Manhattan- Style Clam Chowder

Ingredients
1. Diced, sliced bacon (5to 6)
2. minced clam with juice (2 to 3cans)
3. diced potatoes (3med.)
4. dried thyme (1tsp)
5. bay leaf (1)
6. black pepper
7. salt (1 1/2tsp)
8. tomatoes, broken up, undrained (1large can)
9. fresh parsley (1tbsp)
10. thinly sliced celery leaves (3ribs)
11. thinly sliced carrots (2)
12. chopped onion (1c)
13. flour blended with 1 tbsp of melted butter (1tbsp)
14. clam juice (1bottle)

Method of preparation:-

1. Take diced bacons, fry them until get crispy. Drain them and place in 3 ½ quarter or larger slow cooker. Now add the remaining ingredients in the slow cooker. Mix them to blend.

2. Cover the cooker, reduce the heat to low and keep it to cook for about 8 to 10 hours. To make it thicker add the flour butter mixture in it during the last 30 minutes. When clam chowder gets ready then serve it hot.

Tuna Chowder With Spinach And Cheese Recipe

Ingredients
1. White tuna in water (2pkg. about 7 ounces each)
2. chicken broth (1 1/2c)
3. flour (4tbsp)
4. diced onion (1c)
5. diced celery (1c)
6. milk (3 1/2c)
7. diced russed potatoes (1large)
8. coarsely chopped spinach (1c)
9. finely shredded mild cheddar cheese (1c)
10. salt (1tsp)
11. dried leaf thyme (1/4tsp)
12. dash ground nutmeg
13. freshly ground black pepper (1/8tsp)
14. dry sherry (1tbsp optional)
15. butter (4tbsp)

Method of preparation:-
1. Take a large sauce pan, place it over medium low heat. Heat butter in it and then add celery and onions in the pan and cook by stirring until the vegetables get tender.

2. Add flour and mix chicken broth in it and then add potatoes and keep to simmer until the potatoes get tender by stirring occasionally.

3. Add milk, spinach, tuna, black pepper, nutmeg, thyme, salt, and the cheese.

4. Cook it over low heat until the cheese gets melted and the spinach get wilted. Now add sherry in the pan. When it gets ready then serve it.

Salmon Corn Chowder Recipe

Ingredients
1. Salmon (1can)
2. evaporated milk (1can)
3. black pepper (1/4tsp)
4. thyme (1/2tsp)
5. chicken broth (2c)
6. diced carrots (1c)
7. diced potatoes (1c)
8. minced garlic (1clove)
9. chopped celery (1/2c)
10. chopped onions (1/2c)
11. butter (2tbsp)
12. minced parsley (1 to 2 tbsp)
13. frozen corn Kernel, thawed (1pkg.)

Method of preparation:-
1. Take salmon, drain and flake it. Take a frying pan, melt butter in it and then saute onions, garlic and celery in the pan until they get soften. Add the carrots, potatoes, reserved salmon liquid, chicken broth, thyme and black pepper.

2. Cover the pan and then keep it to simmer for about 20 to 25 minutes or until the vegetables get nearly tender. Now add flaked salmon, corn and evaporated milk and then heat it. Sprinkle the little fresh minced parsley over it to garnish it.

Bermuda Fish Chowder Recipe

Ingredients
1. Chopped leeks (3tbsp)
2. olive oil (2tbsp)
3. minced garlic (1tbsp)
4. diced yellow onions (1/2c)
5. thinly sliced celery (2tbsp)
6. diced red bell pepper (1/2)
7. cod fish (1/2lb)
8. cornstarch (1/2tbsp)
9. cold water (1 1/2c)
10. minced fresh basil (1tbsp)
11. chopped parsley (2tbsp)
12. Tabasco sauce (1/4tsp)
13. bay leaves (2)
14. clam broth (1can)
15. chopped tomatoes with juice (1can)
16. red hot pepper (1/4tsp)
17. diced carrots (1/4c)
18. diced green bell pepper (1/2)

Method of preparation:-

1. Take a pan, saute carrots, leeks, bell peppers, red hot pepper, onion and celery in the pan until they get soft but not brown. Add tomatoes, garlic, clam broth, bay leaves, Tabasco sauce, basil leaves and parsley in the pan. Keep the mixture to slow simmer.

2. Mix corn starch and 1 1/2cup of cold water. Mix them until get smooth. Stir the corn starch mixture slowly in the hot chowder. Keep on to simmer on low heat for about 30 minutes.

3. Add the raw cod fish. Cook for 10 to 15 minutes or until the cod fish gets cooked. It is nice to prepare the chowder in advance as it tastes better the next day.

Ingredients
1. Cod fish fillets, cut into 1 inch cubes (1 1/2pounds)
2. butter (2tbsp)
3. salt and pepper (to taste)
4. evaporated milk (1can)
5. peeled and diced potatoes (5med.)
6. chopped onion (1large)
7. sliced bacon (1pound)
8. whole milk (1/2c)

Method of preparation:-

1. Take large stock pot, place bacon strips in it and then place it over medium high heat. Cook the bacon until it get crispy and then remove them on paper towel to drain.

2. Drain the grease from the pot, reserving about 1 tablespoon. Set the heat to medium and then fry the onions in the reserved bacon grease for about 5 minutes until get tender. Now add potatoes and fill the pot with enough water to cover them.

3. Keep it to boil and then cook until the potatoes get almost tender for about 5 minutes. Add fish pieces, butter, whole milk, evaporated milk. Keep it to boil and then simmer for 30 minutes over low heat.

4. Season it with salt and pepper according to taste. Pour it in the bowls and add the crumbled bacon pieces on the top.

1. Fresh and frozen cod fillets, cut into large chunks (2 pounds)
2. chopped fresh parsley (for garnishing)
3. pepper (2tsp)
4. evaporated milk (2cans)
5. milk (2c)
6. lemon juice (3tbsp)
7. water (4c)
8. butter or margarine (1/2c)
9. chopped onion (1large)
10. cubed peeled potatoes (6c)
11. salt (2 1/2tsp)

Method of preparation:-

1. Take a Dutch oven or soup kettle; melt butter in it and then saute onion in the melted butter. Add water and then keep it to boil. Now add potatoes and cook them for about 10 minutes.

2. Add fish and lemon juice. Reduce the heat to low and keep it to simmer for about 10 minutes. Now add milk, evaporated milk, pepper and salt in it and cook it for few minutes.

3. When it gets ready then garnish it with parsley and serve it piping hot.

1. Haddock or cod fillets, fresh or frozen (1 1/2pounds)
2. salt (1/2tsp)
3. sweet paprika (1/4tsp)
4. diced carrots (3/4c)
5. butter (2tbsp)
6. finely chopped onion (1small)
7. diced peeled potatoes (1 1/2c)
8. dash ground black pepper
9. chicken broth (1c)
10. milk (2c)
11. flour (2tbsp)

Method of preparation:-
1. Take fish fillets, cut them into small pieces and then put them in large saucepan or kettle with chicken broth. Add potatoes, carrots and seasoning.

2. Cover the pan and cook for about 15 minutes or until the vegetables get tender. Take medium size saucepan, heat butter in it and then saute onions in the pan until get tender. Mix the flour in it until get well blended.

3. Gradually add milk and stir it constantly. Keep on stirring until it gets thickened. Add the cooked vegetable and fish, cook it for about 5 to 10 minutes by stirring it frequently. When it gets ready then serve it.
