Granita Lemoni: Lemon Granita Recipe
Ingredients
1. Grated lemon peel or zest (3tbsp)
2. water (3 3/4c)
3. sugar (3 3/4c)
4. freshly squeezed juice of (8lemons)
Method Of Preparation:-
1. Take a bowl, add water in it and then mix sugar in it until it gets dissolved properly. Then mix lemon zest and juice in it.
2. Now take Pyrex dishes or large pans, pour the mixture in these dishes and place them in the freezer for about 20 minutes. After 20 minutes take out the dishes from the freezer and then scrap the bottom of the dishes with a fork and stir the ice chips with the liquid.
3. Repeat the freezing every 20 minutes until no liquid left behind. Now break it into small chunks with fork. Now lemon granite is ready to serve. Serve it in parfait or wine glasses.
Halvas Me Karythia: Semolina Pudding With Walnuts Recipe
Ingredients
1. Coarsely ground walnuts (1c)
2. olive oil (1c)
3. coarse ground semolina or farina or wheat cream (3c)
For Syrup:-
1. Cinnamon (3sticks)
2. sugar (3 1/2c)
3. water (7 3/4c)
For Topping:-
1. Ground cinnamon (1 to 2 tsp)
2. finely ground walnuts (1c)
Method Of Preparation:-
1. For Syrup; take a pot, place it over medium heat. Add water, sugar and cinnamon in it in it and mix them. Keep this mixture to boil for about 15 minutes. Then take off the pan from heat, discard cinnamon and then keep it aside to cool.
2. For Pudding; take a deep pot, place it over medium heat. Heat olive oil in it until it gets hot. Then add semolina and coarsely ground walnuts in it. Stir them with wooden spoon for about 5 to 6 minutes until the oil has been absorbed and the mixture becomes dry. Then take off the pot from heat.
3. Take a bowl; pour the cooled syrup through a strainer in it. Then pour it over the pudding mixture in the pot. Again place the pot over medium heat and mix it regularly until the bubbles appear and then take off the pan from heat and keep it to cool for about 5 to 10 minutes.
4. Take a baking pan or shallow serving dish; place the pudding mixture with spoon in it. Make it smooth and then sprinkle the chopped walnuts and spread them lightly over the top. Then dust the ground cinnamon and keep it aside to cool. When the pudding gets cooled then cut it into slices and serves at room temperature.
Krepes Osculates: Chocolate Filled Crepes Recipe
Ingredients
1. All purpose flour (1/2c)
2. butter or margarine (1 ¼ tbsp at room temperature)
3. sugar (1 tbsp)
4. milk (1 cup)
5. eggs (2)
6. butter or margarine (3 tbsp for frying)
7. chocolate cream spread of nutella type (6 tbsp)
Method Of Preparation:-
1. Take a bowl; add flour, milk, sugar, eggs, softened butter or margarine in it. Blend this mixture and then pour it into a bowl and keep it aside for about 5 minutes.
2. Take a pan of 10-inch, place it over medium low heat and melt 1 tablespoon of margarine or butter in it. Then add 1 ladleful of batter in it. Now shake the pan to spread batter over the full surface of pan.
3. Cook the crepe until the top gets set and then turn it with two spatulas. Cook it until it changes to slightly brown color from both sides.
4. Now place it in plate and spread 2 tablespoons of chocolate cream on it and then roll it. Repeat to make about 3 more chocolate crepes and then serve them hot.
Krema Lemoniou: Lemon Pudding Recipe
Ingredients
1. Corn flour or cornstarch (1/2c)
2. sugar (1c)
3. grated peel of (1lemon)
4. lemon juice (1/3c)
5. boiling water (1 3/4c)
6. mint (a sprig)
Method Of Preparation:-
1. Take a saucepan, mix corn flour and sugar in it and then add boiling water in it. Mix it well and then put the pan over medium heat. Cook it by stirring regularly.
2. As soon as the mixture begins to boil, then mix grated lemon peel and lemon juice in it. Beat the mixture briskly until it gets well blended and becomes creamy. When the pudding gets ready then keep it in the refrigerator to chill. Decorate it with a sprig of mint and then serve it.

Firikia Glyko: Whole Apples In Light Syrup Recipe
Ingredients
1. Peeled small sweet apples preferably firikia (5 ½ pounds)
2. juice of large lemon (about 3 to 4tbsp)
3. brandy (1/2c)
4. whole cloves (2 for each apple)
5. cinnamon (2sticks)
6. water (10 1/2c)
7. sugar (11c)
Method Of Preparation:-
1. Take apples, peeled them and place one clove in the top and bottom of each apple.
2. Take a large pot, place all the ingredients in it except brandy and lemon juice. Keep them to boil by stirring irregularly with wooden spoon. When the mixture gets fully boiled then turns down the heat to low and boil it lightly without covering the pan. Cook it for 1 hour 15 minutes.
3. Mix brandy and lemon juice and pour it into the pan five minutes before the cooking ends. Keep the apples to cool completely in the pot and the take out the apples carefully with slotted spoon.
4. Now serve one apple per person with syrup. Store apples in clean jars and divide syrup lightly. Seal the jars when apples gets cooled completely.

Mous Yiaourti Cream Mousse Recipe
Ingredients
1. Thick Greek Yogurt (2 1/2c), If thick Greek Yogurt is unavailable, you can strain unflavored commercial yogurt to use
2. confectioner’s sugar (3 level tbsp)
3. whipping cream or heavy cream (2c)
4. hot water or tap water (3tbsp)
5. unflavored granulated gelatin (3/4tsp)
Method Of Preparation:-
1. Take some hot water in a bowl, dissolve gelatin in it. To make whipped cream, take a bowl, beat sugar and cream in it until the cream becomes thick and stiff.
2. Take another bowl, add yogurt and dissolved gelatin in it. Mix it properly. Take a spatula; add the yogurt mixture into the whipped cream with spatula. Mix both the mixtures thoroughly.
3. Now place the bowl in the refrigerator until it is ready to use. Use Mousse cream as a topping on cakes and shortbread or use it as a dessert on its own.

Ingredients
1. Bananas, peeled, cut into small squares (1 1/4c about 1 ½ bananas)
2. apples, cored peeled and cut into small pieces (1 1/4c about 1 to 1 1/4apples)
3. lemon juice (2tbsp)
4. grated peel of (1lemon)
5. butter, cut into small pieces (4tbsp)
6. vanilla extract (1/2tsp)
7. eggs (3)
8. milk (4c)
9. sugar (2/3c)
10. corn starch (4tbsp)
11. brandy (2 ounces about 4tbsp)
12. coarsely ground walnuts (1/2c + 1/4c)
13. thin slices of apples (for garnish)
Method Of Preparation:-
1. Take a small bowl, add brandy in it and then soak ½ cup of walnuts in it.
2. Take a small bowl, mix sugar and cornstarch in it. Put the mixture into a saucepan and slowly add milk in it. Keep the mixture to boil over medium heat by stirring it frequently. Mix 4 to 5 tablespoons of hot milk mixture into the beaten eggs.
3. Pour this mixture back to the pan and cook it by stirring until the pudding begins to thicken. Mix vanilla and butter in it and cook it for more 5 minutes by stirring regularly until the mixture reaches to the consistency of pudding.
4. Then take off the pan from heat. Mix walnut brandy mix, chopped fruit, lemon juice and lemon zest in it. Pour this mixture into the serving bowl.
5. Cover the bowl with plastic wrap and place it in the refrigerator to chill. Now decorate the pudding with ¼ cup of chopped walnuts and apple slices.
