Greek Egg Biscuits Recipe
Ingredients
1. All purpose flour (5 1/2c)
2. eggs (5)
3. vanilla extract (1tbsp)
4. white sugar (1c)
5. unsalted butter (2c)
6. sesame seeds (1/4c)
7. baking powder (3tbsp)
8. salt (1/2tsp)
Method Of Preparation:-
1. Take a large mixing bowl, beat butter in it until it becomes light and fluffy. Add sugar in it and beat it on medium speed for about 10 minutes. Add four of the eggs in it, one by one and beat it after each addition. Then beat vanilla in it.
2. Take a separate bowl, mix flour, salt and baking powder in it. Add this flour mixture into the butter mixture and mix it well to form soft dough. Heat the oven to 350 degrees F.
3. Take cookie sheets, grease them and keep them aside. Lightly dust flour on the working surface. Take 1 inch lump of flour and roll it on the floured surface into 7 inch long and ¼ inch wide ropes. Cross the ends and twist dough in a loop in the opposite direction to form braid and then place them about 1-inch apart on cookie sheets .
4. Take a small bowl, beat rest of the egg in it. Brush the beaten egg on braid to glaze and then dust sesame seeds on the top. Place the sheets in oven and bake for about 20 to 25 minutes at 350 degrees F. Then take out the sheets from oven and keep them to cool for about 10 minutes and then place on rack to cool completely.
Makes about 96 biscuits
Greek Butter Cookies Recipe
Ingredients
1. All purpose flour (2 1/4c)
2. almond extract (1/2tsp)
3. vanilla extract (1/2tsp)
4. egg (1)
5. white sugar (3/4c)
6. butter, softened (1c)
7. confectioner sugar (1/2c for rolling)
Method Of Preparation:-
1. First heat the oven to 400 degrees F or 200 degrees C. Take cookie sheets and grease them. Take a bowl of medium size, beat butter, egg and sugar in it until the mixture becomes smooth. Mix almond extract and vanilla in it.
2. Then add flour in it and blend the mixture well to form soft dough. Knead the dough by hand. Take about 1 teaspoon of dough, roll the dough into log, ball or ‘S’ shaped and then place on greased cookie sheets about 1 to 2 inch apart.
3. Place the sheets in oven and bake cookies for about 10 minutes at 400 degrees f until they get lightly brown and hard. Then take out the sheets from oven and keep the cookies to cool completely and then dust confectioner sugar over them.

Marmelatha Fraoula: Strawberry Preserves Recipe
Ingredients
1. Fresh strawberries, washed, stem removed and cut into chunks (2 pounds)
2. brandy (5 1/2tsp)
3. lemon juice (5 1/2tsp)
4. sugar (2 pounds)
Method Of Preparation:-
1. Take a pot, add strawberries and sugar in it and keep it aside for about 30 minutes. Now place the pot over heat and keep it to boil. Stir the mixture with a wooden spoon to prevent sticking of mixture.
2. Cook it for about 15 to 20 minutes until the syrup gets thicken. Mix brandy and lemon juice in it. Now take off the pot from heat and keep it aside for about 3 to 4 hours to cool.
3. If the consistency of the preserve is not proper then keep it to boil again by stirring regularly. Keep it to cool again. When the strawberry preserve gets cooled completely then place it in clean jars and seal it.

Ingredients
1. Ripe and firm pears (6large)
2. lemon juice (4tbsp)
3. salt (1 pinch)
4. water (3c)
5. sugar (1c)
6. mint leaves (for garnish)
7. chocolate sauce (for topping)
Method Of Preparation:-
1. First make the chocolate sauce and keep it to cool. Take a saucepan, place it over heat. Add water, lemon juice, salt and sugar in it. Keep this mixture to boil and then cook it for about 5 minutes.
2. Take pears, clean and peel them and leaving the stem unbroken. Remove the core of the pear from the bottom with paring knife. Add syrup over the pears and keep them to boil for about 30 minutes until the pears become soft.
3. Now take off the pears from heat and place them in colander over a bowl in the refrigerator until they get chilled and then drain them. Take a serving plate, place pears on it and spread chocolate sauce over the top. Decorate them with mint leaves and then serve them.

Ingredients
1. All purpose flour (1 1/2c)
2. black raisins or currants (1/2c+1tbsp)
3. sugar (3/4c)
4. baking powder (4tsp)
5. vanilla extract (3/4tsp)
6. salt (1/2tsp)
7. water (1 1/2c)
8. confectioner sugar (for dusting)
9. oil for frying
Method Of Preparation:-
1. Take a mixing bowl, sieve flour, salt and baking powder in it. Then add water, sugar, raisins and vanilla in it. Mix all these ingredients until get well blended. Cover the bowl and keep it aside for about 1 hour.
2. Take a pan, heat oil in it over medium heat and then drop a tablespoonful of batter into the hot oil and then fry them until they get brown from both sides. Then drain the pan cakes on absorbent paper towels.
3. Dust confectioner sugar over the pancakes and decorate them with your favorite fruits. Now the pancakes are ready to serve.
Makes about 3 dozen to small pancakes
Tiganites: Pancakes Or Fritters Recipe
Ingredients
1. All purpose flour (4 1/2c)
2. baking powder (3tsp)
3. lemon juice (2tbsp)
4. raki or brandy (2tsp)
5. water (1c)
6. salt (1tsp)
7. Sprite (2 bottles about 8 ounce each)
8. olive oil (¼ to 1/3 inch)
9. honey, petimezi syrup or preserves (to serve)
Method Of Preparation:-
1. Take an electric mixer, add sprite, raki or brandy, water, salt and lemon juice in the bowl of it and then beat this mixture. Sieve flour and baking powder and mix it into the bowl of mixture and then beat it for about 2 to 3 minutes until the mixture becomes smooth.
2. Take a heavy bottomed frying pan, heat ¼ to 1/3 inch of olive oil in it over medium high heat. When the oil they get then place rounded tablespoon of batter in it and fry the pancakes for about 2 to 3 minutes from each sides until the color changes to lightly golden.
3. Then drain them on paper towel. Now the pancakes get ready. Serve them with petimezi, syrup or preserves.
Kydonia Sto Fourno: Sweet Baked Quince Recipe
Ingredients
1. Whole quince (about 3 ½ pounds)
2. water (3c)
3. whole cloves
4. cinnamon (1stick)
5. sugar (2c)
Method Of Preparation:-
1. First heat the oven to 350 degrees F or 180 degrees C. Take quince, wash it and then remove and discard its stem. Take out the seeds and tough fibers and then keep it aside.
2. Take a bowl of water, place quince halves in it to prevent it from darkening. Take a pot, mix quince seeds, sugar, water and tough fiber in it. Boil this mixture for 8 to 10 minutes and then strain it into a bowl.
3. Press 2 cloves in each half quince. Pour the strained liquid over the quince and cinnamon stick in it. Now bake it for 1 ½ to 2 hours at 350 degrees f until the quince gets soft. Now the quince gets ready. Serve it warm or at room temperature with sauce or whipped cream.
