated oven and roast it for about 45 minutes until it gets golden brown.

5. Meanwhile heat oil in a frying pan and then saute onion and turmeric for few minutes to make sauce. Now reduce the heat and mix plums and walnuts.

6. Dilute the tomato paste in hot water and then add it in the mixture. Add pepper and salt according to taste. Now serve the fish whole with nice sauce on the top.
