Pepperkakor Recipe
Ingredients
1. All purpose flour (3 1/4c)
2. egg (1)
3. softened butter or margarine (1c)
4. light colored corn syrup (1tbsp)
5. ground cloves (2tsp)
6. baking soda (2tsp)
7. ground ginger (2tsp)
8. ground cinnamon (2tbsp)
9. white sugar (1c)
Method of preparation:-
1. Take a large bowl, beat butter or margarine in it with electric mixer on low speed for about 30 seconds. Add egg, sugar, corn syrup and beat it until gets fluffy for about 15 minutes.
2. Take a medium size bowl, mix flour, baking soda and spices in it. Then add this mixture to the butter mixture. Beat it until gets smooth.
3. Now divide the dough into 4 portions. Place one portion of dough on floured surface and roll it into 1/16 inch thickness. Cut it into 2 inch heart shape.
4. Place this on ungreased baking sheet. Place the sheet in oven and bake it for 7 to 8 minutes at 350 degrees F. Now take off the sheet from the oven and place it on the wire rack to cool it.
5. Repeat the same process to make 15 dozen. These baked cookies can be placed in container and freeze for up to 3 months.
Italian Cream Cheese Layer Cake Recipe
Ingredients
1. All purpose flour (2c)
2. buttermilk (1c)
3. egg yolk (4eggs)
4. egg whites (4eggs)
5. baking soda (1tsp)
6. butter (1/2c)
7. shortening (1/2c)
8. vegetable oil (1/2c)
9. vanilla (1tsp)
10. white sugar (2c)
11. flaked coconut (1pkg)
12. chopped pecans (1c)
13. softened cream cheese (1packet)
14. softened butter or margarine (1/2c)
15. confectioner sugar (4c)
16. vanilla extract (1tsp)
17. chopped pecans (1c)
Method of preparation:-
1. First heat the oven to 325 degrees’. Take 3 round baking pans of 9 inches and grease them. Take a bowl, mix buttermilk and soda in it and keep it aside for few minutes.
2. Take a large bowl, put butter, shortening, sugar and oil in it and beat them. Add egg yolks one at a time, beat all the ingredients well. Then mix the buttermilk mixture and flour in the creamed mixture. Add these alternately and then add vanilla extract in it.
3. Take a large bowl, mix egg whites in it until gets foamy. Mix 1/3 of beaten egg whites in batter and then add the leftover beaten egg whites in it. Then add pecans and coconuts in it.
4. Now pour the batter into the greased baking pans. Place the pans in oven and bake for about 25 to 30 minutes. Then take off the cake from the oven and cool it.
Frosting:-
1. Take a bowl, beat cream cheese, margarine or butter, confectioner sugar and vanilla. Mix a cup of chopped pecans. Now fill the cake with this frosting.
Cone Coxions Recipe
Ingredients
1. All purpose flour (1 1/4c)
2. all purpose flour (2tbsp)
3. milk (1/2c)
4. egg (1large)
5. vanilla extract (1 tsp)
6. unsalted butter (2tbsp)
7. pizzelle maker (for brushing)
8. salt (1/8tsp)
9. ground California almonds (2tbsp)
10. confectioner sugar (1/3c)
11. semi sweet chocolate (6ounce)
12. California almond (1/4c)
13. cone-shaped pizzelle mold (5 1/2-inch)
14. small clean pastry brush
Method of preparation:-
1. Take a bowl, mix flour, almonds, sugar and salt in it. Add milk, egg, vanilla and 2 tablespoon of melted butter. Mix all the ingredients to form batter.
2. Cover the bowl and then place it in refrigerator for 1 to 24 hours to chill it. Now heat the pizelle maker and take pizzelle molds and then brush the top and bottom of this pizzelle mold with melted butter and 2 tbsp flour.
3. Pour the batter of 1 tablespoon into the pizzelle mold. Cover and cook batter for about 2 minutes. Now immediately peel off 1 pizzelle and then wrap around cone mold. Close the tip and hold the cones until gets harden for about 5 minutes.
4. Take off the molds. Repeat this process to make about 20 cones. Now melt the chocolate in a microwave.
5. Place thick layer of pizzelle and sprinkle almonds over them. Keep it to cool and remove the excess almonds from the chocolate. When the chocolate gets harden.
