Chinese Almond Pudding Recipe

Ingredients
1. Ground almonds (1/2 cup)
2. milk (1 ¼ cup about 2% milk)
3. gelatin (1tsp)
4. ground rice flour (2 tbsp)
5. sugar (2tbsp)
6. cold water (5c)
7. hot water (2tbsp)

Method of Preparation:-

1. Take a bowl; add 5 cups of cold water in it. Mix rice and the almonds in it. Keep it for about 2 hours. Add milk and then mix it well. Now steam the mixture for about 2 hours by stirring it irregularly. Add sugar in it and mix it properly and then keep it to cool to the room temperature.

2. Take a small bowl, add 2 tablespoon of hot water in it and mix gelatin in it until it gets dissolved. Then add it into the milk mixture and mix it properly.

3. Take a serving shallow dish, pour the mixture in it and keep it aside until it gets set. Now the Chinese almond pudding is ready to serve.

Chinese Coconut Pudding Recipe

Ingredients
1. Evaporated milk (1can about 5oz)
2. egg whites (2)
3. unflavored gelatin (2tbsp)
4. boiling water (13/8c)
5. coconut extract (1tsp)
6. white sugar (1c)

Method of preparation:-
1. Take a mold of 1 quarter. Take a large bowl, add boiling water in it and add gelatin in it. Mix it until it gets dissolve. Mix coconut extract, sugar and evaporated milk in it.

2. Take a small bowl, beat egg whites in it until it gets fluffy. When the gelatin mixture gets cool then place the bowl of gelatin in ice bath. When the mixture gets set then adds the mixture of egg whites in it.

3. Now pour this mixture in to greased mold and place it in the refrigerator until it get set. When the coconut pudding gets ready then serve it and enjoy it.

Chinese Egg Tarts Recipe

Ingredients

For Pastry:-
1. Plain flour (250gms)
2. egg (1)
3. diced butter (140gms)
4. salt (1pinch)
5. cold water (2tbsp)
6. icing sugar (4tbsp)

For Filling:-
1. Evaporated milk (100ml)
2. water (250ml)
3. vanilla extract (1/4tsp)
4. eggs (3)
5. caster sugar (150gms)

Method of preparation:-
1. First heat the oven to 200 C/ Gas mark 6. Take a large bowl, add flour and then mix salt in the flour. Then rub butter in it until the mixture becomes like coarse crumbs.

2. Take another bowl, put cold water in it and then beat egg in it. Now mix the egg mixture into the flour mixture to make soft dough. Wrap the dough and keep it for about 30 minutes in the refrigerator.

3. Then make two halves of dough. Roll each half into 3mm thickness. Cut out 22 rounds with a cutter and then press them into the lightly greased tarts tin.

4. Take a saucepan, place it over low heat. Add water and sugar in it and cook it until the sugar gets dissolves to make syrup. Then take off the pan from heat and keep it aside to cool.

5. Take a large bowl, mix evaporated milk, egg and vanilla in it. Beat this mixture until it gets smooth. The strain the syrup in it and mix it and then pour it into the tarts cases.

6. Now place them in the oven and bake them for about 20 minutes until the pastry gets golden brown and the filling gets set.

Chinese Bufflet Style Donuts Recipe

Ingredients
1. Refrigerated biscuits (1can)
2. oil (for deep frying)
3. sugar (1/3c)

Method of preparation:-
1. Take a large and deep frying pan; add oil in it for deep frying. Heat the oil to 350 degrees.

2. Take out the biscuits from the can and put few of them into the pan and then fry them. When they get brown from one then change the side. When the biscuits get golden brown from both sides then take them out from the oil.

3. Place them on the paper napkins and keep them to cool. Take a small bowl, put sugar in it. When the donuts get slightly cooled then mix them in the sugar and coat them properly.

Number of servings – 8

Chocolate Cherry Chip cookies Recipe

Ingredients
1. Cocoa powder (1/2c)
2. cherry chips (1 ½ c)
3. chopped dried cherries (1 cup)
4. butter (3/4c at room temperature)
5. chocolate chips (1/2 c)
6. eggs (2)
7. brown sugar packed (1 1/2c)
8. unbleached white flour (2 c)
9. baking soda (1 tsp)
10. vanilla extract (2 tsp)
11. salt (1 tsp)
12. water (2 tbsp)

Method of preparation:-
1. Take a large bowl, mix butter and cream brown sugar in it for about 2 minutes until it gets light and fluffy by using electric mixer. Beat eggs, water and vanilla in it and then mix salt and baking soda in it.

2. Add cocoa powder and flour in it and beat it until it gets mixed properly. Now mix cherries and chips in it. Heat the oven to 350 degrees F.

3. Take a baking sheet and then place the batter on the sheet with an ice scoop at 2 inches apart. Then place the sheet in oven and bake it for about 8 to 9 minutes at 350 degrees F. When the cookies get set then take them out and serve and keep them to cool and then store them in airtight container.

Chinese Chews Recipe

Ingredients

For first layer:-
1. Flour (1 cup)
2. salt (1 tsp)
3. butter of margarine (1/2 cup)
4. white sugar (2 tbsp)

For second layer:-
1. Flour (2 tbsp)
2. brown sugar (1 ½ cup)
3. can coconut (1/2 of 3 ½ oz.)
4. vanilla (1 tsp)
5. chopped pecans (1/2 cup)
6. beaten eggs (2)

Method of preparation:-
1. Take a baking pan of 8 inches square and grease it. Take a bowl; mix all the ingredients of first layer in it. Place them on the bottom of greased pan and then press them.

2. Place the pan in the oven and bake it for about 12 to 15 minutes at 375 degrees. Take out the pan from the oven.

3. Take another bowl, mix the ingredients of second layer in it and spread over the baked layer. Place the pan again in the oven and bake it for about 25 to 30 minutes at 375 degrees. Keep it to cool and then cut it into squares.

Chinese Wheat Cake Recipe

Ingredients
1. Flour (3c)
2. oil (1/4c)
3. almost boiling water

Method of preparation:-
1. Take a bowl, add flour and water in it. Mix it to make dough and then knead it to make it soft. Roll the dough very thinly and cut it out 24 rounds. Each round is of 2” in diameter.

2. Apply the oil the 12 rounds of dough and then press the rest of the 12 rounds on top. Then roll each into a larger round of about 6 inches across.

3. Take a heavy based frying pan, grease it lightly and fry each round for about 3 minutes over low heat from each side under the tight fitting cover.

4. Place the cooked wheat cakes on a plate and serve them by covering with a cloth. Eat wheat cakes by separating each layer as oil is used between them.
