Chicken Parmesan Recipe

Ingredients
1. Boneless chicken (4)
2. washed and patted dry bread crumbs (3/4c)
3. dried basil (2tbsp)
4. angel hair pasta (1pound)
5. parmesan cheese (3oz)
6. milk (1/4c)
7. eggs (2)
8. grated Romano cheese (1/2c)
9. fresh buffalo mozzarella cheese sliced (2package)
10. extra virgin olive oil (1/4c)
11. fresh ground pepper (1tsp)
12. salt (1tsp)
13. spaghetti sauce (1jar about 16oz)

Method of preparation:-

1. Take two sheets of wax paper. Pound the breast between the two sheets. Take a shallow dish. Mix egg and milk in it.

2. Take another shallow pan, mix pepper, basil, Romano cheese and bread crumbs in it. Dip the chicken first in egg mixture and then in bread crumbs mixture to coat it.

3. Take a heavy frying pan. Put chicken in it and fry it for about 10 minutes from both sides. Drain the top of paper towel while cooking.

4. Take a casserole dish, put spaghetti sauce on it and then place chicken slices on it and again top the slices with more sauce. Add mozzarella cheese and then bake in an oven at 350 degrees by covering it with foil.

5. Bake it until the cheese gets melted for about 15 minutes. Take off the foil and place it under broiler for 5 minutes until the cheese get lightly brown.

6. Take a large pot. Boil water in it and then cook pasta in it. Serve pasta with chicken parmesan and enjoy it.

Chicken Piccata Recipe

Ingredients
1. Boneless chicken breast cut lengthwise to make 8 pieces (4)
2. chicken broth (1/2c)
3. flour for dredging (1c)
4. dry vermouth (1/4c)
5. extra virgin olive oil (2tbsp)
6. salt (1/4tsp)
7. butter (4tbsp)
8. freshly squeezed lemon juice (1/4c)
9. drained and rinsed capers (1/3c)
10. chopped fresh parsley (1/3c)
11. freshly ground pepper (1/4tsp)

Method of preparation:-
1. Take two sheets of paper wax and pound the chicken between two sheets. Mix flour, salt and pepper in a bowl. Dredge each piece of chicken in flour mixture to coat it from all sides.

2. Take a large frying pan. Heat olive oil and butter in it over medium heat. Saute chicken in it for about 3 to 5 minutes. Take out the chicken from the pan and keep it aside.

3. Put chicken broth, lemon juice, capers, vermouth in the pan and cook it to make sauce. Now add chicken in this sauce and cook it for about 5 minutes.

4. After cooking place the chicken in the serving dish and pour sauce all over. Garnish it with parsley and serve it with steamed vegetables.

Classic Chicken Cacciatore Recipe

Ingredients
1. Cut chicken into pieces (2whole)
2. chicken broth (1can)
3. spaghetti or other type of pasta (1pound)
4. dry red wine (1/2c)
5. portabella mushroom or porcini (1c)
6. green pepper cut into chunks (1)
7. yellow onion cut into chunks(1)
8. diced tomatoes (1can)
9. flour for dredging (1/2c)
10. salt (1/2tsp)
11. freshly ground pepper (1/2 tsp)
12. extra virgin olive oil (1/4c)
13. dried oregano (1tsp)
14. dried basil (1tsp)
15. chopped fresh parsley (1/4c)

Method of preparation:-
1. Take a bowl, mix flour, salt and pepper in it. Use this flour mixture for dredging the chicken.

2. Take a large frying pan. Put olive oil in it and then saute the chicken in it. Place the chicken in large pot. Add tomatoes, broth and wine and then cook it for 15 minutes. Now add green pepper, onion and mushroom and then basil and oregano, cover the pot and cook it for 45 minutes.

3. Take pan boil water in it and pasta in it. Boil the pasta for 10 minutes until it gets properly cooked. Drain it. Place it on large serving dish and then top it with chicken and sauce. Garnish it with parsley and then serve it

Chicken With Orange Sauce Recipe

Ingredients
1. Chicken supreme (8oz)
2. orange brandy (2/3c)
3. all purpose flour (2tbsp)
4. dried whole meal spaghetti (14oz)
5. ricotta cheese (2/3c)
6. rind of orange, cut into fine strips (1orange)
7. leek, finely shredded (1)
8. red bell pepper, cut into strips (1oz)
9. zucchini, cut into strips (1oz)
10. freshly squeezed orange juice (2/3c)
11. rap seed oil (1/8c)
12. olive oil (3tbsp)
13. oranges peeled and cut into segments (3)
14. chopped fresh tarragon (2tbsp)
15. salt and pepper (to taste)
16. fresh tarragon leaves (to garnish)

Method of preparation:-

1. Take a large frying pan. Heat rap seed and olive oil in it. Add chicken and cook it until gets golden brown then add orange brandy and cook for 3 minutes.

