Codfish With Pickles And Tomatoes Recipe

Ingredients
1. 1.5 kg codfish
2. 3medium dill pickles
3. 2 medium onions
4. 6 tomatoes
5. 1 tbsp vinegar
6. 1cup butter
7. Pepper to taste
8. Salt to taste

Directions

1. Clean the codfish and cut it into 2 pieces. Take a medium sized baking dish and place the cod fish in it. Slice the tomatoes and arrange them in the dish around the cod.

2. Take a bowl put chopped onions, pickles, butter and vinegar in it and mix them well. Pout this over the cod. Place the dish in an oven preheated to 350 F and bake for 10 minutes. Serve hot.

Codfish With Green Peppers Recipe

Ingredients
1. 1/2 kg codfish
2. 2 green peppers
3. 1 cup butter
4. 1 cup flour
5. Salt to taste
6. 1 cup milk

Directions
1. Take water in a sauce pan. Add a little salt to it and bring to boil, cook fish for a few minutes in this water till tender. Remove the bones and cut into small pieces. Take out the fish on a paper towel.

2. Take a saucepan and heat butter in it. To this add flour and cook for about one minute stirring continuously. Now slowly add milk to this, bring to boil and simmer for two minutes, the sauce is ready.

3. Clean the green peppers and dice them. Melt a little butter in a pan and cook for about five to six minutes. Now add the sauce and fish in this. Season with salt. Serve hot.

Boiled Cod With Oyster Recipe

Ingredients
1. 1pound cod fish
2. 1 can oysters
3. 1/4 cup flour
4. 1/2 cup milk
5. few grains Cayenne
6. few grains Mace
7. Salt to taste
8. 1/2 cup butter
9. pepper (to taste)
10. few white cloves

Directions
1. Wash the cod fish and clean it properly, cut into medium size pieces. Take a saucepan, put water in it and add a little salt to it. Also add a few white cloves and pepper. Put the fish in the water and bring to boil, cook on a medium flame for about 20 minutes.

2. Take out the fish and drain water, arrange in a serving dish. To make oyster sauce take the oysters and drain the liquid in a pan, heat on medium flame. Wash the oysters and cook in the liquor till the gill begins to curl, remove oysters from liquor.

3. Now melt butter in a frying pan and add flour while stirring continuously. Add a little salt, cayenne and mace. Now add the oyster liquor and milk to it. Simmer for 5 minutes. The oyster sauce is ready, pour in a serving bowl and serve with the fish cooked above.

Cod Almandine Recipe

Ingredients
1. 1/2 kg cod
2. 2 tbsp almonds
3. Salt to taste
4. 2 taps lemon juice
5. Pepper to taste
6. 2 tbsp butter


Directions

1. Heat the butter in a frying pan. To this molten butter add the silvered almonds and cook till they are light brown in color.

2. Cook the cod in a skillet till it is golden brown in color on both sides. When ready it flakes easily with a fork.

3. Take out the cod in a serving dish and sprinkle salt and pepper on the cooked fish. Now pour lemon juice and sprinkle almonds on it.

Cod Fish In White Sauce Recipe

Ingredients:
Cod fish 250 g, 50 gm ham, 50 gm mushroom, Cooking oil to fry, 1 medium onion, 5cloves garlic, 10 gm parsley for garnishing.
Seasoning:
? ½ cup cream
? Salt to taste
? 1 tsp sugar

Directions:
Chop the garlic, onions and dice the ham and mushrooms. Scale the fish, clean it and drain well. Now rub a little amount of salt on it and keep it aside for a few minutes. Heat 2 tbsp of oil, fry chopped garlic, mushroom, ham and onions till golden brown, add cream and sugar, bring to boil and cook on medium heat till gravy thickens. Now heat oil in a nonstick pan, and fry the fish till cooked. Take out the fish, drain the oil and place the fish slices in a serving plate. Pour the seasoning over fish and garnish with chopped parsley.

Grilled Tandoori Cod Recipe

Ingredients
1. Cod fillets, cut into 1 1/2 chunks (4-6)
2. olive oil (1/4c)
3. ground coriander (2tsp)
4. ground cumin (2tsp)
5. grated fresh ginger (2tsp)
6. minced garlic (4cloves)
7. plain yogurt (1c)
8. salt (1tsp)
9. turmeric (1tsp)
10. red pepper (1tsp)

Method of preparation:-

1. Take a medium size bowl, mix all ingredients besides cod in it. Place the fish pieces inside the bowl and mix them to coat. Cover the bowl and keep it in the refrigerator for about 1 hour to marinate it.

2. Preheat the frill for medium- high heat. Now place the fish pieces in the grill wok and cook it for about 12 minutes.

3. When the fish gets opaque then toss the fish with hot resistant utensils. Again cook the fish for more 5 to 7minutes. Take off the fish from heat and serve it.

Preparation time- 8 minutes.

Cape Cod Fish Chowder Recipe

Ingredients
1. Fresh haddock (1lb)
2. butter or margarine (2tbsp)
3. milk (4c)
4. bay leaf crumbled (1)
5. potatoes diced (4large)
6. chopped celery (1c)
7. sliced onion (2med.)
8. diced salt pork (2oz)
9. freshly ground black pepper (to taste)
10. salt (1tsp)
11. water (2c)

Method of preparation:-

1. Take a saucepan, simmer haddock in 2 cups of water in the pan for about 15 minutes. Drain off and reserve the broth.

2. Take off the skin and the bones from the fish. Now saute the diced salt pork in the large pot until it gets crispy. Take out the salt pork and then saute the onions in the pork fat until they get golden brown.

3. Now add fish, bay leaf, potatoes and celery. Measure the reserved fish broth and enough boiling water to make 3 cups of liquid. Add it to the pot and keep it to simmer for about 30 minutes.

4. Now add milk and butter and again keep it to simmer for about 5 minutes. Season it with salt and pepper and then serve it.
