Hearty Halibut Chowder Recipe

Ingredients
1. Halibut cut into 1 inch cubes (2pounds)
2. heavy cream (1/2c)
3. red pepper flakes (1 pinch or to taste)
4. shredded cheddar cheese (1/2c)
5. salt and pepper (to taste)
6. milk (1 1/2c)
7. shredded carrots (2large)
8. stewed tomatoes, diced (1can)
9. chicken stock (6c)
10. minced garlic (2cloves)
11. peeled and cubed potatoes (2large)
12. finely diced onion (1large)
13. unsalted butter (1tbsp)

Method of preparation:-
1. Take a large pot, melt the butter in it over medium heat. Add onion in it and cook them for about 5 minutes or until they get soften and translucent.

2. Add potatoes and garlic and keep on cooking until the potatoes get soften slightly about 10 minutes. Add chicken stock, carrots and tomatoes. Keep it to boil and then reduce the heat to medium low.

3. Cover the pot and keep it to simmer for 10 minutes. Add milk and cream and season it according to taste with salt and pepper. Then add halibut and keep on simmering uncovered until the halibut gets flaky for about 10 minutes.

4. Gently mix the cheddar cheese and red pepper flakes until the cheese get melted. When it gets ready then serve it immediately.

Tuna Corn Chowder Recipe

Ingredients
1. Corn Kernel, fresh or frozen and thawed, divided (2 1/2c)
2. tuna packed in vegetable oil (2cans)
3. half and half (2c)
4. ground black pepper (1/4tsp)
5. salt (1tsp)
6. chicken broth (4c)
7. peeled and diced potatoes (2med.)
8. chopped celery (3/4c)
9. chopped green onion (1/4c)
10. chopped onion (1/2c)
11. butter (3tbsp)
12. chopped fresh parsley (1 to 2 tbsp)

Method of preparation:-
1. Make the puree of about 2 cups of corn in the blender. Take a large stock pot or Dutch oven, melt the butter in it. Add chopped onion and celery, saute them until they get tender.

2. Add green onion and cook them for another few minutes. Now add pureed corn, remaining corn Kernels, chicken broth, potatoes, salt and pepper.

3. Keep them to boil, Now reduce the heat to low, cover the pot and keep it to simmer for about 15 minutes or until the potatoes get tender. Mix half and half, tuna and chopped parsley.

4. Cook it for about 5 minutes longer or until it gets heated. When the tuna corn chowder gets ready then serve it.

Tuna Cheese Chowder Recipe

Ingredients
1. Tuna drained and flaked (1can)
2. cream style corn (1small can)
3. Tabasco sauce (few drops)
4. chopped green onion (1/2, for garnish)
5. parsley (for garnish
6. Shredded sharp Cheddar cheese (3c)
7. milk (2c)
8. flour (1/4c)
9. butter or margarine (1/4c)
10. chopped celery (1/2c)
11. diced carrot (1/2c)
12. water (2c)
13. salt (to taste)
14. 2 medium potatoes, cut in small cubes

Method of preparation:-

1. Take a large saucepan, put water and about 1 teaspoon of salt in it. Add chopped onion, diced potatoes, carrot and celery in it. Cover the pan and keep it to boil.

2. Reduce the heat to low and keep it to simmer for about 10 minutes. Now take off the pan from the heat and keep it aside.

3. Take a small stock pot, melt butter in it. Blend the flour and mix it until it gets smooth. Gradually add milk and cook it by stirring it constantly. Keep on cooking and stirring until it gets smooth and thickened.

4. Add cheese and mix it until it gets melted. Add the cooked vegetable with their liquid, corn, tuna and Tabasco. Now add salt to taste. Garnish it with green onion and parsley.

