Indian Basa Recipe

Ingredients
1. 4 Indian Basa fillets
2. 1 egg
3. 2 tsp hot spices mix or garam masala
4. 1cup flour
5. 1 tsp ground coriander
6. 1 tsp ground cumin
7. 1 tsp chili powder
8. 1 large bowl Yogurt
9. 1/2 cucumber ? diced,
10. 4 tbsp Freshly chopped mint
11. Cooking Oil
12. Salt to taste

Directions
1. Take a large bowl. Put the yogurt, mint and cucumber and blend thoroughly. Place the bowl in the refrigerator.

2. Mix the flour and spices. Beat an egg in a bowl .Dip the fillets in the egg and then coat with the flour mix.

3. Heat cooking oil in a large pan. Fry the fish fillets till cooked on both sides. Serve hot with the yogurt prepared with mint and coriander.

Indian Tomato Chicken Recipe

Ingredients
1. Skinless chicken thighs (6)
2. ground nutmeg (1/4tsp)
3. bay leaves (2)
4. chopped onion (1large)
5. ground cloves (1/4tsp)
6. chopped garlic (4cloves)
7. chopped cinnamon stick (1 piece about 1 inch)
8. fresh ginger root (1slice)
9. ground cardamom (1/2tsp)
10. olive oil (1tbsp)
11. ground cumin (2tsp)
13. ground black pepper (1tsp)
12. salt (1tsp)
14. ground turmeric (1tsp)
15. peeled tomatoes, crushed (1can whole about 14.5 ounce)

Method of preparation:-

1. Take a food processor; add ginger, garlic and onion in it. Make the paste of it by processing.

2. Take a large frying pan, place it over medium heat. Heat oil in it and then add onion paste in it and cook it for about 10 minutes by stirring it regularly. Add bay leaves, cloves, cinnamon, pepper, salt, turmeric, cumin and nutmeg in it and saute them for about 1 to 2 minutes by stirring.

3. Place the chicken thighs in the pan; mix them to coat them properly. Cook it for about 4 minutes and then pour the tomatoes with liquid in it and mix it.

4. Turn down the heat to low, cover the pan and keep it to simmer for about 1 to 2 hours by stirring until the oil gets separated from the liquid.

Chicken Makhani (Indian Butter Chicken) Recipe

Ingredients
1. Boneless skinless chicken thighs, cut into small bite size pieces (1pound)
2. peanut oil (1tbsp)
3. black pepper (1 pinch)
4. salt (1pinch)
5. cayenne pepper (1/4tsp or to taste)
6. tomato puree (1c)
7. half and half (1c)
8. plain yogurt (1/4c)
9. bay leaf (1)
10. ground cumin (1tsp)
11. chili powder (1tsp)
12. hot spices mix or garam masala (1tsp)
13. ginger-garlic paste (1tsp)
14. lemon juice (2tsp)
15. butter (2tbsp)
16. chopped white onion (1/4)
17. finely chopped shallot (1)
18. peanut oil (1tbsp)
19. water (1c)
20. cornstarch (1tbsp)
21. cayenne pepper (1pinch)
22. garam masala (1tsp)

Method of preparation:-
1. Take a large saucepan, place it over medium heat. Heat 1tablespoon of oil in it and then saute onion and shallot in it until they get soft. Add bay leaf, cumin, chili powder, 1 teaspoon of garam masala, ginger-garlic paste, lemon juice and butter in it.

2. Cook this mixture for about 1 minute by stirring. Then add tomato puree and cook it for about 2 minutes. Mix yogurt and half and half in it. Turn down the heat to low and keep it to simmer for about 2 minutes by stirring the mixture regularly. Add salt and pepper and then take off the pan from heat.

3. Take a large heavy frying pan, place it over medium heat. Heat 1 tablespoon of oil in it. Cook chicken in it for about 10 minutes until it gets lightly brown. Turn down the heat. Add cayenne and 1 teaspoon of garam masala in it. Mix sauce in it and keep it to simmer until mixture gets reduced. Now mix the cooked chicken into the sauce.

4. Take a small bowl, mix cornstarch and water in it and then mix it into the sauce. Again cook it for about 5 to 10 minutes until the sauce gets thickened.

Punjabi Chicken Curry Recipe

Ingredients
1. Chicken (250gms)
2. oil (1tbsp)
3. chopped onion (1large)
4. turmeric powder (1pinch)
5. coriander powder (1tsp)
6. chili powder (1tsp)
7. ginger-garlic paste (1 to 2tsp)
8. curd (1/4c)
9. tomatoes, pureed (3small)
10. fresh coriander, chopped (4 to 5 sprigs)
11. salt (to taste)

Whole masala:-
1. Cinnamon (1inch)
2. cloves (3)
3. cardamoms (2)
4. bay leaves (2)

Ground Masala:-
1. Cumin or jeera seeds (1/2tsp)
2. peppercorn (1/2tsp)
3. cinnamon (1inch)
4. cloves (2)
5. cardamom (2)

Dry roast all these ingredients and then grind them to make fine powder.

Method of preparation:-
1. Take a chicken, clean it and then wash it. Take a saucepan, place it over heat, Heat oil in it and add onions and ginger garlic pastes in it. Fry them for few minutes and make the fine paste of this mixture.

2. Add the ingredients of whole masala in paste and cook them until the mixture gets golden brown. Then add salt, chili powder, turmeric powder, coriander powder in it. Fry them for few seconds. Now add tomato puree in it and cook it until the oil gets separate. Add the chicken pieces in it and cook them for about 5 minutes over medium heat.

3. Now turn down the heat to low and cook the chicken for about 5 to 10 minutes. Then add ground masala and curd in the center of the pan. Gently mix the chicken pieces in it and cook them until the chicken gets cooked. When the chicken gets ready then decorate it with chopped coriander and serve it in serving bowl.
