Cheesy Catfish Recipe

Ingredients
All purpose flour (1 1/4c), grated parmesan cheese (3/4c), egg (1), catfish fillets (8 about 4 ounce), milk (1tbsp), melted margarine (1/4c), paprika (1tsp), ground black pepper (1 1/2tsp), salt (1 1/2tsp).

Method Of Preparation:-
First heat the oven to 350 degrees F or 175 degrees C. Take a bowl of medium size, add milk and beat eggs in it. Take a separate bowl; add flour, cheese, paprika, pepper and salt in it. First dip the fish fillets in egg mixture and then coat them with cheese mixture. Take a baking dish of 9*13 inches, place the fish fillets on the bottom of the dish in a single layer and then pour the melted margarine over the fillets. Now place the baking dish in oven and bake it at 350 degrees F for about 15 minutes or until the fish changes to golden brown color. Now the cheesy fish gets ready to serve.

Catfish With Tropical Fruit Salsa Recipe

Ingredients
Catfish fillets (1pound), chopped red onion (1/4c), tropical fruit salad, drained and chopped (1can about 15.25 ounces), cooking spray, paprika (1/2tsp), lime juice (2tbsp), diced mild green chili peppers (2tbsp), whole kernel corn, drained (1can about 8 ounce) and chopped fresh cilantro (1tbsp).

Method Of Preparation:-
Take an oven’s broiler, first heat it and then set the rack in it about 6 inches apart from the source of heat. Take a broiler pan, coat it with cooking spray. Take a bowl to prepare salsa, mix fruit salad, onion, corn, cilantro and Chile peppers in it and keep the salsa aside. Now place the fish fillets on broiler pan and broil them for about 4 minutes. Turn the side of fillets, brush them with lime juice and then dust paprika over the fillets. Again broil the fillets for about 3 to 5 minutes or until the fish gets flake with a fork. When the fish gets ready then serve it with salsa.

Crispy Fried Catfish Recipe

Ingredients
Evaporated milk (1/2c), catfish fillets (6 each fillet is about 6to 8 ounces), yellow cornmeal (1/2c), flour (1c), paprika (2tsp), dash pepper, bacon (10 to 12 slices) and salt (1tbsp).

Method Of Preparation:-
Take fish, clean it, wash and then pat dry it. Take a bowl, add milk in it and then mix pepper and salt in it. Take a shallow dish, mix cornmeal, flour and paprika in it. Now dip the fish in milk mixture and then roll it in flour mixture. Take a frying pan, fry bacon slices in it until they get crispy. Drain bacons on the paper towels, leaving the bacon drippings in the pan. Now fry fish for about 4 minutes in the hot drippings. Use spatula to turn it carefully and again fry it for about 4 to 6 minutes until it gets brown color and flake easily with fork. Then drain it on paper towels and serve it with crispy bacons.

Pecan Coated Catfish Recipe

Ingredients
Pecan halves (1c), buttermilk (1c), catfish fillets (6 about 2 to 2 ½ pounds), flour (1/2c), eggs (2), yellow cornmeal (1c), salt (1tsp), salt (1tsp), parsley sprigs and lemon wedges (for garnish).

Method Of Preparation:-
To toast pecans: Take a frying pan, place it over medium heat. Put pecans in the ungreased pan and toast them by stirring until they get aromatic and changes to golden brown in color. Then keep them to cool completely. Now take a food processor, put the toasted pecans in it and process them until they look like coarse meal. Take catfish fillets, wash them in cold water and then pat dry them. Take a shallow bowl, beat eggs, buttermilk and Tabasco sauce in it. Take another shallow bowl, mix flour, ground pecans, pepper, salt and cornmeal in it. Take fish fillets, first dip each fillet in buttermilk mixture and then coat it with flour mixture. Keep it aside on waxed paper until they get ready to cook. Take a pan, grease it and then place the fillets on it. Place the pan in oven and bake it for 20 minutes at 350 degrees F until it gets brown color and flakes easily with fork. When the fish gets ready then serve it with parsley sprigs and lemon wedges.

