Cashew Mignardises Recipe

Ingredients
1. Raw cocoa powder (3/4c)
2. raw honey or maple syrup (1/2c)
3. raw cashew butter or freshly grounded raw cashews (1c)
4. sea salt (a pinch)
5. seeds from 1 vanilla bean
6. any coating like sesame seeds, shredded coconut, chocolate powder etc.

Method Of Preparation:-

1. Take a food processor, mix all the ingredients in it and blend them until the mixture becomes smooth.

2. Take a bowl, pour the mixture in it, cover the bowl and keep it in the refrigerator for about 4 hours. Then make small balls of this mixture with your hands or melon baller.

3. Now roll the balls of the mixture in any coating like sesame seeds or shredded coconut. Now healthy cashew mignardises are ready to serve. Enjoy it.

Apple Oat Tart Recipe

Ingredients

For Topping:-
1. Unbleached white oat (6tbsp)
2. old-fashioned oats (1/2c)
3. salt (1/8tsp)
4. ground ginger (1/8tsp)
5. ground cinnamon (1/2tsp)
6. dark brown sugar (1/4c)
7. reduced calorie pancakes syrup (1tbsp)
8. no trans-fat margarine with 8 grams of fat (3tbsp)

For Fruit Filling:-
1. Finely chopped orange zest (2tsp)
2. unbleached white flour (2tsp)
3. dark brown sugar (1tbsp)
4. reduced calorie pancake syrup (2tbsp)
5. fresh or frozen cranberries (1 1/4c)
6. apples, cored and thinly sliced (3large)

Method Of Preparation:-
1. First heat the oven to 375 degrees F. Take a deep square or round baking dish, coat it with canola cooking spray. Take a small food processor bowl, add all the topping ingredients in it and blend them until the moist clumps form.

2. Take a large bowl, add fruit ingredients in it and toss them to blend. Then spread the fruit filling lightly in the dish. Place the dish in oven and bake it for about 15 minutes at 375 degrees F.

3. Take out the pan from the oven and then crumble the topping lightly over the top. Again place the pan in oven and bake it for about 25 minutes until the topping gets golden brown and apples becomes soft. Keep it for about 10 minutes and then serve it.

Apple Sweet Potato Bake Recipe

Ingredients
1. Thinly sliced sweet potatoes (5c about 1 ½ sweet potatoes)
2. chopped walnuts (1/4c)
3. apple juice or orange juice (1/2c)
4. ground cinnamon (1/2tsp)
5. reduced calorie pancake syrup (2tbsp)
6. dark brown sugar, packed (1/4c)
7. thinly sliced apples (2c about 2small)

Method Of Preparation:-

1. First heat the oven to 375 degrees F. Take a large bowl; add apple slices, sweet potatoes and brown sugar in it. Toss them properly. Take a baking dish of 9*9 inch; put the mixture in it with a spoon.

2. Take a small bowl, blend syrup with cinnamon in it and then mix apple juice in it. Pour this mixture over the sweet potato mixture and then dust chopped walnuts over the top.

3. Cover the dish with foil or lid, place it in the oven and bake it at 375 degrees F for about 30 minutes. Take off the foil and again bake it for about 15 minutes until the sweet potatoes and apples get baked.

Easy Healthy Fudge Recipe

Ingredients
1. Raw cocoa powder, sifted to remove any lumps (1/4c)
2. almond butter (2c)
3. vanilla extract (2tsp)
4. coconut oil, melted (1 heaping tbsp)
5. liquid honey (1/2 c +2 tbsp)
6. coarse sea salt (1tsp)

Method Of Preparation:-
1. Take a large bowl, add all the ingredients in it and toss them until they get mixed well.

2. Take a pan, put mixture in it and spread it with the back of the spoon. Place the bowl in the freezer for about 1 hour and then take it out and cut it into bite size pieces. Then place the pieces on a plate, cover them and store them in the freezer or put the mixture in candy molds.

3. Place the molds in freezer, when they get frozen then they get popped out and have chewy texture. When you take them out from the freezer, eat them quickly.

Almond Jelly Fruit Salad Recipe

Ingredients
1. Unflavored gelatin (1 ounce package)
2. skim milk, boiled (1 3/4c)
3. bitter almond extract (6 drops)
4. fresh fruits: mango (1)
5. lychees (8)
6. strawberries (8)
7. kiwi (2)
8. pineapple (1/2)

Method Of Preparation:-
1. Take a bowl, dissolves gelatin in warm water in it according to the instructions on the package. Strain it and then add it to the boiled milk and mix it until the gelatin gets completely dissolved.

2. Add bitter almond and blend it well and then pour it into the shallow dish to have the thickness of about ½ inch. Place the dish in the refrigerator.

3. Now cut pineapple in strips, kiwis in slices and mango into cubes etc. Now take out the gelatin from the refrigerator and cut the gelatin in cubes and place it ion a dish and then place all the fruits on the top. Now almond jelly fruit salad is ready to serve.

Super Quick Peach Pie Recipe

Ingredients
1. Fresh peaches, pitted, skinned and sliced (6large)
2. ground nutmeg (1/2tsp)
3. unbleached white flour (1/3c)
4. whole wheat flour (1/3c)
5. low fat buttermilk (1tbsp)
6. less fat margarine with 8 grams fat per tablespoon (1/4c)
7. granulated sugar (1c)

Method Of Preparation:-
1. First heat the oven to 450 degrees F. Take a deep dish pie pan, coat it with vanilla cooking spray.

2. Take a mixing bowl, add low fat buttermilk, margarine, sugar in it and beat the mixture for about 1 minute on medium speed. Then beat flours and add nutmegs in it until a crumb mixture gets form.

3. Then pour half of the mixture in the pie dish and then spread it in the bottom. Place peach slices on the crumb mixture and then dust the rest of the crumb mixture on the top of the peaches.

4. Place the dish in oven and bake it at 450 degrees F for about 10 minutes. Now turn down the heat to 350 degrees F and bake it for about 30 to 40 minutes until the top crust changes to light brown in color.

Sugar Free Chocolate Pudding

Ingredients
1. Cold low fat milk (1c)
2. cold vanilla soy milk (1c)
3. Jell-O chocolate Fudge sugar free instant pudding (1box about 14 ounce)

Method Of Preparation:-
1. Take a mixing bowl, add low fat and soy milk in it and lightly dust the pudding mix over the top. Then beat pudding mix together for about 2 minutes on medium-low speed. Scraping the sides of bowl, twice while beating.

2. Take four serving cups or dishes; pour the mixture at once in these cups. Place the cups in refrigerator for about 10 minutes until pudding will get set and ready to eat. The pudding contains aspartame and acessulfame potassium as a sweetener.
