Creamed Codfish Recipe

Ingredients
1. Heavy cream or cream fraiche (1/2c)
2. cod fish (2 pounds)
3. garlic, pressed (2cloves)
4. olive oil (1c)
5. water
6. lemon juice (2tbsp)
7. fried bread slices
8. black pepper (1/4tsp)
9. salt (1tsp)
10. halved potatoes (3med.)
11. sliced lemon (1)

Method Of Preparation:-
1. Take a pan, place fish in it and cover it with water. Add slices of lemon in it place it over high heat and then keep it to boil. When the foams appear on the surface then cover the pan and turn down the heat to low.

2. Now keep it to simmer for 15 minutes. Drain the fish and keep it warm. In the reserved liquid, add potatoes and cook them for about 30 to 40 minutes until they get cooked. Then drain potatoes in a bowl and mash them and then keep them aside.

3. Remove the skin and bones of the fish. Take a pan, heat ½ cup of oil in it. Take a Pyrex dish, place fish in it and mash it with oil. Then mix mashed potatoes in it to make a smooth paste. Now take rest of the oil and add it into the mixture and again beat the mixture to form smooth paste.

4. Then sprinkle pepper, salt, garlic and lemon juice in it and mix crème fraiche or heavy cream in it. Take double boiler; place the mixture on the top of it. Place the boiler over hot water and stir the mixture until it gets hot.

5. Take a serving dish; make mounds of the codfish mixture and place on the dish. Then decorate it with fried bread. Now creamed codfish is ready to serve.

Garlic Cod Recipe

Ingredients
Finely chopped garlic (5 large cloves), cod fillets (1pound), dash of pepper, olive oil or vegetable oil (1tbsp), butter or margarine (2tbsp), paprika (1/4tsp), onion powder (1/2tsp), lemon juice (1tbsp), salt (1/4tsp), lemon wedges (5).

Method of preparation:-
Take fish fillets and cut them into serving size pieces. Dust pepper and salt on both sides of fish pieces. Take a bowl, mix onion powder, paprika, lemon juice and melted margarine in it. Dip fish in this mixture. Take an ungreased pan of 9*9*2 inches, now place the fish in the pan and then pour the rest of the mixture over it. Now Place the pan uncovered in oven at 350A and cook it for about 25 to 30 minutes until the fish gets flake easily with fork. Take a pan, place it over medium heat. Heat 2 tablespoons of oil and margarine in it and then add garlic in it and cook it until it changes to brown color and then put it over the fish. Now decorate the fish with chopped parsley and serve it with lemon wedges.

Poached Cod Fines Herbes Recipe

Ingredients
1. Milk or water (1 1/4c)
2. fresh cod fillets (2lb or 1kg)
3. fresh dill (2tbsp or 30ml)
4. fresh parsley (1/4c)
5. minced onion (1medium)
6. lemon juice (1tbsp)
7. flour (2tbsp)
8. unpeeled lemon (3slices)
9. butter (2tbsp)
10. peppercorns (4)
11. salt (1tsp)
12. bay leaf (1)

Method Of Preparation:-
1. Take a glass dish of 8*12-inch, place the fish fillets in single layer in it. Then pour milk or water over the fish. Cover the fish with bay leaf, lemon slices, onion, peppercorns and salt.

2. Now place the glass dish, uncovered in microwave at high temperature and cook the fish for about 3 minutes. Take out the dish from microwave, tilt it and then pour the cooking juice with a wooden spoon over the fish.

3. Again place it in microwave at high and cook it again for about 4 minutes. Take a warm platter to keep the fish warm and then transfer the fish in it.

4. Take a small bowl, mix flour and butter in it and then put this mixture into the fish juices and mix it properly. Then add parsley, dill, lemon juice in it.

5. Place it in microwave at high and cook it for about 2 minutes until the sauce becomes creamy. Now pour the sauce over the fish in warm platter and serve it.

Spicy Fried Codfish Recipe

Ingredients
1. Codfish fillets (1 1/2lb)
2. vegetable oil (for frying)
3. crushed garlic (3 small cloves)
4. ground or crushed cilantro (1/2tsp)
5. ground cumin (1tsp)
6. fresh lemon juice (1tbsp)
7. crushed red pepper flakes (3/4tsp)
8. ground star anise (1tsp)
9. salt (to taste)

Method Of Preparation:-
1. Take cod fish, first take off its skin and then remove bones from it. Now wash it and use a paper towel to pat dry it. Then cut fish into large pieces and keep it aside in a bowl.

