Empanadas Recipe

Ingredients
1. All purpose flour, sifted (1c)
2. butter, softened (1/2c)
3. white sugar (1/3c)
4. cream cheese (1package about 3 ounce)
5. ground cinnamon (1tsp)
6. fruit preserves (1c)

Method Of Preparation:-
1. Take a large bowl, add cream cheese and butter in it and then blend it until it becomes smooth. Then mix flour in it to form soft dough.

2. Make small balls of the dough and wrap them in the foil. Place the dough balls in the refrigerator for overnight. Next day take out the dough balls from the refrigerator 30 minutes before using. Heat the oven to 375 degrees F.

3. Take chilled dough, roll it and then cut it into 3 to 4 round cookies with cutter. Then place a tablespoonful of jam in the center of the round, moisten the edges and then fold the edges towards the center.

4. Place the stuffed cookies on ungreased cookie sheet. Place the sheet in oven and bake it for about 15 to 20 minutes. Then take out the cookies from the oven and roll them immediately in sugar and cinnamon mixture.

Easy Galletitas Recipe

Ingredients
1. All purpose flour (2tbsp)
2. sugar cookie mix (1 pouch about 1.5 oz)
3. vanilla (1tsp)
4. rum (2tbsp) or rum extract (1tsp)
5. anise seed (2tbsp)
6. butter or margarine, softened (1/3c)
7. egg (1)
8. cloves (1/2tsp)

Method Of Preparation:-
1. Take a small bowl, mix anise, vanilla and rum extract in it. Cover the bowl with plastic wrap and then keep it aside for about 1 hour to soak.

2. Take a large bowl, add cookie mix, cloves and flour in it and the ingredients well. Then add egg, butter, anise seed and rum vanilla liquid in it. Mix it well to make soft dough.

3. Cover the dough and keep it in the refrigerator for at least 1 hour to make it stiff. Heat the oven to 350 degrees F. Take cookie sheets and grease them.

4. Take 1/3 of dough; roll it on the lightly floured surface to 1/8 inch thickness. Then cut the rolled dough into 2 ½ inch round with a cookie cutter. Then place the rounds on the sheets about 2 inches apart. Make more cookies in the same way.

5. Now place the sheets in oven and bake the cookies at 350 degrees F for about 7 to 10 minutes until the edges of the cookies get light golden brown in color.

6. Take out the sheets from the oven and keep them to cool for about 5 minutes. Then place the cookies on rack to cool. Store the cookies in a container and keep at room temperature.

Makes about 3 dozen cookies

Spanish Orange Cake Recipe

Ingredients
1. Mandarins or preserved oranges (10 oz)
2. orange juice (3fl oz)
3. sugar (2 oz)
4. butter (2 oz)
5. biscuits (2 oz)
6. cream cheese (25 oz)
7. chocolate shavings (for garnishing)

Method Of Preparation:-

1. Take biscuits, smash them and mix them with melted butter in a bowl. Take a loose-bottomed tine, grease it with butter, put the mixture in it and then place the tin in the refrigerator for about 15 minutes.

2. Take another bowl, add sugar, cheese and orange juice in it and then beat the mixture until it becomes smooth. Take out the tin from the fridge and pour this mixture into the tin and then again place the tin in the refrigerator for about 4 hours.

3. Now take out the orange cake from the fridge and garnish it with pieces of mandarin and chocolate shavings. Now the cake is ready to serve. Cut it into slices and serve it.

Easy Spanish Cherry Dessert Recipe

Ingredients
1. All purpose flour (2c)
2. granulated sugar (1 1/2c)
3. margarine or butter (1c)
4. baking powder (2tsp)
5. almond extract (1tsp)
6. powdered sugar (to dust over top optional)
7. cherry pie filling (1can about 21 oz)
8. eggs (4)

Method Of Preparation:-
1. First heat the oven to 350 degrees F. Take a large mixing bowl, beat sugar and margarine in it. Then add eggs in it and beat it until the mixture becomes light and fluffy. Add almond extract in it and then add flour and baking powder in it. Mix the ingredients until the mixture becomes smooth.

2. Take a pan of 13*9 inches, grease it with non stick cooking spray. Pour the mixture into the pan. Then place the pie filling in 16 spots with spoon into the cake.