2. Now sprinkle flour over it and again cook it for 2 minutes. Reduce the heat and then add zucchini, orange juice, leek, bell pepper and then season it. Heat it for 5 minutes until the sauce gets thickened.

3. Take a pan. Boil salted water in it then add spaghetti and 1 tablespoon of olive oil and then cook it for 10 minutes. Drain spaghetti and then place it on serving dish.

4. Cook half of the orange rinds, ricotta cheese and the tarragon in a pan to make sauce. Cook it for about 3 minutes.

5. Place the chicken on the top of spaghetti or pasta in serving dish and then pour this sauce over it and garnish it with orange segments, orange rind and tarragon leaves and then serve it.

Chicken Scallop Recipe

Ingredients
1. Cooked chicken diced (3/4c)
2. dry breadcrumbs (4tbsp)
3. grated cheddar cheese (1/2c)
4. cream fraiche (3/4c)
5. sliced thinly or chopped mushrooms (4 1/2c)
6. rind removed and chopped back bacon (3)
7. vegetable oil (3tbsp plus extra for brushing)
8. short cut macaroni or short pasta shapes (6 oz)
9. finely chopped onion (1)
10. salt and pepper (to taste)
11. flat leaf parsley sprigs (to garnish)
12. scallop shells (4)

Method of preparation:-
1. Take a large pan. Boil salted water in it and then cook pasta in this water. Add 1 tablespoon of oil in it and cook it for 8 to 10 minutes or until pasta gets tender.

2. Drain the pasta and then again put it in the pan. Heat the oil in the pan and then fry onion in it. Now add chopped bacon and mushrooms and cook for about3 to 4 minutes by mixing.

3. Add pasta, cream fraiche, chicken and season according to taste with salt and pepper. Take 4 scallop shells and brush these shells with oil and then put chicken mixture with spoon on it and smooth it to make neat mounds.

4. Mix cheese and bread crumbs in a bowl and then sprinkle over the shells and press it into chicken mixture. Heat the grill over medium heat.

5. Now grill the chicken for 4 to 5 minutes until gets golden brown and bubbling. When the chicken gets ready, garnish it with sprigs of flat parsley and then serve it hot.

Grilled (Broiled) Chicken Recipe

Ingredients
1. Boned chicken thighs (8part)
2. French bread (12slices)
3. green and red pesto sauce (1/2c)
4. passata, sieved tomatoes (2/3c)
5. olive oil for brushing
6. freshly grated parmesan cheese (1c)
7. pine nuts or flaked almonds (1/2)
8. salad leaves to serve

Method of preparation:-

1. Take a flameproof dish. Place the chicken in single layer on it and brush the chicken with light oil. Now place this dish in preheated grill or broiler for about 15 minutes or until it gets golden brown.

2. Turn the sides of the chicken during grilling it. Test it if it is cooked or not. When it is cooked, then the juice will turn clear not pink.

3. Take a small pan. Add excess fat in it and then warm the half of the pesto sauce and passata (sieved tomatoes) in it. Now pour it over the chicken. Again grill the chicken for few minutes until it gets coated.

4. Take French bread, spread pesto over the slices of bread. Now place the bread over the chicken and then sprinkle the parmesan cheese over it and spread the pine nuts over the cheese.

5. Again grill it for 2 to 3 minutes or until it gets brown and bubbling and then serve it with salad leaves.

Mustard Baked Chicken Recipe

Ingredients
1. Chicken pieces (80
2. lemon juice (3tbsp)
3. paprika (1 tsp)
4. fresh pasta shells (14oz)
5. olive oil (1tbsp)
6. poppy seeds (3tbsp)
7. brown sugar (1tbsp)
8. mild mustard (4 tbsp)
9. melted butter (4 tbsp)
10. salt and pepper (according to taste)

Method of preparation
1. First heat the oven to 400 degree F. Take a large ovenproof dish and place the chicken pieces in single layer on this dish.

2. Take a bowl, mix mustard, butter, lemon juice, paprika and sugar in it and add salt and pepper according to taste. Brush this mixture over the chicken pieces and then bake the chicken in oven for about 10 to 20 minutes.

3. Take out the chicken pieces from the oven. Coat the chicken pieces with remaining mustard mixture and then sprinkle poppy seed over the chicken. Place it again in the oven and bake for 15 minutes.

4. Take a large saucepan and boil lightly salted water in it. Add olive oil and pasta shells in it and cook for about 8 to 10 minutes or until it gets tender.

5. Now drain the pasta and place it on the warm serving dish. Put chicken over the pasta and then pour sauce over it and serve it immediately.
