Blue Corn Biscotti Recipe

Ingredients
1. All purpose flour (2 ½ c)
2. yellow cornmeal (1/4c plus 2tbsp)
3. antisette or ambuca (2tbsp)
4. eggs (2large)
5. pecan pieces (3/4c)
6. granulated sugar (1 1/4c)
7. Stone-ground blue cornmeal (1/2 cup)
8. baking powder (1 1/2tsp)
9. salt (1/2tsp)
10. butter (2tbsp)

Method of preparation:-
1. First heat the oven to 375 degrees F. set a rack in it. Take an electric mixer, mix flour, yellow and blue cornmeal, salt, pecans, baking powder and sugar in the bowl of mixer. Mix it with mixer at low speed. Put butter in it and blend it.

2. When it gets blended, adds eggs and anisette and again beat it thoroughly to form dough of this mixture. Now place the dough on floured surface and shape the dough in rectangle shape.

3. Take a non stick baking sheet and lined it with parchment paper. Place the sheet in oven and bake it for 30 minutes or until it gets lightly brown and then cool it for 2 hours or for overnight. Heat the oven to 350 degrees F.

4. Take a cutting board and cut the logs on it with serrated knife into ½ inch slices and then place them on the baking sheet pan and bake for 10 to 12 minutes until the edge get lightly brown.

5. Take off the sheet from oven and then place the biscotti on wire rack to cool them. Store them in air tight container.

Number of biscotti -25 to 30

Almond Biscotti Recipe

Ingredients
All purpose flour (2c), almond extract (1/2tsp), eggs (3large), white sugar (3/4c), baking powder (1tsp), almonds (1c) and pure vanilla extract (1tsp).

Method of preparation:-
First of all heat the oven to 350 degrees F. Roast almonds for 5 to 10 minutes or until get lightly brown. Cool and chop these almonds and then keep them aside. Take a baking sheet line it with parchment paper and reduce the heat of the oven to 300 degrees. Take a small bowl, beat the eggs and extract in it and keep it aside. Take a large bowl, mix flour, baking powder, salt and sugar in it with hand beater or with electric mixer. Beat it for about 30 minutes until it gets blended and then add egg to the mixture. Mix it to form dough. Now add almonds and then divide the dough in half. Roll the half of the dough on the floured surface into logs of rectangle shape. Place logs on baking sheet well apart. Place the sheet in oven and bake it for about 35 to 40 minutes or until it gets firm. Take off the logs from oven and then place these logs on wire rack for cooling for 10 minutes. Now cut these logs into ½ inch slices in diagonal shape on the cutting board with serrated knife. Place slices on baking sheet and bake for 10 minutes or until get firm to touch. Take off from oven. Cool and pack in the airtight container. You can put chocolate glaze on biscotti before serving.

Make about 40 biscotti

Chocolate Biscotti With Cranberries Recipe

Ingredients
1. All purpose flour (1 3/4c)
2. baking powder (1tsp)
3. egg yolk (1large)
4. eggs (2large)
5. granulated white sugar (3/4c)
6. cranberries (1/2c)
7. salt (1/4tsp)
8. vanilla extract (1/4c)
9. sugar (3/4c)
10. unsalted butter (1/2c)
11. Dutch processed cocoa powder (1/2c)
12. white chocolate chips (1/2c)

Method of preparation:-
1. First heat the oven to 350 degrees F. Place the rack in the center of the oven. Use parchment paper to line the baking sheet and then keep it aside.

2. Take bowl mix butter and sugar in it until it gets fluffy. Mix it with hand blender or electric mixer. Add eggs and egg yolk in it and mix it well and then add vanilla extract in it.

3. Take another bowl, mix flour, cocoa powder, baking powder and salt in it. Mix it well and then add butter mixture in it. Put cranberries and white chocolate chips in this mixture and then make dough of this mixture.

4. Place the dough in floured surface and then divide it into 2 half. Form each half into a log 10 inches (25 cm) long. Now roll the dough in cylindrical shape. Place these rolls on baking sheet well apart.

5. Place the baking sheet in the oven and bake it for about 25 to 30 minutes. After baking take off the sheet from the oven and then place it on wire rack to cool it for about 10 minutes.

6.Now place the logs on cutting board with spatula. Cut these into ¾ inch thick slices with serrated knife. Place these slices on baking sheet and bake for about 8 to 10 minutes until get crispy and dry.

