Stuffed Seashell Pasta With Mushrooms Recipe

1. Jumbo pasta seashells (24)
2. frozen spinach, thawed and drained (5ounces)
3. chopped garlic (1tsp)
4. chopped shallots (2)
5. butter (2tbsp)
6. cooking cream (1c)
7. onion powder (1/2tsp)
8. ricotta cheese (2tbsp)
9. egg (1small)
10. cream cheese (2/3pkg)
11. gourmet mushroom mix (1c)
12. salt and pepper (to taste)

Method of preparation:-
1. Take a pan, boil water in it and then add seashell pasta in it to boil. Boil it until it gets soft and then cool it down with cold water.

2. Take a sauce pan, heat 1 tablespoon of butter in it and then saute mushrooms in it. Take a bowl, mix cream cheese, sauteed mushrooms, ricotta cheese, egg, onion powder and salt and pepper in it. Mix these entire well and then fill mixture in all seashells.

3. Take a frying pan, heat the left over butter in it and then saute the chopped shallots and garlic for about 3 minutes and add the cream. Boil it and then add the stuffed seashells. Now reduce the heat to simmer and cover it with lid. Simmer it for about 10 minutes or until the stuffing is cooked.

4. Add the spinach to the sauce before the seashell pasta is ready. During the cooking if the sauce becomes thick then adds some water or chicken stock in the pan. When it gets ready then serve it in serving bowl or a dish.

Mediterranean Stuffed Swordfish Recipe

1. swordfish (1pound)
2. fresh spinach (2 cups)
3. garlic crushed (2 cloves)
4. fresh lemon juice (1 tbsp)
5. olive oil (1cup)
6. chopped parsley (1tbsp)

1. Clean the swordfish and cut a 2 inch steak out of it. Make a deep slit in the steak. Now mix one tbsp olive oil and lemon juice. Apply this to the fish with a brush. Keep the fish aside.

2. Wash and clean the spinach and cut into very small size. In a small pan heat a small amount of olive oil and add crushed garlic and spinach to it and cook till it?s very tender.

3. Now fill this spinach in the slit formed. Place this steak on a heated grill and cook for about 10 minutes. Turn and cook the other side also. Serve hot garnished with parsley springs.

Tomatoes Stuffed With Fish Recipe

1. Cooked and mashed fish (1lb)
2. tomatoes (8)
3. boiled and mashed potatoes (5)
4. chopped coriander leaves (1bunch)
5. oil (3tbsp)
6. gram masala powder (1/2tsp)
7. red chili powder (1/2tsp)
8. salt (to taste)

Method of preparation:-
1. Take a bowl, mix cooked fish, gram masala powder, red chili powder, salt and coriander leaves in the bowl.

2. Take a pan, fry this mixture in 1 tablespoon of oil for about 5 minutes and then take off the pan from the heat. Take tomatoes, cut the slice from the top of each tomato.

3. Scoop out the centers of the tomatoes. Now turn the hollow tomatoes upside down on the paper towel and drain them. Take one tomato and stuff it with 3/4th of the prepared mixture. Now keep the mashed potatoes on the top to seal the opening.

4. Sprinkle the bread crumbs over it. Repeat the same with all other tomatoes. Now keep the stuffed tomatoes in the oven and bake them at 375 degrees F for 10 to 15 minutes or until the top gets golden brown and the tomatoes get soft. Take out from the oven and serve them hot.

Baked Fish With Spinach Stuffing Recipe


For spinach:-

1. Fresh cooked spinach (1/2c)
2. butter (4tbsp)
3. salt (1/2tsp)
4. ground pepper (1/2tsp)
5. lemon juice (1/4tsp)
6. cream (2-4tsp)
7. fresh bread crumbs (2 1/2c)
8. chopped shallots (3tbsp)

For fish:-

1. Whitefish (4-5)
2. white wine
3. melted butter (2tbsp)

Method of preparation:-

1. Take spinach, wash it and squeeze it dry. Tale a stainless steel pan, melt butter in it and cook shallots in it. Add spinach and cook it over high heat to evaporate moisture.

