Fruity Chocolate Cake Recipe

Ingredients
1. Self rising flour (2c)
2. dark chocolate, chopped (60gms)
3. vanilla essence (1tsp)
4. eggs (2)
5. caster sugar (1 1/4c)
6. butter, softened (125gms)
7. brandy (2tbsp)
8. raisins (1/3c)
9. coarsely chopped walnuts (1/2c)
10. chopped glace cherries (1/3c)
11. milk (1c)
12. nutmeg (1tsp)
13. cinnamon (1tsp)
14. baking soda (1tsp)

Method of preparation:-
1. Take a bowl; soak raisins in brandy in the pan for overnight. First heat the oven to 180 degrees C. Take 2 round sandwich cake tins of 20 cm, grease and flour them and keep them aside.

2. Take a bowl, place it over hot water and melt chocolate in it and then keep it to cool. Take another bowl, beat butter and sugar in it until it gets light and fluffy. Beat eggs in this mixture one by one and then add vanilla and chocolate in it.

3. Sieve flour, spices and soda three times in a bowl. Then add flour mixture into the creamed mixture along with milk. Mix cherries, soaked raisins and walnuts in it. Now put the mixture into the greased tins with spoon.

4. Place the tins in oven and bake them for about 35 minutes at 180 degrees C. Now take out the tins from oven and keep them to cool for about 5 minutes in tins and then place on wire rack to cool completely.

Makes about 2 cakes

Chocolate Upside Down Cake Recipe

Ingredients
1. Flour (1/3c)
2. granulated sugar (1/2c)
3. eggs (3)
4. butter (6 oz diced, at room temperature)
5. Semi-Sweet baking chocolate (6 oz)
6. butter for Ramekins

Method of preparation:-
1. First heat the oven to 350 degrees F. Take a bain-marie (double boiler), melt chocolate in it on low flame. When it gets melted then take off from the flame and mix the diced butter in it until it gets melted.

2. Take another bowl, beat eggs and sugar in it. Mix melted chocolate in it and then add the flour. Mix it properly to form batter. Take four ramekins, butter them and then pour the chocolate batter in them.

3. Place the ramekins in oven and bake them for about 10 minutes at 350 degrees F. Then take out the ramekins from oven and place them upside down on the serving plates and serve them

Cowboy Chocolate Cookies Recipe

Ingredients
1. Flour (3/4c)
2. baking powder (1/4tsp)
3. salt (1/4tsp)
4. soda (1/2tsp)
5. cocoa (1/4c)
6. egg (1)
7. brown sugar, firmly packed (1/2c)
8. sugar (1/2c)
9. margarine or shortening (1/2c)
10. chopped nuts (1/2c optional)
11. chocolate chips (1c)
12. vanilla (1/2tsp)
13. quick oats (1c)

Method of preparation:-

1. Take a bowl, sieve flour, baking powder, salt, baking soda and cocoa in it and then keep it aside.

2. Take another bowl, blend sugar, brown sugar and shortening in it and add egg in it. Beat it until it becomes light and fluffy. Then add flour mixture in it and mix it well. Mix vanilla, oats, chocolate chips and nuts in it.

3. Take a cookie sheet and grease it. Place the mixture on the sheet by teaspoon. Place the sheet in oven and bake it for 10 to 12 minutes until the cookies become crispy at 350 degrees F.

4. When the cookies get ready then take them out from oven and keep them to cool and then store them in a container.

Ginger Pear Fudge Chocolate Cake Recipe

Ingredients
1. Shredded fresh ginger or ginger powder (1tbsp)
2. ripe pears (3)
3. yeast (1tbsp)
4. flour (3/4c)
5. butter (4 oz)
6. eggs (2)
7. granulated sugar (1/2c)
8. unsweetened cocoa powder (3tbsp)
9. butter for baking dish
10. powdered sugar (to decorate)

Method of preparation:-
1. First heat the oven to 350 degrees F. Take baking dish and butter it. Take pears, peel them and then cut them into thick pieces. Then place the pear pieces on baking dish from the center to the edges.

2. Take a bowl, mix flour, cocoa powder, ginger and yeast in it. Mix it well. Take another bowl, mix butter and sugar in it until it gets smooth. Mix 2 eggs, one by one into the butter cream. Gradually add the flour mixture in it and mix both the mixture properly. Now pour this mixture over the pears in the dish.

3. Place the dish in oven and bake it for about 30 minutes. Check it if it is cooked or not by inserting a knife in it. If not, bake it again until it gets cooked.

