Cioppino ? Italian Fish Stew Recipe

1. Fresh fish (flounder, haddock, perch), boned and cut into 1 inch pieces fresh fish (1/2pound)
2. shrimp in the shell (1pound)
3. chopped parsley sprig (6)
4. freshly grated Parmigiano-Reggiano cheese (2tbsp)
5. lemon wedges (8)
6. scrubbed clean, clams in the shell (6)
7. red wine (1/2c)
8. oregano (1tsp)
9. marjoram (1tsp)
10. rosemary (1tsp)
11. chopped garlic (2cloves)
12. thinly sliced celery (2stalks)
13. chopped onion (1)
14. tomato juice (3c)

Method of preparation:-

1. Take a pot, add tomato juice in it and keep it to simmer over low heat. Now add fish, oregano, garlic, onion, marjoram, celery and rosemary in the pot.

2. Cover the pot and keep it to simmer for an hour until the broth gets thickened. Add shrimp, wine and clams in the pot and keep the mixture to boil. Now turn down the heat to low and keep it to simmer and cook the shrimp until it changes its color to pink.

3. Take heated serving bowls, place the shrimp in it and add cheese, parsley and lemon wedges on the top and then serve it.

Swordfish A La Siciliana Recipe

1. Swordfish steaks (2pounds)
2. pitted and minced green olives (10)
3. olive oil (5tbsp)
4. minced garlic (1clove)
5. minced onion (1small)
6. raisins (3ounces)
7. diced, ripe tomatoes(1/2 pound)
8. pine nuts (2 ounces)
9. salt and pepper (to taste)
10. capers (1/4c)

Method of preparation:-
1. First heat the oven to 400 degrees F.Take slightly warm water, soak raisins in it. Soak them for about 30 minutes and then drain them. Place them aside.

2. Take a large sauce pan, place it over high heat. Heat olive oil in it. Saute garlic and onion in it until they get soft. Mix olives, raisins, capers, pine nuts and tomatoes in it. Turn down the heat to low and cook it for about 15 minutes by covering the pan.

3. Take a baking dish, grease it lightly with oil and then place the steaks, seasoned with salt and pepper on the dish. Add the cooked sauce over the steaks on the dish. Place the dish in oven and bake it for about 15n to 20 minutes or until the steaks get firm.

Italian Rice Pudding Recipe

1. Chopped streaky bacon slices (1lb)
2. long grain rice (2 2/3c)
3. chicken stock (3 3/4c)
4. canned peeled tomatoes (14oz)
5. salt (1tsp)
6. cayenne pepper (1tsp)
7. black pepper (1tsp)
8. ground cumin (1/2tsp)
9. grated lemon rind (1tsp)
10. vegetable oil (1c)
11. clean and chopped leeks (4)

Method of preparation:-

1. Take a flameproof casserole, place it on moderate heat and fry bacon in it for 6 to 7 minutes or until it gets crispy and brown.Then place the pieces on a plate and keep it aside.

2. Now put oil in it and heat it when the oil gets hot then add leeks and fry for 12 minutes and stir it occasionally. Mix rice in it and fry, stirring it frequently for about 5 minutes.

3. Add tomatoes with can juice, pepper, cayenne, salt, cumin and lemon rind and then mix it. Now pour this mixture over the stock and boil it. Add the bacon pieces in the casserole.

4. Reduce the heat to low and then simmer the mixture for 15 to 20 minutes until the rice is cooked and tender and the liquid has been absorbed. Now take off the casserole from the heat and then serve it immediately.

Stuffed Seashell Pasta With Mushrooms Recipe

1. Jumbo pasta seashells (24)
2. frozen spinach, thawed and drained (5ounces)
3. chopped garlic (1tsp)
4. chopped shallots (2)
5. butter (2tbsp)
6. cooking cream (1c)
7. onion powder (1/2tsp)
8. ricotta cheese (2tbsp)
9. egg (1small)
10. cream cheese (2/3pkg)
11. gourmet mushroom mix (1c)
12. salt and pepper (to taste)

Method of preparation:-
1. Take a pan, boil water in it and then add seashell pasta in it to boil. Boil it until it gets soft and then cool it down with cold water.

