Creamed Codfish Recipe

Ingredients
1. Heavy cream or cream fraiche (1/2c)
2. cod fish (2 pounds)
3. garlic, pressed (2cloves)
4. olive oil (1c)
5. water
6. lemon juice (2tbsp)
7. fried bread slices
8. black pepper (1/4tsp)
9. salt (1tsp)
10. halved potatoes (3med.)
11. sliced lemon (1)

Method Of Preparation:-
1. Take a pan, place fish in it and cover it with water. Add slices of lemon in it place it over high heat and then keep it to boil. When the foams appear on the surface then cover the pan and turn down the heat to low.

2. Now keep it to simmer for 15 minutes. Drain the fish and keep it warm. In the reserved liquid, add potatoes and cook them for about 30 to 40 minutes until they get cooked. Then drain potatoes in a bowl and mash them and then keep them aside.

3. Remove the skin and bones of the fish. Take a pan, heat ½ cup of oil in it. Take a Pyrex dish, place fish in it and mash it with oil. Then mix mashed potatoes in it to make a smooth paste. Now take rest of the oil and add it into the mixture and again beat the mixture to form smooth paste.

4. Then sprinkle pepper, salt, garlic and lemon juice in it and mix crème fraiche or heavy cream in it. Take double boiler; place the mixture on the top of it. Place the boiler over hot water and stir the mixture until it gets hot.

5. Take a serving dish; make mounds of the codfish mixture and place on the dish. Then decorate it with fried bread. Now creamed codfish is ready to serve.

Garlic Cod Recipe

Ingredients
Finely chopped garlic (5 large cloves), cod fillets (1pound), dash of pepper, olive oil or vegetable oil (1tbsp), butter or margarine (2tbsp), paprika (1/4tsp), onion powder (1/2tsp), lemon juice (1tbsp), salt (1/4tsp), lemon wedges (5).

Method of preparation:-
Take fish fillets and cut them into serving size pieces. Dust pepper and salt on both sides of fish pieces. Take a bowl, mix onion powder, paprika, lemon juice and melted margarine in it. Dip fish in this mixture. Take an ungreased pan of 9*9*2 inches, now place the fish in the pan and then pour the rest of the mixture over it. Now Place the pan uncovered in oven at 350A and cook it for about 25 to 30 minutes until the fish gets flake easily with fork. Take a pan, place it over medium heat. Heat 2 tablespoons of oil and margarine in it and then add garlic in it and cook it until it changes to brown color and then put it over the fish. Now decorate the fish with chopped parsley and serve it with lemon wedges.

Poached Cod Fines Herbes Recipe

Ingredients
1. Milk or water (1 1/4c)
2. fresh cod fillets (2lb or 1kg)
3. fresh dill (2tbsp or 30ml)
4. fresh parsley (1/4c)
5. minced onion (1medium)
6. lemon juice (1tbsp)
7. flour (2tbsp)
8. unpeeled lemon (3slices)
9. butter (2tbsp)
10. peppercorns (4)
11. salt (1tsp)
12. bay leaf (1)

Method Of Preparation:-
1. Take a glass dish of 8*12-inch, place the fish fillets in single layer in it. Then pour milk or water over the fish. Cover the fish with bay leaf, lemon slices, onion, peppercorns and salt.

2. Now place the glass dish, uncovered in microwave at high temperature and cook the fish for about 3 minutes. Take out the dish from microwave, tilt it and then pour the cooking juice with a wooden spoon over the fish.

3. Again place it in microwave at high and cook it again for about 4 minutes. Take a warm platter to keep the fish warm and then transfer the fish in it.

4. Take a small bowl, mix flour and butter in it and then put this mixture into the fish juices and mix it properly. Then add parsley, dill, lemon juice in it.

5. Place it in microwave at high and cook it for about 2 minutes until the sauce becomes creamy. Now pour the sauce over the fish in warm platter and serve it.

Spicy Fried Codfish Recipe

Ingredients
1. Codfish fillets (1 1/2lb)
2. vegetable oil (for frying)
3. crushed garlic (3 small cloves)
4. ground or crushed cilantro (1/2tsp)
5. ground cumin (1tsp)
6. fresh lemon juice (1tbsp)
7. crushed red pepper flakes (3/4tsp)
8. ground star anise (1tsp)
9. salt (to taste)

Method Of Preparation:-
1. Take cod fish, first take off its skin and then remove bones from it. Now wash it and use a paper towel to pat dry it. Then cut fish into large pieces and keep it aside in a bowl.

