Swordfish With Balsamic Brown Butter Sauce
Ingredients
1. Swordfish steaks (6 about 6 ounce, each steak ¾ inch thick)
2. Dijon mustard (1tbsp)
3. honey (1tbsp)
4. balsamic vinegar (3tbsp)
5. unsalted butter (1 stick about 1/2c)
6. chopped tomatoes (optional)
7. drained capers (2tbsp)
8. olive oil (1 tbsp)
9. pepper and salt (to taste)
Method Of Preparation:-
1. Take a heavy saucepan of medium size, place it over medium heat and melt butter in it by swirling the pan irregularly for about 5 to 6 minutes until the butte gets golden brown color.
2. Then take off the pan from heat. Then mix honey, vinegar and mustard in it and season it with pepper and salt. Rub oil on the swordfish steaks and then dust salt and pepper over them.
3.Take large and heavy frying pan; place it over medium high heat. Add three steaks of swordfish in the pan and saute them for about 4 minutes on each side until they get opaque.
4. Then take them out from pan and place on plate, cover the plate with foil to keep the fish warm. Then cook the rest of the steaks in the same way.
5. Heat the sauce over low heat and then pour it over fish with spoon. Sprinkle tomatoes and capers over the fish and then serve it hot.

Swordfish Skewers Recipe
Ingredients
1. Fresh swordfish (3 pounds)
2. bay leaves (2small)
3. Onions, cut into 8 wedges (2 med.)
4. dried leaf oregano crumbles (1tsp)
5. fresh lemon juice (1/2c)
6. vegetable oil (1c)
Method Of Preparation:-
1. Take swordfish, take off its skin and then cut it into cubes of about 1-inch in size. Take a bowl, place cubes of swordfish in it.
2. Take a separate bowl; add oil, bay leaves, dried leaf oregano, lemon juice, onion wedges in it. Mix all the ingredients and then pour the mixture over the fish cubes in the bowl.
3. Place the bowl in refrigerator for about 2 to 3 hours. Now take 8 skewers, oil them lightly and then thread the swordfish and wedges of onions on skewers.
4. Take a foil, place skewers on it and then brush them with marinade mixture. Now broil the fish skewers for about 15 minutes; turn the sides of skewers to cook it from all sides while broiling it. When the swordfish skewers get ready then serve them hot in a serving dish or a bowl.

Swordfish In Calabrian Style Recipe
Ingredients
1. Fresh swordfish, cut into chunks (1 ¼ pounds)
2. all purpose flour (1tsp)
3. chopped onion (1small)
4. fresh lemon juice (1tbsp)
5. olive oil, divided (3tbsp)
6. chopped fresh parsley (1 bunch)
7. fava beans, drained (1can about 19 ounce)
8. dry white wine (1 1/2c)
9. salt and pepper (to taste)
Method Of Preparation:-
1. Take a bowl of medium size, add lemon juice, olive oil (2tbsp), pepper and salt in it. Put fish in the lemon juice mixture and coat it with mixture and then keep it aside for about 15 minutes to marinate.
2. Take out the fish from the marinade and pat dry it with paper towels. Take a large frying pan, place it over medium high heat and then heat the rest of the olive oil in it. Add chopped onions in the pan and fry them until they get golden color and then add fish in it. Cook the fish until it gets brown from all sides.
3. Then take off the pan from heat and keep it aside. Add flour in the frying pan; cook it until it gets light brown color. Then slowly mix white wine in it. Place the fish again in the pan and add fava beans in it.
4. Sprinkle chopped parsley over it, cover the pan and keep the fish to simmer for about 2 to 4 minutes until it gets flake easily with fork. Then take off the pan from heat, place the fish in serving dish and then serve it hot.

