French Fruit Parfait Recipe
Ingredients
1. Ripe strawberry halves (2c)
2. ripe pineapple chunks (2c)
3. blueberries (2c)
4. finely chopped California walnuts (2tbsp)
5. crumbled Roquefort cheese (1/2c)
Method of preparation:-
1. Take 6 parfait glasses. Place the fruits in alternate layers in these parfait glasses.
2. Now take Roquefort cheese, mash it lightly and then add walnuts in it and mix it well. Make small balls of this cheese mixture. The size of the ball should be of ¾-inch diameter.
3. Take cocktail picks, arrange the cheese balls on these picks and serve them with fruit in parfait glasses.

French Peach Pie Recipe
Ingredients
1. Fresh peaches, sliced (4c)
2. lemon juice (1tbsp)
3. brown sugar, firmly packed, divided (3/4c)
4. granulated sugar (1/2c)
5. cold water (2 to 3 tbsp)
6. shortening (1/2c)
7. salt (1/2tsp)
8. sieved flour (1/2c)
9. cornstarch (1tbsp)
Method of preparation:-
1. Take a bowl, add sieved flour and salt in it. Cut in shortening with two knives or pastry blender. Keep aside the ½ cup of flour-shortening mixture.
2. Put the rest of the flour mixture in cold water; mix it lightly with fork until the dough makes a ball. Then roll the ball of dough and place it in plate pie of 9-inch. Fold the edges of pie to make shell shape.
3. Take a bowl; add sliced peaches, cornstarch, lemon juice, ½ cup of brown sugar and sugar in it. Mix it lightly and place it in pie shell. Now mix reserved flour mixture and rest of ¼ cup of brown sugar. Then dust this mixture over the top of peach filling.
4. Place the pie shell in oven and bake it for 45 to 50 degrees F at 425 degrees F. when the pie gets ready then take it out from oven. Keep it to cool slightly and then serve it.

French Custard Recipe
Ingredients
1. Eggs (4)
2. sugar (1 1/4c)
3. scalded milk (3c)
4. vanilla (1tsp)
Method of preparation:-
1. Take a heavy frying pan, place it over heat. Add ½ cup of sugar in it and heat it until it gets melted and changes to brown in color.
2. Take 6 custard cups, pour the melted sugar in these custard cups. Take a bowl, beat eggs with rest of the sugar in it and then add vanilla in it. Then add hot milk in it and beat this mixture regularly. Pour this mixture into the custard cups.
3. Take a pan of hot water and then place the cups in it. Place the pan in oven and bake for about 30 minutes at 350 degrees F until the mixture gets set. Then take out the cups from oven and place in refrigerator until the custard gets chilled. Now the French custard is ready to serve.

Blackberry Clafouti Recipe
Ingredients
1. All purpose flour (2/3c)
2. heavy cream (1/4c)
3. whole milk (1c)
4. softened butter (1tbsp)
5. eggs (3large)
6. fresh blackberries (4c)
7. salt (1/4tsp)
8. vanilla extract (2tsp)
9. grated orange zest (1tbsp)
10. granulated sugar (1/4c)
11. powdered confectioner sugar (1tbsp)
Method of preparation:-
1. First heat the oven to 350 degrees F. Take a baking dish of 9-inch, butter it and then keep it aside.
2. Take a large bowl, beat cream, milk, eggs, flour, orange zest, salt, vanilla extract and sugar in it. Beat the mixture until it becomes smooth and form thin batter. Then pour the ¾ cup of batter into the baking dish and then spread the batter on the bottom of it.
3. Now place the dish in oven and bake it at 350 degrees F for about 2 to 4 minutes. When the batter starts to get thicken then take it out from oven and keep it to set.
4. Place the dish on the heatproof surface and then place the blackberries over the hot batter. Then pour the rest of the batter over the blackberries and again bake it for about 35 to 40 minutes until the tooth pick inserted in the center comes out clean. Now sprinkle the powdered confectioner sugar over the clafouti and serve it warm.

Chocolate Ganache Recipe
Ingredients
1. Heavy cream (1c)
2. bittersweet chocolate, chopped (9ounce)
3. dark rum (1tbsp optional)
Method of preparation:-
1. Take a bowl of medium size, place chocolate in it. Take a small saucepan, place it over medium heat. Heat cream in it and keep it to boil very carefully.
2. When the cream starts boiling then pour the chopped chocolate in it and mix it until it becomes smooth. Mix rum in it if desired. Then keep the granche to cool slightly. Now pour it over the cake. Start it from the center of the cake.
3. For chocolate filling or fluffy frosting, keep it to cool until it becomes thick and then beat it until it gets light and fluffy.

5. sweet tart apples, sliced (4c)
6. salt (1/4tsp)
7. ground cinnamon (1/2tsp)
8. grated lemon zest (1tsp)
9. vanilla extract (2tsp)
10. granulated sugar (1/4c)
11. eggs (3large)
12. powdered confectioner sugar (1tbsp)
Method of preparation:-
1. First heat the oven to 350 degrees F. Take a square baking dish of 9-inch, butter it and keep it aside. Take a large bowl, beat cream, milk, eggs, flour, salt, sugar, cinnamon, lemon zest and vanilla extract in it.
2. Beat this mixture until it becomes smooth and make thin batter. Then pour ¾ cup of batter into the greased baking dish and spread the mixture on the bottom.
3. Place the dish in oven and bake it for about 2 to 4 minutes. Stop the baking before it cooks completely. When it starts to get thicken then take out the dish from oven and keep it to set.
4. Then place the dish on heatproof surface and place the apples on the hot batter in fan pattern. Spread the rest of the batter over the apples and place the dish in oven and bake it for about 35 to 40 minutes until the tooth pick inserted in the center comes out clean. Then dust the confectioner sugar over the clafouti and serve it warm.

Cream Puff Shells Recipe
Ingredients
1. Sieved all purpose flour (1c)
2. boiling water (1c)
3. salt (1/8tsp)
4. shortening (1/2c)
5. eggs (4)
Method of preparation:-
1. First heat the oven to 450 degrees F or 230 degrees C. Take a saucepan of medium size, mix shortening and salt in it and then add boiling water in it. Heat this mixture until it gets boil.
2. Turn down the heat to low and then add all flour at once in it mix it briskly until the mixture forms a ball. Then take off the pan from heat and beat eggs in it one at a time. Beat the mixture well after each addition. Beat the mixture until it becomes thick and shiny.
3. Take an ungreased cookie sheet, spoon the batter on it. Place the sheet in oven and bake it for about 20 minutes at 450 degrees F. Then turn down the heat to 350 degrees F and again bake it for 20 minutes more until it changes to golden color and it produce sound when tapped. Keep it to cool and then fill and serve.
