Pasta –Col Ragu Alla Bolognese Recipe
Ingredients
Pasta (1to2lbs), butter (1tbsp), extra virgin oil (4tbsp), dry white wine (1c)tomato sauce (1/4c), finely chopped celery (1stalk), finely chopped carrots (1/3c), finely chopped white onions (3/4c), finely chopped non smoked beans (1/4c), ground pork (7oz), extra lean ground beef (1lb).
Method of preparation:-
Take a pan. Place it over heat. Heat the olive oil and then add vegetables like carrots, onions and celery. Cook them for about 5 minutes or until they begins to soften. Raise the heat to high and then add beef, pancetta and pork in it. Mix it well. After about 5 minutes when the meat has lost most of its red color then add 1 cup of white wine and cook it over high heat by mixing it often. Cook it until the wine gets evaporate and then add tomato sauce, a pinch of salt and pepper. Mix it well. Now lower the heat to simmer, cover the pan and cook it slowly for about 2 1/2hours. Be sure that it does not get dry. If it gets dry then add 1 cup of broth in it. When it gets ready then adds the butter in it.