4. Then turn off the oven and keep the cake inside the oven for about 10 minutes with oven door open. Now take it out from the oven and then sprinkle the powdered sugar on the top and serve it little warm or cold.

Split Pea Pudding Recipe

Ingredients
1. Corn flour (2tbsp or 30ml)
2. brown sugar (1/2c or 100 Gms)
3. water (2 1/4c or 500ml)
4. split peas (1 1/2lb or 675gms)
5. maraschino cherries (4 oz or 100gms)
6. water (4tbsp or 60ml)

Method of preparation:-

1. Take split peas; soak them in water for overnight. Keep them to boil in the same water. Then cover the pan and keep it to simmer for about 2 hours until the peas get soft.

2. When the peas get soft then rub them through fine sieve and then mix in sugar. Then cook this mixture in a pan over very low heat.

3. Take a bowl, mix corn flour with water in it and then add it to he pan. Take a shallow rectangular cake tin, pour the mixture in it and keep it to cool. Then place it in the refrigerator until it gets chill and set. Now cut it into cubes and place the cubes in serving bowl. Decorate it with cherries and then serve it.

Chinese New Year Turnip Cake Recipe

Ingredients
1. Long grain rice flour (2c)
2. water (1c)
3. Lo bak or substitute turnips (2 ½ pounds)
4. sesame seeds, toasted (1tbsp)
5. finely chopped Chinese parsley or cilantro (1tbsp)
6. pepper (1/2tsp)
7. sugar (1/2tsp)
8. salt (2tsp)
9. finely chopped Chinese sausage (4)
10. finely chopped dried shrimp, soaked in 1 tablespoon of sherry (1/4c)
11. dried black mushrooms (4)
12. finely chopped scallion (1tbsp)
13. oil (5tbsp)

Method of preparation:-
1. Take turnips, peel and grate them. Take a saucepan, place over low heat. Add water and grated turnips in it and keep it to simmer for about 1 hour until the turnips get soft.

2. Take a bowl, mix rice flour and turnips in it and then add 2 tablespoons of oil in it. Mix it well and keep it aside.

3. Take a pan, heat 2 tablespoon of oil in it. Fry sausages, shrimps, mushrooms, scallions in it and then add them to the turnip mixture. Add pepper, salt and sugar in it and mix it well.

4. Take a cake pan of 6*9 inch, grease it and pour the mixture in it. Sprinkle the sesame and parsley over it.

5. Place on the rack in steamer and steam it over hot boiling water for about 1 hour. Keep it to cool and then place it in the refrigerator for overnight. Then cut the cake into slices and fry in 1 tablespoon of oil until get golden brown and serve them hot.

Number of servings – 4 to 6

Chinese Pineapple Tarts Recipe

Ingredients

For filling:-
1. Crushed pineapples with juice (1can about 8oz)
2. cinnamon stick (2”)
3. sugar (3/4c)
4. crushed pine apples with juice (2cans about 20oz)

For Pastry:-

1. Flour (2 1/2c)
2. vanilla extract (1tsp)
3. baking soda (1tsp)
4. eggs (2)
5. powdered sugar (1/2c)
6. unsalted softened butter (1/2c)
7. cream cheese (4tsp)
8. salt (1/2tsp)

For Assemble:-
1. Egg yolk (1)
2. cooking spray and water (2tsp)

Method of preparation:-

1. For Filling; take a strainer, drain the crushed pineapples in it by pressing them to get as much of juice as possible.

2. Take a large pot, place it over medium low heat. Place the pineapples in it and then add cinnamon stick and sugar in it. Keep it to cook for about 1 hour until the sugar starts crystallizing against the sides of the pan. Then take out the cinnamon stick from the pan and keep filling mixture to cool.

3. For Pastry; take a mixer, add butter, cream cheese and powdered sugar in it. Beat this mixture at medium high speed. Then add vanilla, baking soda, 2 eggs in it and beat them until they get fully mixed. Then turn down the speed to low and add flour and salt in it. Mix it well to form dough.

4. Then keep the dough in the refrigerator for about 30 to 60 minutes. Heat the oven to 350 degrees. Take 2 mini muffin tins, grease with cooking spray. Then mix water and yolk to make wash.

5. Take a ball of dough of about 1 inch. Press in into the muffin tin and fill with pineapple. Roll the remaining dough to thin strips, less than 1/8 inches wide. Then use it to make double lattice top over each tart. Brush it with egg wash and place it in oven to bake it for about 25 minutes. Makes about 24 mini tarts.