Southern Fried Catfish Recipe

Ingredients
All purpose flour (1/2c), catfish fillets, cut in strips (1 pound), buttermilk (1/2c), vegetable oil for deep frying (1 quart), seafood seasoning, such as Old Bay (1tsp), fine cornmeal (1 1/2c), salt and pepper (to taste), water (1/2c).

Method Of Preparation:-
Take a bowl of small size, add water, buttermilk, pepper and salt in it. Take a flat pan of large size and then pour the mixture in it. Place the fish in single layer on the bottom of the pan. Turn the side of fish to coat it with mixture properly and then keep it aside to marinate. Take a plastic bag of 2 gallon, add flour, cornmeal and seafood seasoning in it and mix these Ingredients properly. Then add a few fish fillets into the mixture and toss them gently to coat with mixture properly. Take a deep fryer, heat oil in it to 185 degrees C or 365 degrees F. Now put the well coated fish fillets, a few at a time in hot oil and deep fry them for about 3 minutes until they get golden brown color and becomes crispy. Then place the fried fish on paper towels to drain. Now the Southern fried fish is ready to serve.

Catfish Gumbo Recipe

Ingredients
Beef bouillon (2cubes), catfish fillets, cut into 1 inch pieces (1 pound), chopped celery (1/2c), chopped onion (1/2c), vegetable oil (1/4c), chopped green bell pepper (1/2c), chopped garlic (1clove), bay leaf (1), red pepper flakes (1/4tsp), frozen okra (1package about 10 ounce), diced tomatoes (2cans about 8 ounce), water (2c), hot pepper sauce (1/8tsp), dried thyme (1/4tsp), salt (1tsp).

Method Of Preparation:-
Take a pot of 3 quarts, add 2 cups of water in it and keep it to boil. Then add bouillon cubes in water and let them to dissolve properly. Take a frying pan of medium size, place it over heat. Add vegetable oil in the pan and heat it and then cook onion, green pepper, celery and garlic in the oil until they get soft. Now add these cooked vegetables with okra, tomatoes into the boiling water of pot and then season the vegetables with salt, bay leaf, thymes, red pepper flakes and hot pepper sauce. Turn down the heat to low, cover the pot and keep it to simmer for about 30 minutes. Now add catfish in the pot, cover it and kep it to simmer for about 15 minutes until the fish becomes soft and flaky. When the catfish gumbo gets ready then serve it over cooked rice.

Stuffed Catfish Recipe

Ingredients
Fresh or frozen and thawed farm raised catfish fillets (4 about 1 ½ pounds), lemon juice (1tsp), pepper (1/4tsp), salt (1/2tsp) and bacon (8slices).
For stuffing:- Dried parsley (1tsp), chopped celery (1tbsp), light cream cheese (3tbsp), pepper (1/4tsp), salt (1/2tsp), chopped onion (1tbsp), lemon juice (2tsp), fresh and soft bread crumbs (1c), ground thyme (1tsp).

Method Of Preparation:-
Take fish in a bowl, season it with ¼ teaspoon of pepper and ½ teaspoon of salt and then sprinkle 1 teaspoon of lemon juice over it. Take a bowl to prepare stuffing, add cream cheese in it and then mix the bread, thyme parsley, onion, celery and 2 teaspoon of lemon juice in it. Mix all these Ingredients properly. Then divide this mixture into 4 parts. Place one part of mixture on each fillet and then roll the fillets to cover the stuffing mixture. Now fry the bacons until they get cooked and then wrap them around the fish fillets. Secure the rolls with toothpicks. Take a baking dish, grease it lightly and then place the rolls of catfish in it. Now place the dish in oven and bake it for 15 to 20 minutes at 350 degrees F until it gets flake easily with fork. When the stuffed fish gets ready then serve it with lemon wedges.