Swordfish A la Siciliana Recipe
Ingredients
1. Swordfish steaks (2 pounds)
2. raisins (3 ounce)
3. capers (1/4c)
4. pine nuts (2 ounces)
5. pitted and minced green olives (10)
6. diced ripe tomatoes (1/2 pound)
7. minced garlic (1clove)
8. minced onion (1small)
9. olive oil (5tbsp)
10. pepper and salt (to taste)
Method Of Preparation:-
1. Take a small bowl, add lukewarm water in it and then soak raisins in it for about 30 minutes. Then drain the raisins and keep them aside. Now heat the oven to 200 degrees C or 400 degrees F.
2. Take a large frying pan, place it over high heat and then heat olive oil in it. Add garlic and onion in the pan and saute them until they get soft. Then add capers, pine nuts, olives, tomatoes and raisins in the pan and mix them well.
3. Cover the pan, turn down the heat to low and then cook the mixture for about 15 minutes. Dust salt and pepper over the fish steaks.
4. Take a baking dish, grease it lightly with oil and then place the fish steaks in it. Pour the cooked sauce over the fish steaks.
5. Now place the dish in oven and bake the fish steaks at 400 degrees F for about 15 to 20 minutes until the steaks get firm. Then take out the dish from oven and serve the fish hot.

Ingredients
1. Fresh swordfish, cut into chunks (1 pound)
2. chopped red onion (1/2c)
3. chopped fresh ginger root (1/2c)
4. peeled, seeded and cubes of mango (1)
5. chili powder (1tsp)
6. unsweetened coconut milk (1c)
7. salt (to taste)
Method Of Preparation:-
1. Take a saucepan of medium size; add chopped red onion, coconut milk, chopped ginger, chili powder and salt in it and then mix all the ingredients well. Blend this mixture and then mix cubes of mango in it.
2. Place the saucepan over heat and Keep the mixture to boil. Then place swordfish chunks in the mixture of coconut milk and cook them for about 25 to 30 minutes by stirring irregularly until the mixture becomes thick and fish gets flake easily with fork.
3. Then take off the pan from heat and place the cooked fish in a serving plate and then serve it hot with plain white rice.

Pan-Roasted Sword Steaks With Mixed-Peppercorn Butter Recipe
Ingredients
1. Swordfish fillets (4 about 6 ounce)
2. olive oil (1tbsp)
3. ground mixed peppercorns (2tsp + more for sprinkling)
4. minced garlic clove (1)
5. chopped fresh parsley (2tsp)
6. grated lemon peel (1/2tsp)
7. butter at room temperature (1/4c about 1/2stick)
Method Of Preparation:-
1. First heat the oven to 400 degrees F. Take a bowl of small size, add parsley, ground mixed peppercorns (1/2tsp), garlic, butter and lemon peel in it. Mix all the ingredients and then season the mixture with salt.
2. Take a large and heavy frying pan, place it over medium high heat and then heat oil in it. Dust ground mixed peppercorns and salt over the fish and then place it in the frying pan.
3. Cook the fish for about 3 minutes until it gets brown. Then place the fish in oven and roast it for about 10 minutes until it gets cooked.
4. When the fish gets cooked then takes it out from oven and places it in a serving plate. Add butter in the same frying pan and scrapping up the browned bits and then cook butter in it over medium high heat until it gets melted.
5. Then take off the pan from heat and pour melted butter over the swordfish in the serving plate and then serve it hot.

Grilled Swordfish With Rosemary Recipe
Ingredients
1. Swordfish steaks (4 about 4 ounce)
2. chopped fresh rosemary (2tsp)
3. minced garlic (5 cloves)
4. white wine (1/2c)
5. extra virgin olive oil (1tbsp)
6. lemon juice (2tbsp)
7. lemon slices for garnish (4)
8. ground black pepper (1/4tsp)
9. salt (1/4tsp)
Method Of Preparation:-
1. Take a baking dish of 8 inch in square shape, add 1 teaspoon of rosemary, garlic and wine in it and then mix all the ingredients.
2. Dust salt and pepper over the fish and then place it in baking dish, turn its sides to coat with the mixture. Then cover the dish with a lid and place it in the refrigerator for about 1 hour.
3. Take a bowl of small size, mix rest of the rosemary, olive oil and lemon juice in it and then keep it aside. Now heat the grill for standard heat.
4. Take a dish, line it with paper towel. Place fish in the dish and throw out the marinade. Grease the grill grate with oil and place fish on the grate. Grill it for about 10 minutes or until the fish gets flake easily with fork.
5. Take a serving plate, place fish in it and pour lemon sauce over it with spoon and then decorate the fish with lemon slices. Now the fish is ready to serve.
