Grilled Jamaican Jerk Tilapia Packets Recipe

Ingredients
Tilapia fillets (4 about 6 ounces), julienned, red or orange bell pepper (1c), olive oil (3tbsp), chopped fresh cilantro (3tbsp), minced garlic (3cloves), seeded and chopped poblano peppers (2), chopped white onion (1c), aluminum foil (4large pieces), Jerk seasoning (3tbsp), salt and black pepper (to taste), fresh lemon juice (2tbsp).

Method of preparation:-
First heat grills on medium high heat. Take pieces of foil and then place one piece of tilapia on each piece of foil. Take a small bowl, mix olive oil, garlic, cilantro, lemon juice and jerk seasoning in the bowl. Apply this mixture on both sides of the fish. Place equal portion of bell pepper, onion and poblano on each piece of fish. Now season it lightly with salt and pepper. Crimp the edges of the foil over and then seal the packets. Place the packets on grill and cook them for 10 minutes. Turn and cook for more ten minutes. When the fish gets opaque and vegetables get tender then remove the packets from the heat. Keep the packets for about 5 minutes before opening.

Preparation time – 12 minutes.

Red Pepper And Halibut Kebabs Recipe

Ingredients
Halibut steaks, cut into 1 inch cubes (1 1/2pounds), olive oil (4tbsp), sugar (2tbsp), finely chopped fresh cilantro (3tbsp), olive oil (4tbsp), fresh lime juice (1/2c), red onion, cut into 1 inch squares (1large), bell pepper, cut into 1 inch squares (1large), minced Serrano pepper (1 1/2tsp).

Method of preparation:-
Take a small bowl, mix 2 tablespoon of olive oil, lime juice, cilantro, sugar and pepper in it. Mix it properly until the sugar gets completely dissolved. Keep it aside for about 1 hour to blend the flavors. Preheat the grill, take a metal skewer and then thread the halibut pieces and vegetables alternating in it. Brush the kebabs with remaining 2 tablespoons of olive oil and then place the kebabs on the hot grill. Grill it from each side for about 1 ½ minutes or about 6 minutes. The halibut should be opaque and flaky. Take it off from the grill and then serve it.

Grilled Bourbon Tuna Steaks Recipe

Ingredients
Tuna steaks, about 1 inch (6), black pepper (1/2tsp), salt (1/2tsp), chili sauce (1tsp), minced garlic (2cloves), lime juice (2tsp), grated fresh ginger (2tsp), honey (2tbsp).

Method of preparation:-
Take a small bowl, mix all the Ingredients in it except tuna. Preheat the grill for medium high heat. Baste the tuna steaks well with sauce, place the fish on grill and keep it to cook for about 5 minutes. Now turn the steaks and baste again and continue to cook for 5 minutes. Remove the steaks from the heat and serve them.

Preparation time – 10 minutes.

Garlic Halibut Steaks Recipe

Ingredients
Halibut steaks (4 about 6 inches each), black pepper (2tsp), dry basil (2tsp), salt (2tsp), fresh parsley (2tbsp), lemon juice (2tbsp), minced garlic (6cloves), olive oil (1/2c).

Method of preparation:-
Take a resalable bag, mix olive oil, lemon juice, basil, garlic, parsley, salt and pepper in it. Seal it and mix it. Add halibut steaks and keep it in the refrigerator for about 1 hour. Preheat the grill. Take out the halibut from the bag and place it on hot grill. Grill it for 4 to 5 minutes per side. Fish gets cooked when it flakes easily with a fork and it gets opaque.

Preparation time – 15 minutes

Grill Sea Bass With Garlic Butter Recipe

Ingredients
Sea bass (2pounds), extra virgin olive oil (1 1/2tbsp), minced garlic (2clves), paprika (1/4tsp), onion powder (1/4tsp), garlic powder (1/4tsp), finely chopped fresh Italian parsley (1tbsp), butter (3tbsp), lemon pepper and salt (to taste).

Method of preparation:-
Take a small bowl, mix garlic powder, onion powder, lemon pepper, paprika and salt in it. Sprinkle this mixture on both sides of the fish. To prepare the butter sauce, take a sauce pan, mix butter, garlic and parsley in it. When the butter gets melted then take off the pan from heat. Preheat the grill for high heat. Place the fish on the lightly oiled grate and cook the fish for about 7 minutes. Turn the fish and then coat it with butter sauce. Cook it for 7 minutes more. Remove the fish from heat when it flakes easily with fork. Drizzle with olive oil and serve it.

Grilled Tuna Burgers Recipe

Ingredients
Fresh tuna, ground (1 to 1 1/2pounds), Dijon mustard (1tbsp), minced ginger (1tbsp), garlic (4-5cloves), salt (1/2tsp), buns, dried parsley (1/2tsp), cayenne pepper (1/2tsp).

Method of preparation:-
Take a medium size mixing bowl. Mix ground tuna with mustard, garlic, ginger, parsley, cayenne pepper and salt in the bowl. Make the 4 patties of tuna. Preheat the grill for medium high heat. Oil the grill lightly. Now place the tuna fish on lightly oiled grill. Keep the patties to cook for 3 to 4 minutes per side. The patties should remain lightly pink on the inside. Take out the patties from the grill and serve them on a bun with favorite condiments.

Preparation time – 12 minutes

Grilled Red Snapper Recipe

Ingredients
Red snapper, split and butterflied (1whole), lemon juice (3tbsp), lime juice (3tbsp), orange juice (1/2c), achiote paste (1/2c).

Method of preparation:-
Mix the achiote paste with citrus juices. Cover all the surface of the fish with this paste. Keep the fish in the refrigerator for about 2 hours. Light grill and get a medium flame. Oil the grill and then place the fish in the grill. Place fish skin side down. Cook the fish for about 5 minutes then turn the side and continue cooks it for more 3 minutes. The fish gets cooked when the juices starts boiling. Now you should be able to lift the central bone out easily when the fish is cooked. Top the fish with salsa.
