Catfish With Ginger And Sour Cream Recipe

Ingredients
1. 400 gm catfish
2. 2 tbsp butter
3. 2 tbsp virgin olive oil
4. 1 inch thick, 2 inch length fresh ginger root
5. 2 medium onions
6. 2 tbsp cilantro
7. 1 cup sour cream
8. 2 tsp capers
9. 1 tbsp white wine
10. Salt (to taste)
11. Pepper (to taste)

Directions
1. Clean the catfish and cut two fillets out of it. Mince the onions, ginger and cilantro.

2. Take a saucepan and heat butter and olive oil in it. To this add the onions, ginger, cilantro, and capers and cook these for a minute or two on a medium flame.

3. Cook the steaks on a preheated and oiled outside grill for about two minutes on both sides. Transfer these to the pan. Pour white wine over all the ingredients in the pan.

4. Place the pan in a preheated oven to about 350 degrees F for about six minutes. Transfer the cooked fish along with other ingredients in the pan to serving plate.

5. Heat the sour cream on a high flame till it thickens, add salt and pepper to taste. Pour this on the fish and serve hot.

Catfish Stew Recipe

Ingredients
1. 2.5 kg catfish
2. 250gm bacon
3. 1 kg white onions
4. 5 hard boiled eggs
5. 1 can evaporated milk
6. 1 can pimento
7. 1.5 kg red potatoes
8. 5 cups water
9. Salt to taste
10. Pepper to taste
11. 1 tbsp butter

Directions

1. Clean the fish and cut into medium size pieces. Dice the bacon, onions, potatoes and the eggs. Drain pimento and dice it.

2. Take a saucepan, add butter in it; cook the fish till it becomes crisp. Remove the fish and set aside. Now cook the bacon in the butter, add potatoes and onions to it.

3. Place fish in four cups of water in a pan. In this put the bacon, potatoes, onion, eggs, salt, pepper and pimento. Cook on a medium heat for about one hour. Put the milk in it stirring continuously. Catfish stew is ready.

Catfish Court Bouillon Recipe

Ingredients
1. 1.5 kg catfish fillets
2. 1 large onion
3. 4 cloves garlic
4. 1 cup green pepper
5. 1 cup celery
6. 2tbsp flour
7. 1 can tomato sauce
8. 1 can frozen tomatoes
9. 6 cups fish stock
10. Creole seasoning
11. 2tbsp cooking oil
12. 2 bay leaves
13. 6 cups hot cooked rice

Directions

1. Clean and cut fish into bite-sized pieces. Mince the onions, celery, garlic, and green pepper. Take a large saucepan, heat the oil in it. Now add flour to it stirring continuously. Bring to boil and simmer over a medium heat for about 10 minutes. Now add the onions, celery, green pepper, and garlic.

2. Cook for a few more minutes. To this now add fish stock stirring continuously. Now put tomato sauce, tomatoes and bay leaves. Bring the mixture to boil and cook on a medium heat for about half an hour.

3. Sprinkle Creole seasoning on the fish, and add to the mixture prepared above. Cover and cook for 20 minutes or until fish flakes easily. Season to taste with Creole seasoning. Throw away bay leaves. Serve with hot cooked rice.

Steamed Catfish With Garden Vegetables Recipe

Ingredients
1. 4 catfish fillets
2. 2 medium green onions
3. 1 medium carrot
4. 1 small sweet potato
5. 5 medium button mushrooms
6. 1 tsp soft margarine
7. 1 tsp lemon juice
8. salt (to taste)

Directions
1. Clean the catfish fillets. Cut the green onions lengthwise, dice the button mushrooms, sweet potato and carrot.

2. Take a foil place the fish fillets on the foil and add some salt and margarine on each piece of fish add the cut vegetables to the fillets. Also add a little water and lemon juice to them.

3. Now wrap the foil around the ingredients and cook in a preheated oven at about 350 degrees F for about twenty minutes. Take out from the oven and serve after a few minutes.

Grilled Catfish With Salsa Recipe

Ingredients
1. catfish fillets ( 4)
2. medium onions (2)
3. medium tomatoes ( 3 )
4. medium jalapeno peppers (2)
5. white wine vinegar (2 tbsp )
6. garlic salt (1/2 tsp)
7. Salt (to taste)
8. Pepper (to taste)

Directions

1. Dice the onions, tomatoes and jalapeno peppers. To prepare the salsa, take a large bowl in this bowl put the tomatoes, onion, jalapeno peppers, vinegar and salt. Mix well. Keep at room temperature for about half an hour. Then refrigerate it.

2. Pour garlic salt and peppers on the fish steaks. Heat an outside grill at high temperature. Apply oil to the grill and cook the fish on both sides till it flakes easily. Remove from grill and transfer to serving plate. Pour the salsa prepared above on it and serve hot.

Sweet And Spicy Grilled Catfish Recipe

Ingredients
1. Catfish fillets (2-3)

For Marinade or Basting Sauce:-

1. Ketchup (1/3c)
2. brown sugar (1tbsp)
3. salt (1tsp)
4. finely chopped fresh basil (2tsp)
5. minced garlic (2cloves)
6. horseradish (3tbsp)
7. red wine vinegar (4tbsp)
8. black pepper (1/4tsp)

Method of preparation:-

1. Take a shallow dish, place catfish in the dish. Take a bowl, mix together the sauce ingredients and then pour it over the catfish fillets.

2. Cover the bowl and keep it to marinate in the refrigerator for about 30 to 45 minutes. Now take out the fillets from the dish and then discard the marinade.

3. Preheat the grill for the medium high heat. Now place the fillets on the grill and cook them for 10 to 12 minutes, turning the fillets once while cooking.

4. When the fish gets cooked or easily flakes with fork then remove the fillets from the heat and serve them.

Grilled Catfish In Corn Husks Recipe

Ingredients
1. Catfish fillets (4)
2. finely chopped green onions (3-4)
3. dried thyme (1tsp)
4. fresh corn husks (4)
5. unsalted butter (1/4c)
6. salt (1/4tsp)
7. black pepper (1/4tsp)
8. garlic powder (1/2tsp)

Method of preparation:-
1. First heat the grill for the medium high heat. Take catfish and then place the each catfish fillet into a husk. Now season the fillets with salt, pepper and other ingredients.

2. Fold the husk to cover the fish and then tie it with kitchen twine. Now place the fish on grill and cook it for about 5 minutes over direct heat.

3. Move the husk to the cooler part of the grill and cook it indirectly for about 7 to 8 minutes. When the fish gets ready or it flakes easily with fork then take it off from the heat and the serve it.

Preparation time- 12 minutes.
