South Indian Chicken Curry Recipe

Ingredients
1. Chicken cut up (1)
2. curry powder (1tbsp or to taste)
3. turmeric (1/2tsp)
4. minced ginger (1tsp)
5. minced garlic (1tsp)
6. diced onions (2med.)
7. cumin seeds (1/2tsp)
8. cinnamon stick (1 about 2” piece)
9. fennel (1tsp)
10. cardamom pods (3)
11. ghee or oil (3tbsp)
12. tamarind (1 about 1” square piece)
13. diced tomato (4small)
14. hot spicy mix or garam masala (1tbsp)
15. coconut milk (1/2c)

Method of preparation:-
1. Take a frying pan, heat oil in it. Add cumin seeds, fennel, cinnamon and cardamom pods in it. Fry them for about 1 to 2 minutes and then add onions in it and cook them until they get wilted.

2. Turn down the heat and add ginger and garlic in it and saute them for about 2 to 3 minutes. Then add curry powder, tamarind extract, coconut milk, garam masala, tomato, chicken and turmeric in it and then keep this mixture to boil.

3. Turn down the heat, cover the pan and keep it to simmer until the chicken gets cooked and the gravy gets thickened. When it gets ready then serve it hot with rice.

To make tamarind extract -
Soak tamarind in water for 2 hours. To extract the juice, crush it with the help of fingers and then threw the seeds and pith. Use this extract in the recipe.

Thai Red Chicken Curry Recipe

Ingredients
1. Oil (2 tsp.)
2. Lemon Grass (2-3 stalks, 6 inches from the root)
3. Chicken on the bone, cut into 12-16 pieces ( 1 Kg)
4. Chopped Onion (1 large)
5. Thai red curry paste (50 gm)
6. Coconut Milk (200 ml)
7. Chopped Ginger (2 tsp.)
8. Palm sugar or brown sugar (1/2 tsp.)
9. Shrimp paste or powder (1 Tsp, use little at first)
10. Fish sauce (1-2 tsp.)
11. Hot Water (1-2 cups)

Method of preparation:-
1. In a non stick pan, heat oil. Add onion and ginger to it. Stir it till it becomes tender. Add 3-4 chicken pieces at a time. Saute it and add the Thai red curry paste when all the chicken pieces are sealed on top.

2. Add 1 cup of hot water. Now crush the lemon grass stalk, brown sugar and add it to the chicken. After that, add fish sauce and shrimp paste.

3. Cover the pan with the help of lid. Cook the chicken until it becomes soft. Then add coconut milk in it. If required add more water. After few minutes taste it and if needed add more fish sauce and shrimp paste. Serve it with boiled rice.

Pepper Chicken Curry Recipe

Ingredients
1. Chicken (1/2kg)
2. oil (2tbsp)
3. salt (to taste)
4. green chilly (2)
5. ginger-garlic paste (1tsp)
6. pepper corns (5tsp)
7. turmeric powder (1/2tsp)
8. lemon juice (1 tsp.)
9. tomatoes (200gms)
10. onions (200gms)
11. cardamom (2 optional)
12. cinnamon (2)
13. bay leaf (1)
14. cloves (1)
15. garlic pods (1)

Method of preparation:-
1. Crush the peppercorns, slit the green chilies and chop onions and tomatoes and keep them aside.

2. Take a pan, place it over heat. Heat oil in it and then saute bay leaf, onions, cardamom, cinnamon and cloves in it until the onions get soft. Then add garlic pods, ginger-garlic paste, turmeric powder and tomatoes in it. Mix them well and then add little water in it and cook them until the onions and tomatoes get cooked.

3. Now add chicken and water in it and then mix crushed peppers and salt in it. Cook them until the chicken gets cooked. Add green chilies and lemon juice in it and cook. When the gravy gets thickened then take off the pan from heat and serve it hot with rice.

Curried Chicken And Corn Recipe

Ingredients
1. Boneless, skinless chicken trimmed of fat and cut in 1 inch chunks (1 ¼ lbs)
2. Vegetable oil (1 tbsp)
3. plain nonfat yogurt mixed (1 tbsp all purpose flour about ¾ cup)
4. chopped onions (1 ¼ cup)
5. thawed frozen corn kernels (1 package about 10 oz.)
6. curry powder (2 tsp to taste)
7. chopped fresh parsley (for garnish)

Method of preparation:-

1. Take a large heavy frying pan, place it over medium heat and heat oil in it. Add onions in it and mix curry powder in it. Cook this mixture for about 3 minutes by stirring 2 to 3 times until the onions get soft.

