Miami Style Meatloaf Recipe
Ingredients:
4 slices dry whole wheat, 1 1/2 pounds lean ground beef, 2 eggs, 1 tablespoon olive oil, 1 cup chopped onion, 1/2 cup chopped green bell pepper, 1/2 pound lean ground turkey, 1/4 cup chopped red bell pepper, 1 clove garlic, 1/2 cup plain low fat yogurt or light sour cream, 1 teaspoon salt, 2 teaspoons prepared mustard, 2 tablespoons Pickapeppa Sauce, or use several dashes of another hot pepper sauce, 3 tablespoons chili sauce.
Preparation:
Put dry bread in food processor and pulse until crumbs are fine. In a large bowl, mix the crumbs into the ground beef and turkey. Set aside. Heat the olive oil over medium heat and sauté the onion and chopped bell pepper until the onion is soft, about 3 minutes.Add the garlic and sauté for 1 minute longer. Set aside to cool. In a food processor, mix together the eggs, yogurt or sour cream, horseradish or mustard, salt, and pepper sauce. Add the cooled chopped vegetables and the egg mixture to the meat mixture and mix. Combine gently but thoroughly with your hands. Pat the mixture into a loaf pan. Spread chili sauce over top of meatloaf and bake in a preheated 350° F oven for 1 to 1 1/2 hours.
