Catfish Chowder Recipe

Ingredients
1. Catfish bones, catfish fillets cubed (1 1/2 to 2 pounds)
2. lemon juice (1tbsp)
3. tomatoes (1can)
4. pepper (1/4tsp)
5. diced potatoes (4med.)
6. chopped onions (2)
7. salt (2tsp)
8. water (5c)
9. chopped parsley (1tbsp)

Method of preparation:-

1. Take a pan keep the fish bones, water and salt to boil. Then reduce the heat and keep it to simmer for about 10 minutes.

2. Take out the bones and discard them. If you do not have the bones then use fish stock. Add onion, tomatoes, potatoes and pepper to the stock and keep it to boil and then keep it to simmer for about 15 minutes until the potatoes get tender.

3. Now add the cubed catfish and keep it to simmer for about few minutes until the fish gets flake. Now add lemon juice and parsley. Then serve it hot with crisp hush puppies.

Skillet-Grilled Catfish Recipe

Ingredients
1. Catfish fillets (4 about 6 ounce)
2. all purpose flour (1/4c)
3. butter (1/4c)
4. cornmeal (1/4c)
5. pepper (1/4tsp)
6. cayenne pepper (1/4tsp)
7. white pepper (1/4tsp)
8. dried thyme (1/2tsp)
9. garlic salt (1/2tsp)
10. dried basil (1tsp)
11. onion powder (1tsp)

Method Of Preparation:-

1. Take a resealable bag of large size; add flour, cornmeal, onion powder, dried basil, garlic salt, dried thyme, white pepper, cayenne pepper and pepper in it. Then add one fillet of catfish at a time in it and shake the bag to coat it well.

2. Take a heavy based skillet; place it on hot grill rack. Add butter in the skillet and melt it. Then add coated fillets in the skillet and cover it. Now grill it for about 6 to 8 minutes on both sides or until the fish gets flake easily with fork. Now the fish is ready to serve.

Baked Catfish Fillets With Egg And Onion Sauce Recipe

Ingredients
1. Catfish fillets (1lb)
2. evaporated milk (1/2c)
3. cornstarch (1tbsp)
4. thinly sliced onion (1)
5. vanilla (2drops)
6. butter (1tbsp)
7. hard cooked egg, sieved (1)
8. pepper (1/8tsp)
9. salt (3/4tsp)
10. water (1/2c)

Method Of Preparation:-

1. First heat the oven to 400 degrees F. Take catfish fillets and cut them into pieces of serving size. Take a shallow baking dish; place the fish pieces and slices of onion in it.

2. Place the dish in preheated oven and bake it at 400 degrees F. Soak milk with water and pour over meat. Bake it for about 25 minutes.

3. Now strain the broth from the baking dish into a saucepan
Add pepper and salt in the pan. Mix cornstarch in cold water to make a paste and then add it into the broth in the pan. Cook it by stirring regularly over low heat until it gets thickened.

4. Then mix butter, egg and vanilla in it and pour it over baked fish in the serving dish. Now serve it hot.

Pan Fried Catfish Recipe

Ingredients
1. All purpose flour or corn flour (1/4c)
2. fresh or frozen and thawed catfish fillets (1 pound)
3. cooking oil for shallow frying
4. salt (1/8tsp)
5. ground black pepper (1/4tsp)
6. ground red pepper (1/2tsp)
7. Endive (optional)
8. Tartar sauce (optional)
9. lemon wedges (optional)

Method Of Preparation:-

1. Take a shallow dish, mix corn or all purpose flour, salt, black pepper and red pepper in it. Then coat the fish fillets in this flour mixture.

2. Take a frying pan of 12 inch, heat cooking oil in it over medium heat until it gets hot. Place the fish fillets in single layer in the frying pan. Fry the fillets from one side for about 3 minutes until they change to golden color.

3. Now turn the side of the fillets and fry them for 3 to 4 minutes more until the fillets change to golden color and flakes easily with a fork.

4. Then place fried fish fillets on paper towels to drain. Now the pan fried catfish is ready to serve. Decorate the fish with lemon wedges and endive and then serve it hot with tartar sauce.

Catfish With Onion Dijon Coating Recipe

Ingredients
1. Catfish fillets (4 about 6 ounce)
2. dried parsley flakes (1/4tsp)
3. honey Dijon mustard (1/4c)
4. finely chopped onion (1)
5. garlic salt (1/4tsp)
6. pepper (1/4 tsp)

Method Of Preparation:-
1. First heat the oven to 175 degrees C or 350 degrees F. Take a bowl of small size, mix mustard and finely chopped onions in it.

2. Take fish fillets, season them with pepper and garlic salt. Place them on baking dish. Now coat the fish fillets with onion and mustard mixture and then dust the dried parsley flakes on the top of the fish.

3. Place the baking dish in preheated oven and bake the fish fillets for about 20 minutes at 350 degrees F. Now turn the oven to broil and then broil the fish fillets for about 3 to 5 minutes until they golden color. Now the fish is ready to serve.

Catfish In Cornmeal Recipe

Ingredients
1. Catfish fillets (3 about 6 ounce)
2. grated lemon peel (1tsp)
3. lemon juice (1tbsp)
4. heavy cream (6tbsp)
5. vegetable oil (3tbsp)
6. salt and pepper (to taste)
7. thyme (2tsp)
8. yellow cornmeal (1/4c)

Method Of Preparation:-

1. Take a large bowl, mix yellow cornmeal, thyme, lemon peel, salt and pepper in it. Reserve 1 teaspoon of this mixture.

2. Take a large frying pan, heat oil in it over medium heat. Take fish, brush 1 tablespoon of cream on both sides of fish and then coat with cornmeal mixture.

3. Place the fish in pan and saute it for about 4 minutes from each side until it gets cooked and changes to golden brown.

4. Take two serving plates, place fish in the plates. Now deg-laze the frying pan with lemon juice and scratch out the brown spots.

5. Then mix rest of the 5 tablespoon of heavy cream and 1 teaspoon of cornmeal mixture in the frying pan. Keep it to simmer for about 1 minute until it gets slightly thickened. Now pour this mixture over the catfish in the serving plates and then serve it.

Louisiana Catfish Recipe

Ingredients
1. Catfish fillets, lightly seasoned with salt and pepper (4 about 5 to 8 oz)
2. soy sauce (1tbsp)
3. burgundy wine (2c)
4. salt (to taste)
5. ground red pepper (to taste)
6. peeled and chopped fresh tomatoes (4c)
7. chopped garlic (1tbsp)
8. olive oil or peanut oil (2tbsp)
9. chopped parsley (1c)
10. chopped onion (1c)

Method Of Preparation:-

1. Take a saucepan, place it over heat. Heat oil in it and add chopped parsley and onions in it and then saute them for about 3 to 5 minutes. Except fish fillets, add the remaining ingredients in the pan and cook them for about 10 minutes until onions become soft.

2. Take off the pan from heat and keep it aside. Now place fish fillets on medium hot grill with skin side up and then grill them for about 3 minutes. Then turn the side of the fillets and grill them for 2 minutes.

3. Remove the fish fillets and place it in aluminum foil and then keep it on a grill-safe pan, over the grill and then spread the prepared sauce over it. Cook it for 10-12 minutes. Take off the pan from grill and serve hot fish in serving dish.
