Grilled (Broiled) Chicken Recipe
Ingredients
Boned chicken thighs (8part), French bread (12slices), green and red pesto sauce (1/2c), passata, sieved tomatoes (2/3c), olive oil for brushing, freshly grated parmesan cheese (1c), pine nuts or flaked almonds (1/2) and salad leaves to serve.
Method of preparation:-
Take a flameproof dish. Place the chicken in single layer on it and brush the chicken with light oil. Now place this dish in preheated grill or broiler for about 15 minutes or until it gets golden brown. Turn the sides of the chicken during grilling it. Test it if it is cooked or not. When it is cooked, then the juice will turn clear not pink. Take a small pan. Add excess fat in it and then warm the half of the pesto sauce and passata (sieved tomatoes) in it. Now pour it over the chicken. Again grill the chicken for few minutes until it gets coated. Take French bread, spread pesto over the slices of bread. Now place the bread over the chicken and then sprinkle the parmesan cheese over it and spread the pine nuts over the cheese. Again grill it for 2 to 3 minutes or until it gets brown and bubbling and then serve it with salad leaves.

Macaroni Grill Foccacia Recipe
Ingredients
Unsifted all purpose flour (3/4c), unsifted semolina flour (3/4c), quick rising dry yeast (1 1/2tsp), olive oil (9tsp), fresh rosemary leaves (1tsp), salt divided (1/2tsp) and hot water (1 1/2c).
Method of preparation:-
Take a cake pan. Pour and spread olive oil in it. Spread it properly to cover the bottom and sides. Take a bowl of mixer. Put all purpose flour, semolina flour, 2 tablespoon of olive oil, 1/4teaspoonof salt and yeast in it. Mix all these Ingredients with hand and then blend on medium speed. Reduce the speed of blender and then add hot milk again blend on medium speed for about 5 minutes to form dough. Now sprinkle the flour on cake pan. Take out the dough from the bowl of mixer and spread out in the cake pan. Cover the pan with clean towel and keep it for 30 minutes. Now heat the oven to 400 degrees. Take off the towel from the pan and then brush the dough with olive oil. Sprinkle rosemary and salt to top the dough. Place the pan in preheated oven and bake it for about 20 minutes. Then out the loaves from oven and then drizzle with remaining oil.

Grilled Italian Style Burgers Recipe
Ingredients
Ground beef (1pound), finely chopped red onions (1small), finely chopped garlic (1small), chopped fresh parsley (1/4c0, liquid smoke (1tsp), egg (1), seasoned bread crumb (1/2c), hot and mild Italian sausage removed from casing (1/2pound) and freshly grated Romano cheese (1/4c).
For Topping:- Thin sliced red onion (1small0, thin sliced beef steak tomato (1small), roasted red pepper (1jar), thin sliced bread (6small, fresh basil leaves (10) and provolone cheese (6slice).
Method of preparation:-
Take a medium size bowl. Mix all the Ingredients of hamburger in it. Take patties and shape it in burger shape. Place these patties on grill for about 10 minutes. Turn the side and again grill it for 10 minutes. Spread provolone cheese for topping and grill it for about 1 minute until it gets melted. Take off the burgers and toast the bread face side down for about 1 minute. Top it with sliced tomatoes, roasted red pepper, fresh basil sliced onion and then serve it.

Grilled Marinated Swordfish Recipe
Ingredients:
4 swordfish steaks, 1tbsp lemon juice, 2 tbsp olive oil, 2 tbsp soy sauce, ¼ cup white wine,1 tbsp poultry seasoning, 4 cloves garlic, Salt to taste, Pepper to taste,1 Lemon ,Parsley.
Directions:
Take a large bowl. Add crushed garlic, white wine, 1 tbsp lemon juice, 2 tbsp soy sauce, seasoning, salt and pepper. Mix these entire well. Now marinate the fish in this marinade for around one hour in a refrigerator.Heat an outdoor grill. And apply oil to the grate. Cook the steaks on the grill for about 7 minutes on both sides. Serve hot, garnished with lemon slices and chopped parsley.
Grilled Swordfish Recipe
Ingredients:
4 swordfish steaks, 2 ripe mangoes, 5 cherry tomatoes, 8 kumquats, 1can baby spinach, 1 cup extra virgin olive oil.
Directions
Peel the mangoes and slice them into medium sized pieces. Slice the tomatoes lengthwise and dice the kumquats. Heat an outdoor grill to high temperature. Apply olive oil with a brush on both sides of fish steaks and mangoes. Cook the steaks for about 8 minutes on both sides. Place mangoes slices on the steaks and cook for 5 more minutes. Take a bowl, put spinach, sliced tomatoes and kumquats. To these add one tbsp olive oil and mix all well. Divide into four parts and transfer to serving dishes. Place the cooked steaks and mangoes over the salad and serve.
Grilled Catfish With Salsa Recipe
Ingredients:
4 catfish fillets, 2 medium onions, 3 medium tomatoes, 2 medium jalapeno peppers, 2 tbsp white wine vinegar, ½ tsp garlic salt, Salt to taste and Pepper to taste.
Directions:
Dice the onions, tomatoes and jalapeno peppers. To prepare the salsa, take a large bowl in this bowl put the tomatoes, onion, jalapeno peppers, vinegar and salt. Mix well. Keep at room temperature for about half an hour. Then refrigerate it. Pour garlic salt and peppers on the fish steaks. Heat an outside grill at high temperature. Apply oil to the grill and cook the fish on both sides till it flakes easily. Remove from grill and transfer to serving plate. Pour the salsa prepared above on it and serve hot.
Grilled Tilapia With Mango Salsa Recipe
Ingredients
Tilapia fillets (2), peeled, pitted and diced ripe mango (1large), chopped fresh cilantro (1tbsp), minced red onion (2tbsp), diced red bell pepper (1/2), seeded and minced jalapeno pepper (1), lime juice (2tbsp), lemon juice (1tbsp), salt and pepper (to taste), extra virgin olive oil (1/3c), minced fresh parsley (1tbsp), ground black pepper (1tsp), minced garlic (1clove), dried basil (1tsp).
Method of preparation:-
Take a bowl, mix together the extra virgin olive oil, parsley, 1tablespoon of lemon juice, 1/2 teaspoon of salt, basil, garlic and 1 teaspoon of pepper in it. Mix them properly and then pour it into the resealable plastic bag. Add the tilapia fillets and coat them with the marinade, squeeze out the excess air and seal the bag. Keep it in the refrigerator to marinate for about 1 hour. Take a bowl, mix mango, red onion, red bell pepper, jalapeno pepper and cilantro in the bowl to make the mango salsa. Add the 1 tablespoon of lemon juice, lime juice and then toss it well. Season it with salt and pepper to taste and then keep it in the refrigerator until it is ready to serve. Preheat an outdoor grill for medium-high heat and lightly oil it. Take out the tilapia from the marinade. Now grill the fillets until the fish is no longer translucent in the center and flakes it easily with fork. Grill for about 3 to 4 minutes from each side. Now serve it with mango salsa.
