Bunuelos Or Spanish Doughnuts Recipe

Ingredients
1. Anisette or pastis (1/2 cup)
2. grated lemon rind (1 lemon)
3. olive oil (2 spoon full)
4. milk (1/2 cup)
5. sugar (1 cup)
6. eggs (2)
7. baking powder (16 g)
8. boiled potatoes (300 g)
9. enough caster sugar (to coat the dough nuts)
10. flour or enough to obtain sticky dough which is not too hard (3 ½ cup)

Method Of Preparation:-
1. Take boiled potatoes, mash them in a bowl and then mix all ingredients in it and mix them properly and keep the mixture for about 15 minutes.

2. Take a deep frying pan, place it over heat. Heat enough oil in it to fry. When the oil gets hot then take some dough from the bowl. Make a round ball of it and put it into the hot oil in the frying pan and then fry it until the dough nuts turn golden color.

3. Take a plate, cover it with absorbent paper and then take out the dough nuts from the frying pan and place them on the plate. Sprinkle the caster sugar over the dough nuts. Now the Spanish dough nuts are ready to serve.

Spanish Aniseed Sweet Bread Recipe

Ingredients
1. Aniseed (1 1/2tbsp)
2. olive oil (3tbsp)
3. sugar (5tbsp)
4. water (1c)
5. flour (500gms)
6. bakers yeast (2tsp)
7. egg (optional)

Method Of Preparation:-
1. Take a bowl; dissolve yeast in it with a bit of water. Take a pan, place it over heat. Add the rest of water, aniseed, olive oil, yeast and sugar in it and keep this mixture to boil for about 4 minutes.

2. Take off the pan from heat and keep it to cool. If you are using the egg then beat it and adds it into the liquid. Then add flour in the liquid and mix it well to make dough. Keep the dough aside for about 1 hour.

3. Make a low dome shape of the dough and again keep it for about 30 minutes to raise. Dust some sugar over the top of dough for extra sweetness.

4. Place the dough in the oven and bake it at 180 degrees C for about 20 minutes. Then take it out from oven and keep it to cool. When it gets cooled then cut it into slices and serves with hot and thick Spanish chocolate.

Spanish Tea Cake With Icing Recipe

Ingredients
1. Self raising flour (250gms)
2. sugar (200gms)
3. eggs (2)
4. vanilla essence or grated lemon rind (1/2tsp)
5. milk (1c)
6. olive oil (3/4c)

For Icing:-
1. Soft butter (1tsp)
2. milk (2tbsp)
3. icing sugar (1/2c)

Method Of Preparation:-

1. Take a large bowl, mix all ingredients in it. Take a cake tin of about 20 cm in diameter, grease it and then put the mixture in it. Place the tin in oven and bake it at 160 degrees C for the first 15 minutes to raise the cake.

2. Then turn up the temperature of oven to 180 degrees C and again bake the cake for about 30 to 45 minutes until it gets cooked. Now take out the tin from the oven and keep it to cool and then remove the cake from the tin. Place the cake on a serving plate.

3. To prepare icing, take a bowl, mix these ingredients in it properly and pour over the cake.

Berry Topping Recipe – Salsa De Frutas Del Bosque Recipe

Ingredients
1. Granulated sugar (1/2c)
2. fresh berries such as blackberries and blueberries (2 to 3c)

Method Of Preparation:-
1. Take fruit, wash it properly and remove the stems. Take a saucepan of medium size, place fruit in it and pour sugar over the top.

2. Place the pan on medium heat and heat it by stirring to mix the sugar with the fruit. Avoid the mixture from burning. Now turn down the heat to low, keep the mixture to simmer for about 10 to 15 minutes until the fruit gets cooked and juice becomes thicken.

3. Take off the pan from heat and keep it to cool. When it gets cooled then use it as a filling or topping in the Spanish desserts. This recipe makes about 2 cups of fruit topping, which is enough for 6 ramekins.