Hearty Tuna Chowder Recipe

Ingredients
1. Tuna in water, undrained (1can or package)
2. vegetable broth or chicken broth (1c)
3. flour (3tbsp)
4. cooked bacon, crumbled (3slices)
5. potatoes cut in small pieces (2med.)
6. chopped celery (1/4c)
7. chopped onion (1/4c)
8. chopped green pepper (1/4c)
9. butter or margarine (2tbsp)
10. whole Kernel corn, drained (1can)
11. shredded cheddar cheese (1c)
12. salt and pepper (to taste)
13. evaporated milk or half and half (1c)

Method of preparation:-
1. Take a non stick frying pan, place it over medium low heat and then melt butter or margarine in it. Saute the celery, green pepper, onion and potatoes for about 10 minutes.

2. Now add flour to the vegetable mixture and cook for another 3 minutes. Add bacon, tuna and vegetable broth. Mix them until they get smooth and thickened. Add corn and then transfer the mixture to the Crockpot.

3. Cover it and cook on low heat for 4 hours. Add evaporated milk, cheddar cheese, salt and pepper to taste. Now turn the heat to high and cook for another 20 to 30 minutes. When the tuna chowder gets ready then serves it.

Trout Chowder Recipe

Ingredients
1. Skinless boneless fish fillets (1pound)
2. garlic powder (1/4tsp)
3. Monterey jack cheese, cubed or shredded (1c)
4. cubed and shredded cheddar cheese (1c)
5. frozen broccoli cuts, thawed (1package)
6. paprika (1/2tsp)
7. Ranch salad dressing (1c)
8. milk (2c)
9. butter or margarine (1tbsp)
10. chopped onion (1med.)

Method of preparation:-
1. Take a frying pan, melt butter in it and then saute onions in the melted butter until they get tender.

2. Take a slow cooker; transfer the saute red onion in it. Add milk, fish, dressing, cheeses and broccoli and garlic powder in it.

3. Cover the cooker and place it on high heat and then cook it for about 1 1/2 to 2 hours or until the soup gets bubbly and the fish gets flake easily with a fork. Sprinkle the soup with paprika according to your desire.

Seafood Chowder Recipe

Ingredients
1. Sliced bacon, diced (1/2pound)
2. water (4c)
3. diced peeled potatoes (6c)
4. chopped onion (2med.)
5. bay or sea scallops, quartered (1pound)
6. fresh or frozen lobster, cut into 1 inch pieces (1pound)
7. uncooked medium shrimp, peeled and deveined (1pound)
8. cod or haddock cut into 1 inch pieces (1pound)
9. evaporated milk (1can)
10. milk (2quarters)
11. curry powder (1/2tsp)
12. minced fresh parsley (4tsp)
13. salt (4tsp)
14. melted butter (1/2)

Method of preparation:-
1. Take a large stockpot, cook bacon in it over medium heat until it gets crispy. Take out the bacon from the pot with slotted spoon to the paper towel and reserve the drippings.

2. Saute onions in the drippings until they get tender. Add potatoes and water and then keep it to boil. Cook for 10 minutes. Now add the scallops, shrimps, lobster, and cod or haddock.

3. Cook them for 10 minutes or until the scallops get opaque, shrimps turn pink and fish gets flake easily with fork.

4. Add butter, parsley, salt and curry powder. Add milk and evaporated milk and heat it well. Garnish it with bacon and then serve it.

Cape Cod Fish Chowder Recipe

Ingredients
1. Fresh haddock (1lb)
2. butter or margarine (2tbsp)
3. milk (4c)
4. bay leaf crumbled (1)
5. potatoes diced (4large)
6. chopped celery (1c)
7. sliced onion (2med.)
8. diced salt pork (2oz)
9. freshly ground black pepper (to taste)
10. salt (1tsp)
11. water (2c)

Method of preparation:-

1. Take a saucepan, simmer haddock in 2 cups of water in the pan for about 15 minutes. Drain off and reserve the broth.

2. Take off the skin and the bones from the fish. Now saute the diced salt pork in the large pot until it gets crispy. Take out the salt pork and then saute the onions in the pork fat until they get golden brown.

3. Now add fish, bay leaf, potatoes and celery. Measure the reserved fish broth and enough boiling water to make 3 cups of liquid. Add it to the pot and keep it to simmer for about 30 minutes.

4. Now add milk and butter and again keep it to simmer for about 5 minutes. Season it with salt and pepper and then serve it.
