Crab And Asparagus Risotto Recipe
Ingredients
1. Refrigerated pasteurized crabmeat (1/2 pound)
2. asparagus or green beans (1/2pounds)
3. dry white wine (1/2c)
4. chicken broth (6c)
5. uncooked Arborio rice (2c)
6. grated parmesan cheese (1/4c)
7. olive oil (2tbsp)
8. diced orange pepper (1medium)
9. chopped onion (1/2c)
Method of preparation:-
1. Take a sauce pan, place it over medium heat oil in it and then add onion and pepper in it and cook it for about 3 minutes until they get soft. Add rice in it and cook them for about 2 minutes.
2. Add wine in it and cook it until the wine gets absorbed and then add hot broth of 2 cups. Again cook it until the broth gets absorbed. Add ½ cup of broth and keep it to simmer by stirring it. Stir it until the broth gets absorbed.
3. Now add crabmeat and asparagus with the broth. Then add cheese in it. Now take off the pan from the heat. Cover the pan and keep it for about 5 minutes. Add more cheese in the risotto and then serve it.
