Bacalhau Do Ceu (Heavenly Cod) Recipe
Ingredients
Cod (2lbs), olive oil (1/4c), sliced onions (2), milk (1/4c), butter (2tbsp), potatoes, boiled in jackets (2lbs).
For Bechamel Sauce:- Hot chicken stock (1 1/2c), white pepper (1/8tsp), flour (1/4c), butter (1/4c), scalded milk (1c), egg yolk, beaten (1 option), hard cooked eggs, sliced (8), tomato paste (2tbsp option) and salt (1/2tsp).
Method Of Preparation:-
Take boiled potatoes, peel them and then cut ¾ of them into slices and keep them aside. Mash the rest of the potatoes with milk and butter and keep them aside. Take a frying pan of 12 inch, heat oil in it and then cook onions in it until they get yellow color. Take codfish, cut it into small pieces and add it into the pan. Cook it over low heat for about 30 minutes.
For Bechamel Sauce:- Take a pan, place it over low heat. Melt butter in the pan and then add flour, white pepper and salt in it. Then gently add scalded milk and chicken stock in it and then cook it by stirring regularly for about 3 to 5 minutes. Add tomato paste in it to give color and flavor to the sauce. Add beaten egg yolk to give yellow color to sauce. Now heat the oven to 350 degrees F. Take a casserole of 2 quart, grease it and place codfish in layer, then onions, then potatoes layer, eggs and then spread bechamel sauce over it. Keep on spreading the layers until all the Ingredients get used. Spread mashed potatoes on the top and then brush it with egg yolk. Now place the casserole in oven and bake it at 350 degrees F. for about 45 minutes until the potatoes get golden brown color.

Roasted Cod With Cherry Tomatoes, Basil And Mozzarella Recipe
Ingredients
Cod fillets, skinned and pin boned (2 about 8 ounce), fresh basil leaves, picked from stem (1 handful), red and cherry tomatoes, halved (2handful), freshly ground black pepper and sea salt, olive oil, grated parmesan cheese (1handful), finely sliced buffalo mozzarella cheese (1 ball).
Method Of Preparation:-
First heat the oven to 425 degrees F. Take a dish of earthenware or a greased roasting pan. Place cod fillets in roasting pan and sprinkle olive oil over it and then season it. Then place basil, tomatoes and slices of mozzarella on the top of the cod fillets. Sprinkle parmesan cheese and some olive oil over it. Now place the roasting pan in oven and bake it at 425 degrees F for about 15 to 20 minutes until the fish gets golden color. Then take out the pan from the oven and serve cod in a serving dish.

Cod Baked With Green Bell Pepper And Tomatoes Recipe
Ingredients
Cod fillets, washed and patted dry (1 ¼ pounds), diced tomatoes, drained (1can about 14.5 ounce), green bell pepper, seeded and julienned (1), minced white onion (1/4c), garlic, minced (2cloves), olive oil (1tbsp).
Method Of Preparation:-
First heat the oven to 425 degrees F. Take a large frying pan, place it over standard heat and then heat olive oil in it. Add onion and garlic in it and saute them for about 2 minutes. Then put tomatoes in it and cook them for about 12 minutes until the sauce becomes thick. Take fish fillets, trim them, take off the skin and remove the bones with pliers. Take a baking dish of 3 quart, coat its bottom with cooking spray and then place fish fillets on it in a layer. Spread tomato sauce over the fish and then spread bell pepper on the top. Cover the dish and place it in the preheated oven and bake it at 425 degrees F for about 15 minutes until the fish gets flake easily with fork. When the fish gets cooked then takes it out from the oven and serves it hot.

Fresh Codfish Daudet Recipe
Ingredients
Codfish fillets (2 pounds), bay leaves (2), boiling potatoes (1 pound), milk (2c), garlic, peeled (5 cloves), nicoise olives (2tbsp), freshly ground white pepper (to taste), salt (to taste), virgin olive oil (2c), fresh thyme (3 sprigs) or dried thyme (1/8tsp) and water (2c).
Method Of Preparation:-
Take a pot of 4 quart, mix fish, bay leaves, thyme, garlic, water, milk in it. Keep this mixture to simmer for about 12 minutes. Take potatoes; boil them in salted water until they become soft. Then drain the potatoes, peel them and then mash them. Now take out the fish from the broth and mix it with mashed potatoes. To make the mixture light, add cooking liquid in it. Mix olive oil in mixture in additions and mix it well after each addition. When all oil gets mixed then season the mixture with pepper and salt. Then take serving bowls or a platter, place the mixture on it and serve garnish it with olives and then serve it.

Codfish Omelet Recipe
Ingredients
Shredded codfish, scalded and drained (1c), mashed potatoes (2c), corn oil (1tbsp), pepper (to taste), eggs, separated (2).
Method Of Preparation:-
Take a bowl, add codfish and mashed potatoes in it and mix them well. Now mix the lightly beaten egg yolks in it and then mix egg whites in it. Take a frying pan of medium size, place it over heat and then heat corn oil in it. Now spread the codfish mixture in the pan, make thin layer of this mixture and cook it until it gets brown color. Then take off the frying pan from heat and place the codfish omelet in a platter and then decorate it with parsley. Serve it with Spanish sauce or fried tomatoes.
Codfish Soup Recipe
Ingredients
Salt codfish, soaked (1/2 pound), sliced onion (1small), celery (1 small piece), thyme (small sprig), dry white wine (2tbsp), water (1c), olive oil (4 1/2tbsp), parsley stems (small bunch), bay leaf (1), tomatoes, skinned with seeds removed and cut into slices (2), potato, peeled and cut into slices (1 med.), salt and pepper (to taste).
Method Of Preparation:-
First take codfish, cut it into squares of big size. Take a saucepan, place it over low heat. Put 4 tablespoons of olive oil and then add sliced onions in the pan and cook them for a few seconds. Then add thyme, bay leaf, celery and parsley steams in it. Cook them for few seconds and then add potato, tomatoes, water and white wine in the pan and cook them. When the potato gets half cooked and then add codfish and ½ tablespoon of olive oil in it. Now take out the parsley stems from it and then add ½ tablespoon of chopped parsley. Then add pepper and salt, if required in it. When the fish and vegetables get cooked properly then pour the soup in soup bowls and put fried bread over it and then serve it hot.
Curried Codfish Recipe
Ingredients
Codfish (2lbs), flour (1tbsp), onion (1med. Size), white stock (2c), vegetable shortening (1/4c), chopped coconut (2tbsp), lemon juice (1tbsp), curry powder (2tsp), plain boiled rice (2c), pepper, red pepper and salt (to taste).
Method Of Preparation:-
Take cod, wash and dry it and then cut it into pieces of 2” squares. Take a saucepan, place it over heat and then melt shortening in it. Put cod pieces in the pan and fry them and then take them out and keep them aside. Now put the sliced onion, curry powder and flour in the saucepan and then fry them in shortening for about 10 minutes by stirring regularly. Then add coconut and white stock in it and mix it until it gets boil and then keep it to simmer for about 20 minutes. Now strain the mixture of the pan and then again put it in the pan, add seasoning according to taste and lemon juice in it and then keep it to boil. Now put fish in it, cover the pan closely and then cook it for half an hour. Stir the fish irregularly while cooking to prevent it sticking to the bottom of the pan. Now transfer the fish into the hot plate and serve it with rice.
