Italian Tiramisu Recipe
Ingredients
Mascarpone cheese (1lb), dry Marsala wine (1c), sugar (13 tbsp), savolardi or lady fingers (36), unsweetened cocoa (3tbsp), strong Italian coffee (2 1/2c).
Method of preparation:-Take a large bowl, beat egg yolks and sugar with hand mixer until gets fluffy. Add mascarpone cheese in it. Take a bowl, Whip egg whites in it until it gets stiff and then it into the mascarpone mixture. Mix it with spoon by lifting mascarpone from bottom of the bowl to top. Take 1/3 of the mascarpone. Add cocoa in it and mix it well. Now spread half of the other mascarpone mixture without cocoa on the bottom of the cake dish. Dip both the sides of the ladyfinger into the espresso coffee and place them over the mascarpone cream. Now cover this with chocolate mascarpone cream. Now add Marsala wine to the leftover coffee and dip the ladyfinger into it and then place them over the mascarpone chocolate cream and top with remaining mascarpone cream. Now sprinkle cocoa powder on the top. Place in refrigerator for 24 hours
Cassata Alla Sicilian Recipe
Ingredients
For sponge cake:- Cake flour (1c), lemon juice (1 1/2c), orange zest (1 1/2tbsp), white sugar (1/2c), eggs (6), salt (1/2tsp),
For Filling :- ricotta cheese (1 1/2pound), confectioner sugar (1/2c), chopped candied cherries (1/4c), ground cinnamon (1/2tsp), chopped pistachios (1/2c) and orange liquor (6tbsp).
For Frosting And Topping:- Chunks of sweet chocolate, whole pistachios (1/4c), candied orange peel (1/4pound), candied cherries (1/4c), confectioner sugar for dusting (1/4c), vanilla extract (1tsp), rum (1/4c), egg whites (2), confectioner sugar (2 1/2c) butter (1/4c).
Method of preparation:-
First heat the oven to 350 degrees F. For sponge cake: – Take 6 eggs, almonds, vanilla extract, orange zest and lemon juice at room temperature for about 1 hour before baking. Now separate the egg yolk and egg whites of 6 eggs. Take a bowl, beat egg yolks in it until get thicken. Then beat almond, vanilla extract, orange zest and lemon juice in it. Beat it thoroughly until gets foamy. Mix flour in egg yolk mixture. Take a bowl, beat egg whites in it, add salt in it and then add it in egg yolk mixture. Now pour the batter into the ungreased pan. Bake it for 50 to 60 minutes at 350 degrees F.
For Filling:- Take ricotta and blend it with hand mixer. Add ½ cup of confectioner sugar and then beat it for 2 to 3 minutes until gets creamy. Mix toasted almonds, cinnamon, chopped candied cherries, grated sweet chocolate and 6 tablespoon of rum. Now spread this filling over sponge cake.
For Topping:- First beat butter with 1 cup of confectioner sugar to form cream. Take a bowl, beat egg whites in it with confectioner sugar. Mix both the mixture then add 1 teaspoon of almond extract. Cover the top and sides of cake with frosting. Now decorate it with chocolate, candied fruits and pistachios. Keep it in the refrigerator until ready to serve.
Italian Pepper Balls Recipe
Ingredients
All purpose flour (4c), baking powder (1tsp) baking soda (1/2tsp), butter (1/3c), shorting (3/4c), white sugar (1c), unsweetened cocoa powder (1/2c), ground black pepper (1/2tsp), ground cloves (1/2tsp), ground cinnamon (1/2tsp), brandy (1ounce), finely chopped walnuts (1/2c), confectioner sugar (3/4c).
Method of preparation:-
Take a saucepan, melt shorting in it and then cool it. Add white sugar, ground cloves, black pepper, ½ cup of cocoa and allspice in it. Mix flour, baking powder, baking soda in it and then mix it well. Add milk, 1 ounce of brandy, whisky and chopped nuts in it. Now form the dough of this mixture and wrap in plastic and then keep it in the refrigerator for 4 to 8 hours. Preheat the oven to n350 degrees F. Make the small balls of dough about ¾ inches in diameter. Now place in oven and bake for about 20 minutes at 350 degrees F. Take off the balls from pan and roll in glaze.
To Make Glaze:- Mix 1/3 cup of butter, ¾ cup of confectioner sugar, 5 tablespoon cocoa and 2 ounce of brandy, rum or whisky. Mix these thoroughly until get smooth. Roll the cooled cookies in glaze and then place on the waxed paper to dry.