Bizcochos Borrachos – Drunken Sponge Cakes Recipe

Ingredients
1. Flour (3/4c)
2. granulated sugar (1/2c)
3. eggs (4)
4. ground cinnamon (1tsp for decoration)
5. baking powder (1tsp)

For Sauce:-
1. Brandy or rum (1 ½ oz)
2. honey (1.5tbsp)
3. water (8oz)
4. granulated sugar (1/3c)
5. peel from (1/2 lemon)
6. cinnamon stick (1)

Method Of Preparation:-

1. First heat the oven to 350 degrees F or 180 degrees C. Take a square pan of 8-inches, grease it and flour it. Break eggs, separate the egg yolks from whites.

2. Take a bowl, add egg yolks and sugar in it. Beat this mixture until it becomes creamy. Beat egg whites in another bowl until stiff peaks get form. Then add it smoothly into the egg yolk mixture. Add flour, and baking powder in it a bit at a time and mix it well. Now pour the batter into the baking pan.

3. Place the pan in oven and bake it at 350 degrees for about 20 minutes until it changes to golden color. Meanwhile prepare syrup, take a small pan, add water, sugar, honey, cinnamon and lemon peel in it. Keep it to boil by stirring irregularly.

4. Then take off the pan from heat and add brandy in it and then keep it to cool. When the cake gets cooled then cut it into pieces and places them on the serving plate. Sprinkle the brandy sauce over the cake pieces and then dust cinnamon on the top. Serve the cake with tea or coffee.

Makes about 9 small cakes

Rosquillos De Vino – Wine Ring Cookies Recipe

Ingredients
1. Flour (6c)
2. anise extract (2tbsp)
3. baking powder (3tsp)
4. vegetable shortening (1c)
5. vegetable oil (1c)
6. sugar (1c)
7. white wine (1c)
8. granulated sugar (for topping)

Method Of Preparation:-
1. First heat the oven to 325 degrees F. Take a large mixing bowl, mix sugar, baking powder, vegetable shortening and vegetable oil in it with a hand mixer. Then add anise extract and white wine in it and mix it well.

2. Then add flour, a cup at a time in it and mix it until the mixture becomes crumbly. Take an unfloured cutting board, roll small amount of dough on it about 1/3-inch thick and then cut it into pieces of about 4 inches long and join its two ends to form a ring.

3. Now place the rings on ungreased cookie sheet. Place the sheet in oven and bake it for about 15 to 18 minutes until the color of cookies changes to golden.

4. Then take out the cookies from oven and keep them to cool for about 10 minutes. While the cookies are still warm, coat the top with granulated sugar. These cookies are popular at Christmas time.

Makes about 2 to 3 dozen small rings

Spanish Lemon Sorbet Recipe

Ingredients
1. Sweetened condensed milk, whole or fat free (1 can about 9 oz)
2. grated rind of 1 lemon
3. lemon juice (2c)
4. cinnamon stick (1small)
5. water (1 1/2c)
6. granulated sugar (1 1/2c about 300 gms)

Method Of Preparation:-

1. Take a saucepan of medium size, add water and dissolve sugar in it and add cinnamon stick in it. Place the pan over high heat and keep the mixture to boil for about 10 minutes by stirring regularly. Squeeze out juice from lemons in it.

2. After 10 minutes, take off the pan from heat. Measure it and pour it in a bowl and then keep it to cool for about 15 minutes. When it gets cooled slightly then it becomes syrup.

3. Take out cinnamon stick from the syrup and add grated lemon peel and juice in it. Mix it properly and then cover the bowl tightly and place it in the freezer for about 2 to 2 ½ hours until it gets frozen.

4. When it gets frozen then takes it out from the freezer and gently adds condensed milk in it and mixes it well. Again place it in the freezer until it gets frozen. Then take it out from freezer and serve it in serving bowl.
