Chicken Penne Al Fresco Recipe

Ingredients
1. Diced cooked chicken (2c)
2. chopped fresh basil leaves (1 1/4c)
3. coarsely ground black pepper (1/2tsp)
4. salt (1/2tsp)
5. chicken broth (3 3/4c)
6. penne pasta (3c)
7. cherry tomatoes (2c)
8. sliced garlic (4cloves)
9. freshly grated parmesan cheese (1/4c)
10. olive oil (1tsp)

Method of preparation:-
1. Take microwave-safe casserole dish, coat it with olive oil and then mix tomatoes and garlic in it. Cover the dish and place it in microwave.

2. Cook tomatoes and garlic in it on high for about 4 to 5 minutes by stirring after 2 minutes until the tomatoes get burst. Take out the tomato and garlic mixture from the microwave and then crush the remaining tomatoes by using fork. Mix chicken broth, pasta, salt and pepper in it.

3. Now cover the dish and place it again in microwave and cook on high for about 16 to 18 minutes until the pasta gets soft. Stir the mixture after 10 minutes while cooking. Now add cooked chicken, basil and parmesan cheese in it. And mix it well. Now it is ready to serve.

Spicy Chicken Pasta Recipe

Ingredients
1. Chicken breast, cut it into thin strips (1lb)
2. rotini pasta (1/2 pound)
3. broccoli florets (3c)
4. Sriracha or red chili sauce (1tbsp)
5. pepper (to taste)
6. tomatoes, wedged (3med.)
7. soy sauce (3tbsp)
8. onion cut into thin wedges (1large)
9. olive oil (2tbsp)

Method of preparation:-
1. Take pasta and cook it according to the instructions on the package of pasta and then keep it aside.

2. Take a pan, place it over medium high heat. Heat oil in it and then add chicken in the pan and keep it to cook until it gets cooked. Now take out the chicken from the pan and keep it aside. Saute onions in the pan for about 2 to 3 minutes and then add broccoli in it and cook it until it changes to dark green in color.

3. Add Sriracha, soy sauce and pepper in it and cook them for about 2 to 3 minutes. Now add cooked chicken and tomatoes and cook them for about 2 to 3 minutes until the tomatoes leave juices and then add cooked pasta and mix it well. Now the spicy chicken pasta is ready to serve.

Quick Chicken And Noodles Stir Fry Recipe

Ingredients
1. Chicken broth, warmed (1/4)
2. thinly sliced cabbage (2c)
3. diagonally cut celery (1c)
4. thinly sliced onion (1med.)
5. minced garlic (2cloves)
6. canola oil (1/4c)
7. chicken flavored oriental soup (2package about 3 ounces)
8. salt (1tsp)
9. water (1quarter)
10. 6 boneless, skinless chicken thighs (about 1 ½ pounds)
11. noodles (without flavor packets)
12. thinly sliced carrots (2/3 cup)

Method of preparation:-
1. Take chicken and cut it into ½ inch strips. Take a saucepan, boil water with salt in it over high heat. Cook noodles in it for about 2 minutes by stirring to keep them separate. Drain the noodles and keep them aside.

2. Take a deep frying pan, place it over medium heat. Add onion and garlic in it and fry them for about 4 minutes by stirring until the onion gets soft. Now increase the heat to high and add chicken in it and fry it for about 6 minutes until the chicken gets cooked. Push the ingredients in the pan aside and then add celery, carrots and 2 packages flavored oriental soup in the center.

3. Mix and cook them for about 2 minutes. Add cabbage in it and mix them, fry them by stirring for about 2 minutes. Add chicken broth and cooked noodles, mix well and cook them for 2 minutes more. Serve it at once with crisp noodles.

15 Minute Chicken Pasta Recipe

Ingredients
1. Juice of 1 large or 2 small oranges,
2. 25g flaked almonds (toasted)
3. 350g pasta bows
4. 1 tbsp olive oil
5. 3 large skinless boneless chicken breasts cut into bite-sized chunks
6. 2 tbsp wholegrain mustard
7. 2 garlic cloves crushed
8. 300g broccoli (cut into small florets)

Method of preparation:-
1. Boil and cook the pasta in salted boiling water as per given on the packet instructions. Put the broccoli into the salted water 3-4 minutes before the pasta is cooked and keep on boiling it.

2. Heat the oil in a fry pan add the chicken to it and keep on stirring it until it gets golden brown is completely cooked. Just two minutes before it is cooked add garlic to it.

3. Take a small bowl and mix the orange juice with the wholegrain mustard. Now, put this mixture over the chicken and heat it gently for 2-3 minutes.

4. Saving 3-4 tbsp of pasta water, drain the broccoli and pasta. Add salt and pepper and then serve.

Pasta Marinara With Chicken And Mushrooms Recipe

Ingredients
1. Rotini, cooked and drained (8oz)
2. boneless, skinless chicken breasts, cut into pieces (4)
3. red pasta sauce or spaghetti sauce (15 oz jar)
4. sliced mushrooms (2c)
5. skinned and chopped tomato (1)
6. grated parmesan cheese (1/4c)
7. garlic paste (1 tbsp)

Method of preparation:-

1. Take a saucepan, place it over medium heat. Heat oil in it and add chicken in it and cook it for about 3 minutes. Then add garlic and mushrooms in it and cook it for about 3 minutes by stirring.

2. Add spaghetti sauce in it and keep it to simmer for about 5 minutes until the chicken gets heated properly. Mix tomatoes in it. Now serve the chicken mixture over the pasta. Dust the parmesan cheese over it and serve it.

Low Carb Pasta With Chicken And Roasted Red Pepper Sauce

Ingredients
1. Boneless skinless chicken, cut into cubes (1.5lbs)
2. low carb pasta (if using shirataki noodles, two 8 ounces packages)
3. fresh chopped basil (optional)
4. roasted red pepper cream sauce
5. salt and pepper (to taste)
6. finely chopped onion (1/2c)

Method of preparation:-
1. First sprinkle salt and pepper over the chicken. Take a pan, place it over heat. Heat the oil in it and saute onions and chicken in it until the chicken gets cooked.

2. Take roasted red pepper sauce, heat it lightly but do not boil it. Take shirataki noodles, wash them in hot water or cook the other low carb pasta. Then cut the noodles according to desired length. Mix all the ingredients in a bowl, if fresh basil is available then chop it and add it in the bowl. Now it is ready to serve.

Mediterranean Chicken And Pasta Recipe

Ingredients
1. Boneless, skinless chicken breasts, cut into small pieces (1 1/4lbs)
2. sliced yellow squash (1med.)
3. sliced zucchini (1med.)
4. olive oil (2tbsp)
5. feta cheese, reduced fat, crumbled (1/4c)
6. chopped fresh basil (1/2c)
7. spinach penne or whole wheat penne pasta, cooked drained (3c)
8. wish bone Italian salad dressing (1/2c)
9. cherry tomatoes (3c)

Method of preparation:-
1. Take a large nonstick frying pan, place it over medium heat. Heat olive oil in it. Add chicken, yellow squash, zucchini in it and keep it to cook for about 8 to 10 minutes until the vegetables get soft and crispy and the chicken gets cooked properly. Mix the mixture regularly while cooking.

2. Mix tomatoes and salad dressing in it. Cook it for about 2 minutes until it gets heated by stirring it irregularly. Then add pasta and basil in it and mix it well to coat. Again cook it by stirring regularly until the mixture gets heated. Now dust the cheese over it and then serve it.