2. Now add chicken in it and cook it for about 5 to 7 minutes until the chicken gets solid. Then add corns in it and cook them. When the corns get hot then mix the yogurt mixture in it and keep it to simmer for about 2 minutes over low heat until the sauce gets smooth. When it gets ready then sprinkle parsley over it and serve it.

Chicken In Curried Yogurt Sauce Recipe

Ingredients
1. Boneless chicken breasts, cut into ½ inch strips (1 1/2lbs)
2. chicken broth (1/2c)
3. black pepper (1/4tsp)
4. salt (3/4tsp)
5. curry powder (2 ½ tsp)
6. chopped onion (1/2 cup)
7. sweet red bell pepper strips (1 cup)
8. cornstarch (1 tsp)
9. peach low fat yogurt (1 carton about 8 oz. )
10. frozen peas (1c)
11. lemon juice ( 2 tsp)

Method of preparation:-
1. Take a small bowl, mix yogurt with cornstarch in it. Take a frying pan of medium size, add chicken broth, black pepper, salt, curry powder, onion and pepper strips in it. Keep this mixture to boil. Turn down the heat to low and keep it to simmer uncovered for about 3 to 4 minutes until the onions get soft.

2. Now add chicken in it and keep it to simmer for about 2 minutes uncovered. Add more chicken broth in it if it is needed. Add peas in it and cook it for about 4 minutes until the chicken gets soft. Turn down the heat, mix yogurt in it.

3. Cook it for about 2 to 3 minutes by stirring until it gets hot over low heat. Sprinkle lemon juice over it and mix it gently. When it gets ready then serve it over steamed rice.

Chicken Fruit Curry Recipe

Ingredients
1. Boneless, skinless chicken breasts, cut into chunks (4small)
2. chicken stock (1 1/2c)
3. bay leaves (2)
4. curry powder (3tbsp)
5. crushed garlic (3cloves)
6. finely chopped onions (3/4c)
7. Dash cayenne pepper
8. soy sauce (1tsp)
9. non fat yogurt (1c)
10. slightly green bananas, peeled and chunked (2)
11. apples, peeled and cored (3)
12. drained canned whole tomatoes (1c)

Method of preparation:-
1. Take a frying pan of medium size and boil the chicken stock in it and then add bay leaves, curry powder, garlic and onions in it. Turn down the heat to low and then saute it for about 6 to 7 minutes until they get soft.

2. Now add chicken in it and cook it for 5 minutes by stirring. Turn the sides of chicken, once or twice while cooking. Now add the rest of the ingredients and keep it to simmer for about 45 minutes by stirring irregularly until the sauce gets smooth. When it gets ready then serve it with brown rice.

Kashmiri Cashew Chicken Recipe

Ingredients
1. Jointed chicken (1)
2. chopped cashew nuts (2c)
3. yogurt (1c)
4. curry powder (1tsp)
5. ginger (1tsp)
6. crushed garlic (2cloves)
7. chopped coriander leaves (3tbsp)
8. chopped green chilies (2)
9. finely chopped onions (2med.)
10. clarified butter (2tbsp)
11. water or chicken stock (2c)
12. green cardamom (2)

Method of preparation:-
1. Take a pot, place it over heat. Add chicken stock or water in it and then put chicken in stock. Keep it to boil and then simmer it until the chicken gets soft.

2. Take out the chicken from the stock. Boil the stock until it gets reduce to half. Take a pan, melt butter in it and then fry the onions in it until they get soft. Then add cardamom, curry powder, ginger, garlic, chilies and coriander in it and cook it for about 3 to 4 minutes by stirring.

3. Take a bowl, mix yogurt with ½ cup of stock in it and then pour it into the pan and cook it. When it starts boiling then adds chicken and mix salt in it. Keep it to simmer and then add nuts in it. Again simmer it for about 5 minutes and then serve it.