Semolina Cake Recipe
Ingredients
1. All purpose flour (1c)
2. semolina flour (1/4c)
3. egg separated (10)
4. white sugar (3/4c)
5. baking powder (1tsp)
6. butter (1 1/2c)
7. vanilla extract (2tsp)
8. orange juice (1/2c)
9. grated orange zest (2tbsp)
10. brandy (2tbsp)
11. almond finely chopped (2/3c)
12. almond coarsely chopped (2/3c)
13. sliced almonds (1/2c)
14. brandy, optional (1tbsp)
Method of preparation:-
1. First heat the oven to 375 degrees F. Take a baking pan of 9×13 inch, grease and flour it. Mix flour, semolina flour and baking powder in a bowl and keep it aside.
2. Take a bowl, beat butter and sugar until gets light and fluffy. Add egg yolk in it one at a time. Beat it well and then add orange zest, orange juice, brandy and vanilla extract in it.
3. Now take a bowl, beat egg white in it. Mix 1/3 of egg white in butter and egg yolk mixture. Now mix this in 1/3 of flour mixture. Add the remaining egg whites alternately with flour. Mix it thoroughly until it gets combined.
4. Mix coarsely and fined chopped almonds in it and then pour the batter into the baking pan and sprinkle the sliced almonds over it.
5. Bake it in preheated oven for about 30 minutes. Bake it until knife inserted comes out clean. Take off the cake from the oven and sprinkle with tablespoon of brandy, if desired. Allow to cool completely before serving.
Torta Russa Recipe
Ingredients
1. Flour (1 1/4c)
2. eggs (3)
3. dry amaretto cookies (7oz)
4. unsalted butter (3/4c)
5. amaretto liquor (1shot)
6. puff pastry for 9 inch pan
7. salt (a pinch)
8. peeled almonds (3/4c)
9. sugar (1c)
Method of preparation:-
1. Take amaretti and blend it in a food processor and then keep them aside. Then blend the almonds in the processor. Chop the almonds but not turn them into cream. Keep them aside.
2. Now blend the butter and sugar in the food processor until gets creamy and fluffy. Then add eggs in it, one at a time. Now add flour and salt in it. Add almonds and a shot of amaretto and then set the food processor to a low speed.
3. Finally add the amaretto cookies and then mix them. Now roll out the puff pastry and put it in spring form pan. Add the filling. Place the sides on the cake.
4. Bake it in preheated oven for 40 to 45 minutes at 360 degrees or until the inserted knife into the center comes out clean. When the crust starts to brown then cover it with foil. Cook it before serving.
Zabaione Recipe
Ingredients
1. Dry Marsala wine (8tbsp)
2. sugar (4tbsp)
3. egg yolks (4large)
Method of preparation:-
1. Take a medium size saucepan. Beat egg yolks with sugar by electric hand blender. Beat it until gets fluffy and light yellow. Beat it in medium high speed.
2. Add Marsala wine in it without stopping in mix the batch. After mixing, immediately set the saucepan in other pan with simmering water or set it on the top of double boiler.
3. Mix it continuously from when it starts until it is ready. While holding the saucepan in the water, beat the sauce for about 10 minutes. But the water does not have to boil.
4. When the cream gets fluffy and doubled in volume then the zabaione is ready. Now serve it immediately with dry biscuits or fresh fruits.
Cooked Fruit – Frutta Cotta Recipe
Ingredients
1. Pear (3)
2. apples (4medium)
3. cinnamon (1/2stick)
4. brown sugar (2tbsp)
5. water (4tbsp)
6. rum, if desire (4tbsp)
7. peeled almonds (1/2c)
8. unsweetened whipping cream (optional)
Method of preparation:-
1. Wash the fruits and then peeled and cut into cube shapes. Take a saucepan put the fruits in this pan. Add rum, cinnamon stick and water in it. Then cover the pan and cooked for about 20 minutes. Be careful while cooking. Do not cook the fruits too much.
2. When the fruits get cooked then add sugar in it and keep for cooling. Now divide the cooked fruits into 4 to 6 portions. Chop the almonds and beat the whipping cream.
3. Sprinkle the fruit with chopped almonds and then serve fruit with whipping cream to give the dessert a good flavor toast the almonds before chopping them.