2. Take a sauce pan, heat 1 tablespoon of butter in it and then saute mushrooms in it. Take a bowl, mix cream cheese, sauteed mushrooms, ricotta cheese, egg, onion powder and salt and pepper in it. Mix these entire well and then fill mixture in all seashells.

3. Take a frying pan, heat the left over butter in it and then saute the chopped shallots and garlic for about 3 minutes and add the cream. Boil it and then add the stuffed seashells. Now reduce the heat to simmer and cover it with lid. Simmer it for about 10 minutes or until the stuffing is cooked.

4. Add the spinach to the sauce before the seashell pasta is ready. During the cooking if the sauce becomes thick then adds some water or chicken stock in the pan. When it gets ready then serve it in serving bowl or a dish.

Grilled (Broiled) Chicken Recipe

1. Boned chicken thighs (8part)
2. French bread (12slices)
3. green and red pesto sauce (1/2c)
4. passata, sieved tomatoes (2/3c)
5. olive oil for brushing
6. freshly grated parmesan cheese (1c)
7. pine nuts or flaked almonds (1/2)
8. salad leaves to serve

Method of preparation:-

1. Take a flameproof dish. Place the chicken in single layer on it and brush the chicken with light oil. Now place this dish in preheated grill or broiler for about 15 minutes or until it gets golden brown.

2. Turn the sides of the chicken during grilling it. Test it if it is cooked or not. When it is cooked, then the juice will turn clear not pink.

3. Take a small pan. Add excess fat in it and then warm the half of the pesto sauce and passata (sieved tomatoes) in it. Now pour it over the chicken. Again grill the chicken for few minutes until it gets coated.

4. Take French bread, spread pesto over the slices of bread. Now place the bread over the chicken and then sprinkle the parmesan cheese over it and spread the pine nuts over the cheese.

5. Again grill it for 2 to 3 minutes or until it gets brown and bubbling and then serve it with salad leaves.

Macaroni Grill Foccacia Recipe

1. Unsifted all purpose flour (3c)
2. unsifted semolina flour (3/4c)
3. quick rising dry yeast (1 1/2tsp)
4. olive oil (9tsp)
5. fresh rosemary leaves (1tsp)
6. salt divided (1/2tsp)
7. hot milk (1 1/2c)

Method of preparation:-

1. Take a cake pan of 9 inch. Pour and spread olive oil in it. Spread it properly to cover the bottom and sides.

2. Take a bowl of mixer. Put all purpose flour, semolina flour, 2 tablespoon of olive oil, 1/4teaspoonof salt and yeast in it. Mix all these ingredients with hand and then blend on medium speed.

3. Reduce the speed of blender and then add hot milk again blend on medium speed for about 5 minutes to form dough. Now sprinkle the flour on cake pan.

4. Take out the dough from the bowl of mixer and spread out in the cake pan. Cover the pan with clean towel and keep it for 30 minutes. Now heat the oven to 400 degrees.

5. Take off the towel from the pan and then brush the dough with olive oil. Sprinkle rosemary and salt to top the dough. Place the pan in preheated oven and bake it for about 20 minutes. Then out the loaves from oven and then drizzle with remaining oil.

Make 6 to 8 servings

Grilled Italian Style Burgers Recipe

1. Ground beef (1pound)
2. finely chopped red onions (1small)
3. finely chopped garlic (1small)
4. chopped fresh parsley (1/4c)
5. liquid smoke (1tsp)
6. egg (1)
7. seasoned bread crumb (1/2c)
8. hot and mild Italian sausage removed from casing (1/2pound)
9. freshly grated Romano cheese (1/4c)

For topping:-

1. Thin sliced red onion (1small)
2. thin sliced beef steak tomato (1small)
3. roasted red pepper (1jar)
4. thin sliced bread (6small)
5. fresh basil leaves (10)
6. provolone cheese (6slice)

Method of preparation:-

1. Take a medium size bowl. Mix all the ingredients of hamburger in it. Take patties and shape it in burger shape. Place these patties on grill for about 10 minutes. Turn the side and again grill it for 10 minutes.

2. Spread provolone cheese for topping and grill it for about 1 minute until it gets melted.

3. Take off the burgers and toast the bread face side down for about 1 minute. Top it with sliced tomatoes, roasted red pepper, fresh basil sliced onion and then serve it.