2. Take a bowl; add pepper flakes, star anise, garlic, cilantro, cumin, salt and lemon juice in it. Mix all the ingredients well to make smooth paste. Then put this paste into the bowl of fish pieces and mix it gently with fish pieces to coat them.

3. Cover the bowl and keep it in the refrigerator to marinate for about 1 hour. Then take out fish from the bowl and keep it on paper towel to drain some marinade.

4. Take a large frying pan and place it over heat. Add oil in the pan and heat it to 350 degrees.

5. Put a few pieces of fish in hot oil and fry them for about 2 to 3 minutes until the fish changes to golden brown. Then take out fish pieces from oil and serve them with green salad or cooked rice.

Codfish With Couscous Recipe

Ingredients
1. Codfish (1 1/2lb)
2. chopped pimento (3tbsp)
3. chick peas, drained (1can about 16 oz)
4. couscous (1c)
5. salt (1/2tsp)
6. orange rind (1tsp)
7. water (1 1/4c)
8. ground ginger (1/4tsp)
9. ground coriander (1/4tsp)
10. celery seeds (1/4tsp)
11. black pepper (1/2tsp)
12. salt (1/2tsp)
13. paprika (1/2tsp)
14. ground cumin (1/2tsp)
15. lemon juice of (1 lemon)
16. olive oil (1 1/2tsp)
17. prepared mustard (1 1/2tsp)

Method Of Preparation:-

1. Take a large bowl; add mustard, olive oil, celery seed, ginger coriander, lemon juice, pepper, salt, paprika and cumin in it. Mix all the ingredients well and then rub this mixture on both sides of the codfish.

2. Take an oven proof dish; place the cod fish in it. Now place the dish in oven and bake the fish for about 15 minutes at 375 degrees F.

3. Meanwhile, take a pan, add orange rind, salt and water in it and keep it to boil. Then mix couscous in it. Cover the pan and keep it aside for about 5 minutes.

4. Then add pimento and chick peas in it. Now take a serving dish, arrange couscous on it and place cod on the top of it and then put cooking juice with spoon over the codfish. Now the dish is ready to serve.

Codfish Salad Recipe

Ingredients
1. Salted codfish (1 1/2lbs)
2. hard boiled eggs, shelled cooked and sliced (3)
3. extra virgin olive oil (1/2c)
4. red wine vinegar (1/4c)
5. thickly sliced head lettuce (1/2 optional)
6. chopped tomatoes (2 med.)
7. red onion, peeled and sliced into rings (1large)
8. potatoes, boiled cooled and chopped (3 to 4)
9. freshly ground black pepper and salt (to taste)

Method Of Preparation:-
1. Take codfish, wash it, put it in a saucepan and add water in it. Keep it to boil and then simmer it for about 5 minutes or until the fish becomes soft. Now take off the skin and remove the bones from the fish and then break it into small pieces.

2. Take another bowl, mix codfish, potatoes, onions, lettuce and tomatoes in it. Take a small bowl, mix vinegar, olive oil, pepper and salt in it.

3. Then pour some of it over the mixture of codfish and then mix it until the salad gets coated well. Now add slices of boiled eggs in salad and mix them gently. Now pour rest of the vinegar mixture over the eggs in the salad. Now the codfish salad is ready to serve.

Cod With Lentils Recipe

Ingredients
1. Cod fillets, cut into 4 pieces (1 ¼ pounds)
2. lentils, picked through and rinsed (1c)
3. fat free, low sodium vegetable broth (1c)
4. diced tomatoes (1 can about 14.5 ounce)
5. freshly chopped parsley (1/3c)
6. roughly chopped onion (1c)
7. finely chopped garlic (2cloves)
8. olive oil (2tsp)

Method Of Preparation:-
1. Take a large frying pan, place it over medium heat and heat oil in it and then saute onions and garlic in it until they become soft and fragrant. Then add lentils, broth and tomatoes in it.

2. Keep it to boil then turn down the heat to low and keep it to simmer for about 20 to 25 minutes until the lentils become soft. Now add fish and parsley in it, cover the pan and keep the fish to cook for about 8 to 10 minutes until it gets flake easily with fork.

3. Then take off the pan from heat. Transfer the fish to serving bowl and serve it with cooked rice.