2. Take a bowl, add bread crumbs, lemon juice, cream, salt and pepper and mix then well. Now take fish, wash and dry it . Stuff it with spinach and lace with string. Apply the melted butter.

3. Place the fish on foil folded so the fish may lift off pan. Melt butter and white wine in the pan. Baste the fish for about 5 to 7 minutes. Cook it in an oven for about 40 to 45 minutes at 400 degrees.

4. Take out the fish from the oven, reduce the sauce and pour it over the fish. Now serve it with hollandaise sauce.

Stuffed Peppers With Fish Recipe

1. Salmon (1small can)
2. grated parmesan cheese (2tbsp)
3. butter or margarine (2tbsp)
4. fresh lemon juice (1tsp)
5. salt and pepper (to taste)
6. milk (1/2c)
7. slightly beaten egg (1)
8. divided soft bread crumbs (1c)
9. finely chopped onion (1tbsp)
10. split seeds and membrane removed, green bell peppers (4)

Method of preparation:-
1. Take bell peppers, boil them in boiling salted water for about 5 minutes and then drain them. Take a bowl, mix onion, bread crumbs, milk, egg, lemon juice, salmon, salt and pepper in it.

2. Now fill the peppers with remaining half cup of bread crumbs and then sprinkle the parmesan cheese over the stuffed peppers.

3. Take a shallow baking dish, place the stuffed peppers in the dish and bake them at 400 degrees for about 15 minutes. When they get ready then serve them hot.

Apple Stuffed Fish Recipe

1. Sole, cod or other white fish (4fillets about 4-5ounces)
2. chicken broth water (1/4c)
3. dried thyme leaves (1/8tsp)
4. black pepper (1/4tsp)
5. salt (1/4tsp)
6. mustard (1/4tsp)
7. ginger (1/4tsp)
8. lemon juice (2tbsp)
9. minced onion (1/2c)
10. grated carrot (1/2c)
11. peeled and grated apples (1c)

Method of preparation:-
1. Heat the oven to 400 degrees F. take a small roasting pan and oil it lightly. Take a medium size bowl, mix apple, green onion, carrot, ginger, lemon juice, mustard, salt, pepper and thyme in the bowl.

2. Spread 1/4 of the apple mixture on each fillet; carefully roll up to enclose the apple filing. Place the stuffed fillets, seam side down in the oiled pan.

3. Pour the broth over the rolled fillets, cover with the aluminum foil and bake it for about 10 to 15 minutes or until the fish gets opaque and easily flakes. Serve it hot.

1. Herrings fish (4med.)
2. potatoes boiled, peeled and mashed (450gms)
3. cumin seeds (1tsp)
4. finely chopped green chilies (2)
5. salt (to taste)
6. grated ginger (1tsp)
7. onion (1large)
8. oil (for deep frying)
9. fresh soft bread crumbs (1tbsp)
10. water (2/3c)
11. butter (50gms)
12. gram flour (3/4c)
13. vinegar (1tsp)
14. lemon juice (1tbsp)

For garnishing:-

1. Lettuce leaves (4)
2. sliced lemon (1)
3. chopped coriander leaves (1tbsp)

Method of preparation:-
1. Take a frying pan, heat the butter in it. Fry onions in the pan until get golden brown. Add cumin, green chilies, ginger and salt in the pan. Mix all these together with the lemon juice, mashed potatoes and vinegar.

2. Take herrings fish, clean and cut it and then stuff with the potato mixture. Make batter by beating gram flour, water and bread crumbs in a bowl. Mix them until get smooth.

3. Heat the oil in the cauldron or kadai. Dip each fish in the batter and fry it until it gets golden and crispy on a moderate heat.

4. Now garnish the fish with lemon slices, lettuce leaves and coriander and then serve it hot. It looks nice as a side dish with non vegetarian menu.