7. Take off the sheet from oven and then place it on wire rack to cool. After cooling store these biscotti in air tight container.

Make about 24 to 30 biscotti.

Italian Style Pepper Steak Recipe

Ingredients:-
1. Beef broth (1c)
2. thick fillets, sliced (3)
3. sliced red onion (1small)
4. sliced porcini mushrooms (6)
5. dried oregano (1tsp)
6. flour of dredging (1/2c)
7. extra virgin olive oil (3tbsp)
8. red bell pepper, sliced into strips (1)
9. chopped garlic (3 cloves)
10. chopped plum tomatoes (4)
11. salt (1/2tsp)
12. freshly black pepper (1/2tsp)

Method of preparation:-

1. First take meat slices in a bowl. Use flour for dredging the meat slices and keep it aside for sometime.

2. Take a frying pan. Add oil and Saute onions, garlic and bell pepper in it over medium heat for about 3 minutes until it gets tender. Now add the meat slices and saute it for about 8 minutes until it gets cooked.

3. Now add mushrooms and tomatoes and again cook it for 2 to 3 minutes. Sprinkle salt, pepper and oregano over it.

4. Add beef broth and again cook it for 5 minutes until the gravy or sauce becomes slightly thick.

Number of servings -4 to 6 people

Impossible Taco Pie Recipe

Ingredients
1. Bisquick (3/4c)
2. canned milk (1 1/4oz)
3. taco seasoning mix 1 envelope (1 1/4 ozs)
4. ground beef (1lb)
5. shredded Monterey Jack cheese (1c)
6. eggs (3)
7. chopped onion (1/2c)
8. diced tomatoes (2)
9. chopped green chilies, drained 1 can (4 ozs)

Method of preparation:-
1. Take a saucepan, saute chopped onions in it and add ground beef in it. Cook it until it changes to brown in color. Add the taco seasoning mix in it and mix it well.

2. Take a frying pan of 10 inches and then spread the beef mixture in it and dust the chilies over it. Beat eggs, milk and bisquick in a blender until the mixture becomes smooth. Then pour this mixture over beef mixture in pan. Place the tomatoes and cheese on the top of beef mixture in the pan.

3. Now bake it on medium heat for about 20 minutes on the top of stove. Bake it until the tooth pick inserted in the middle of pie comes out clean. Keep the pie to cool for about 5 minutes. Sprinkle chopped tomatoes and shredded jack cheese over it. Then serve it with sour cream.

Impossible Coconut Pie Recipe

Ingredients
1. Bisquick (1/2c)
2. shredded coconut (1/2c)
3. melted butter (1/2stick)
4. eggs (4)
5. sugar (1/2c)
6. vanilla (1/2tsp)
7. 1 1/2 cup milk

Method of preparation:-
1. First heat the oven to 350 degrees F. Take an ungreased pie tin of 10 inches.

2. Take a blender, put all ingredients in the container and then blend them for about 30 seconds on low speed. Then pour this mixture into the pie tin.

3. Place the pie tin in oven and bake it for about 50 minutes at 350 degrees F. When you bake the pie then it will make its own crust. Now take out the pie from oven and insert the tooth pick in the center of it. If the tooth pick comes out clean then the pie is ready. Keep it to cool for about 5 minutes and then serve it.

Impossible Broccoli And Cauliflower Pie Recipe

Ingredients
1. Bisquick (3/4c)
2. broccoli and cauliflower mix (1lb)
3. eggs (3)
4. milk (1 1/2c)
5. shredded cheddar cheese (1c)
6. mushrooms, stems and pieces, drained (1can about 4oz)
7. chopped onions (1/2c)
8. bacon slices (9)
9. salt (1tsp)
10. pepper (1/4tsp).

Method of preparation:-

1. First heat the oven to 375 degrees F. Take a pie plate of 10*1 ½ inches and grease it lightly.

2. Take a saucepan, fry the bacon in it and drain it and then keep it to cool. When the bacon gets cool then crumble it. Then cook the cauliflower and broccoli in pan until they get soft and then drain them.

3. Take a blender, beat the remaining ingredients in it until the mixture becomes smooth. Then pour this mixture over the bacon and vegetables into the pie plate.

4. Place the pie plate in oven and bake it at 375 degrees f for about 30 to 35 minutes. Now take out the pie from oven and keep it to cool for about 5 minutes and then serve it.