3. Place the pan in oven and bake the pie for 45 to 50 minutes at 350 degrees F until it becomes golden and the tooth pick inserted in the center comes out clean. Take it out from oven and keep it to cool. Then cut the cake into 16 pieces.

4. Place the cake pieces on serving plate and sprinkle powdered sugar on it. Place sweetened whipped cream over each serving and serve it.

Chocolate Cheesecake Flan Recipe

Ingredients
1. Philadelphia Cream Cheese, cubed (1package about 8 ounce)
2. Bakers Semi- Sweet baking chocolate, divided (6 squares about 1 ounce)
3. sugar, divided (1 1/2c)
4. eggs (4)
5. evaporated milk (1 can about 12 ounce)

Method Of Preparation:-

1. First heat the oven to 350 degrees F. Take a small heavy saucepan, place it over medium heat. Add 1 cup of sugar in it and cook it by stirring regularly until the sugar changes to deep golden brown in color. Then pour the sugar into the cake pan of 9 inches.

2. Take a microwave bowl; put 4 of the chocolate squares in it. Melt the chocolate for 1 ½ minute on high until it gets melted. Then take out the bowl and keep it to cool.

3. Put cream cheese and milk in the container of a blender, cover it and then blend it until the mixture becomes smooth. Then put the rest of the sugar, melted chocolate and egg in it, cover it and blend it well.

4. Pour over syrup in the pan, and then place this pan in large baking pan. Add water to the larger pan to come up half way up side of the round pan. Place the baking pan in oven and bake it at 350 degrees F for about 1 hour.

5. Take out the pan from oven and keep it to cool on wire rack. Then place it in the refrigerator for about 4 hours or overnight. Now melt the rest of the 2 chocolate squares in microwave bowl on high for 30 seconds until it gets melted.

6. Sprinkle the melted chocolate in 5 to 6 random crisscross design on a wax paper sheet, Keep it gets firm and then remove the design from paper and place on top of the flan to decorate it.

Crispy Spanish Almond Cookies – Crispy Polvorones Recipe

Ingredients
1. Whole almonds, raw (3 cups)
2. powdered sugar (2 cups)
3. vegetable shortening (2 ¼ cup)
4. cinnamon (1 tsp)
5. almond extract (1 tsp)
6. granulated sugar (1 1/8 cup)
7. flour (3 2/3 cup)
8. egg yolk (1 optional)

Method Of Preparation:-
1. Take whole raw almonds, grind them in food processor and keep aside. Take a mixing bowl, cut vegetable shortening in powdered and granulated sugar.

2.Then add almond extract, ground almond and cinnamon in it. Mix the ingredients properly. Mix flour in it one cup at a time. Mix it well to form dough. Beat an egg yolk and mix it in the dough to bind it.

3. Now place the dough in the refrigerator for at least two hours. Then divide the dough into four parts and roll each part into a rope of 1 ½ inch wide. Place rope on board and then slice it diagonally to make diamond shaped cookies.

4. Place the cookies on ungreased cookie sheet and bake them for about 25 to 30 minutes at 350 degrees F. Then take out the sheet from oven and keep the cookies to cool for about 5 to 10 minutes. The almond cookies are very crumbly.

Makes about 2 dozen cookies

Sweet Gachas Recipe

Ingredients
1. Unbleached white wheat flour (1/2 cup)
2. vegetable oil, such as corn or canola (1/2 cup)
3. slice bagnette (4 thin)
4. granulated sugar (1/2 cup)
5. milk (1 ½ cup whole or 2 %)
6. anise seeds (1/2 tsp)
7. cinnamon and sugar (sprinkle on top)
8. warm milk (3/4c to serve with gachas)

Method Of Preparation:-

1. Take a large frying pan, place it over heat and heat vegetable oil in it. When the oil gets hot then fry bagnette slices in it from both sides. Take out the slices from pan and place them on paper towel to absorb excess oil.

2. Take a saucepan of medium size, heat milk in it. Fry flour in oil on low heat by stirring it regularly with wooden spoon. When the flour gets toasted then takes off the pan from heat and then gently adds the hot milk into the pan and stirs it regularly so that no lumps get form.

3. When the mixture gets thicken then add sugar in it and again place the pan over low heat. Cook it until the mixture becomes creamy and smooth.

4. Now take separate bowls put gachas in it and pour warm milk in it. Sprinkle sugar and cinnamon on top and then place slices of fried bagnette on the top. Now it is ready to serve.