2. Take a bowl; add pepper flakes, star anise, garlic, cilantro, cumin, salt and lemon juice in it. Mix all the ingredients well to make smooth paste. Then put this paste into the bowl of fish pieces and mix it gently with fish pieces to coat them.

3. Cover the bowl and keep it in the refrigerator to marinate for about 1 hour. Then take out fish from the bowl and keep it on paper towel to drain some marinade.

4. Take a large frying pan and place it over heat. Add oil in the pan and heat it to 350 degrees.

5. Put a few pieces of fish in hot oil and fry them for about 2 to 3 minutes until the fish changes to golden brown. Then take out fish pieces from oil and serve them with green salad or cooked rice.

Tuna Salad Muffins Recipe

Ingredients
Tuna, drained (1can about 9 ounce), all purpose flour (1 1/2c), vegetable oil (1/3c), skim milk (3/4c), baking powder (2tsp), sugar (1tbsp), egg (1), chopped garlic (1tbsp), chopped green olives (1/4c), chopped green onion (1/2c), plain nonfat yogurt (1/2c), salt (1/2tsp).

Method of preparation:-
First heat the oven to 190 degrees C or 375 degrees F. Take muffin tins, grease them lightly. Take a bowl of medium size, mix flour, baking powder, salt and sugar in it and keep it aside. Take another bowl, flake tuna in it and then mix garlic, olives, green onion and yogurt in it and then keep the bowl aside. Take a small bowl, beat milk, egg and oil in it. Now add tuna mixture into the bowl of flour mixture and then slowly mix milk mixture in it. Now put the tuna mixture or salad in the muffin tins with spoon. Place the tins in oven and bake them at 375 degrees F for about 20 to 25 minutes until the tooth pick inserted in the center comes out clean. Then take out the tins from oven and keep them to cool. Remove the tins and then serve them.

Swiss Tuna Bake Recipe

Ingredients
1. Tuna, drained (2cans about 7 ounce in each)
2. milk (2c)
3. eggs (6)
4. bread, crust removed (6slices)
5. shredded Swiss cheese, divided (2c about 8 ounce)
6. salt, divided (1tsp)
7. dried dill (1/2tsp)
8. chopped mushrooms (4 ounces)
9. chopped green onions (1/4c)
10. hot pepper sauce (a dash)
11. Worcestershire sauce (1tsp)
12. melted butter (2tbsp)

Method Of Preparation:-
1. Take a large bowl, place tuna in it and then flake it. Add chopped mushrooms, green onions, ½ teaspoon of salt, dill and 1 cup of Swiss cheese in it. Mix all the ingredients well.

2. Take a shallow baking dish of 2 quart, butter it and then place bread slices on the bottom of the dish. Put the tuna mixture over the bread slices.

3. Take a bowl, beat eggs, pepper sauce, Worcestershire sauce, milk and the rest of the ½ teaspoon of salt in it. Then pour this mixture over the tuna. Then dust the rest of the 1 cup of shredded cheese on the top.

4. Cover the dish and keep it to chill for about 2 hours. Then take out the dish from the refrigerator and keep it for about 30 minutes at room temperature. Place the dish in oven and bake it for about 1 hour at 325 degrees F until the tooth pick inserted in the center comes out clean.

Tuna Curry Casserole Recipe

Ingredients
1. Tuna, drained and flaked (2cans about 7 ounce)
2. butter (3tbsp)
3. milk (1c)
4. sliced onion (1med.)
5. curry powder (1tsp)
6. all purpose flour (2tbsp)
7. sliced mushrooms (1c)
8. cored and diced apples (2med.)
9. buttered bread crumbs (1c)
10. salt (1/2tsp)

Method Of Preparation:-
1. Take a saucepan of medium size, melt butter in it. Take onion slices, separate them into rings. Saute onion rings, mushrooms and apples in melted butter until they get soft. Then add curry powder in it and mix it until the mixture becomes smooth.

2. Slowly add milk in it and cook it by stirring regularly over low heat until the mixture becomes thicken. Then add tuna in it and mix it well.

3. Take a casserole of 1 ½ quart, grease it and then place tuna mixture in it. Place the buttered bread crumbs on the edges of the casserole.

4. Cover the casserole, place it in oven and bake fish for about 25 minutes at 350 degrees F. Then take out the casserole from oven and serve it hot.