Easter Grain Pie Recipe
Ingredients
Whole wheat berries (1/2c), eggs (6), white sugar (1c), grated orange zest (2tsp),grated lemon zest (1tsp), shorting (1tbsp), salt (1tsp), vanilla (1tsp), ground cinnamon (1/2tsp), ricotta cheese (1 1/2pound), mixed candied fruit (1pkg), white sugar (1c), unbaked pie crust (2) and water (5c).
Method of preparation:-
Take a large saucepan, boil water in it. Pout it in wheat and then boil for about 40 minutes. Meanwhile take a large bowl, beat eggs in it then add 1 cup of sugar to eggs. Mix fruits, vanilla, cinnamon, orange rind, lemon zest and ricotta in it. When the wheat gets ready then drains it and rinses it with warm water. Take a small bowl, place ¾ cup of cooked wheat in it and then mix shorting and salt in it. Mix it until the shorting gets melted. Then mix wheat mixture into the ricotta mixture. Heat the oven to 375 degrees F. Take two pie pans of 9 inch and then line these pans with pastry. Place half of the filling in each pan and cover it with pastry strips. Now place the pan in preheated oven and bake it for about 45 minutes or until the crust is golden brown. Sprinkle the sugar over each pie and then keep it to cool at room temperature. Chill it over night before serving. Store the leftover in refrigerator.

Caramel Apple Coffee Cake Recipe
Ingredients
For cake:- Sugar (2c), baking soda (1tsp), lightly beaten eggs (3), vegetable oil (1c), flour (3c), cinnamon (2tsp), peeled and finely chopped apples (3c), chopped and toasted pecans (1c), vanilla extract (2tsp) and salt (1/2tsp).
For Topping:- chopped and toasted pecans (1 1/2c), butter (1/2c), vanilla extract (1tsp), brown sugar (1/2c), sweetened condensed milk (2cans).
Method of preparation:-
For cake:- First heat the oven to 350 degrees F and then grease 2 round baking pans. Take a large bowl, mix sugar, vanilla and oil in it. Then add flour, baking soda, salt and cinnamon in it. Mix it thoroughly to form stiff batter and then add pecans and apples in it. Now divide the batter in two equal parts and then put the batter in greased baking pans. Now place the pans in oven and bake it for about 45 to 50 minutes or until the tooth pick inserted in it comes out clean. Take off the cake from oven and place it on wire rack to cool for about 20 to 30 minutes.
For Topping:- Take a saucepan. Put sweetened condensed milk, butter, vanilla and brown sugar in it and then boil all these Ingredients over medium low heat. Stir the mixture constantly. Cook it for 3 to 5 minutes or until gets thickens. When it gets ready then top this warm caramel over the coffee cake and the sprinkle 1 ½ cup of pecans over it.
Make 2 round pan cakes.
Baked Bananas Recipe
Ingredients
Bananas (4), grated rind and juice of (1 orange), butter (30gms), brown sugar (50gms), dark rum (2tbsp).
Method of preparation:-
Take bananas, peel them and cut them into thick slices. Take a heat proof serving dish, place banana slices on it. Pour the orange juice and rum over the banana slices and then dust sugar and grated rind of the orange on it. Take butter and cut it into cubes and then place on the top of the bananas. Cover the dish with foil and place it in the oven and then bake bananas for about 15 minutes at 180 degrees C. when the bananas get baked then take out the dish from the oven and serve warm with vanilla ice-cream or fresh cream.

Flan De Fresas – Strawberry Flan Recipe
Ingredients
Fresh and ripe strawberries (1pint), granulated sugar (1/2c), eggs (6), condensed milk (1can about 14 oz), caramelized Sugar Topping.
Method of preparation:-
First heat the oven to 350 degrees F. Keep aside 4 to 5 diced fresh strawberries for garnish. Take a heavy saucepan, place it over medium heat for about 30 seconds and then add ½ cup of granulated sugar in the pan. Melt the sugar by stirring regularly with the back of the wooden spoon until it gets caramelized. Now take ramekins and pour sugar into the ramekins and then keep them aside. Take strawberries, wash them and remove their stem. Take a blender or a food processor, place strawberries, condensed milk, eggs and sugar in it and blend the Ingredients until they get mixed thoroughly. Pour this mixture into the ramekins and then cover each ramekin with foil. Now place ramekins in large open, oven proof pan such as a broiler pan. Put very hot water in the pan and submerge the ramekins ¾ in the water. Place the pan on the center shelf of the oven and bake it at 350 degrees F for about 30 minutes. Then take out each ramekin from water and remove the cover and then keep it to cool. When the ramekins get cooled then place them in the refrigerator to chill. Now take out the flans from the ramekins and place them on serving plate. Garnish with fresh strawberries and serve them.
