Apple Nut Bread Recipe

Ingredients
1. All purpose flour (3c)
2. baking soda (1tsp)
3. sugar (2c)
4. slightly beaten eggs (3)
5. vegetables oil (1c)
6. vanilla (1tbsp)
7. cinnamon (1tsp)
8. chopped pared, cored apples (4c)
9. chopped pecans (1c)
10. sugar (2tbsp)
11. cinnamon (1/2tsp)

Method of preparation:-
1. First heat the oven to 325 degrees F. Take 2 loaf pans, grease and floured them. Take a bowl, mix eggs, oil, vanilla and 2 cup sugar in it. Mix it thoroughly.

2. Take another bowl, mix flour, cinnamon and baking soda in it. Now add the mixture of dry ingredients into the mixture of wet ingredients. Mix both the mixture thoroughly and then add apples and pecans in it. Divide this batter in two loaf pans.

3. Prepare the topping by mixing 2 tablespoon sugar and cinnamon and then sprinkle it over the top of loaves. Place the pan in oven and bake it for about 1 hour and 10 minute.

4. Then cool the bread on wire rack fir about 10 minutes. Take off the bread from the pans and keep it for cooling. Wrap this bread in foil or in plastic bags at room temperature.

Moist Banana Bread Recipe

Ingredients
1. All purpose flour (2c)
2. butter (1/2c)
3. beaten eggs (2)
4. salt (1/4tsp)
5. baking soda (1tsp)
6. mashed over ripe bananas (2 1/3c)
7. brown sugar (3/4c)

Method of preparation:-
1. First heat the oven to 350 degrees F. Take a loaf pan and grease it. Take a large bowl, mix flour, baking soda and salt in it.

2. Take another bowl, mix butter and brown sugar in it. Add eggs and mashed bananas in it and then blend it thoroughly. Now add this banana mixture into the flour mixture and mix it until gets moisten.

3. Pour this batter into the loaf pan and place the pan in oven and then bake it for 60 to 65 minutes or until the knife inserted in the center of loaf comes out clean. Keep the loaves for sometime to cool in pan and then take out on the wire rack to cool.

Blue Corn Biscotti Recipe

Ingredients
1. All purpose flour (2 ½ c)
2. yellow cornmeal (1/4c plus 2tbsp)
3. antisette or ambuca (2tbsp)
4. eggs (2large)
5. pecan pieces (3/4c)
6. granulated sugar (1 1/4c)
7. Stone-ground blue cornmeal (1/2 cup)
8. baking powder (1 1/2tsp)
9. salt (1/2tsp)
10. butter (2tbsp)

Method of preparation:-
1. First heat the oven to 375 degrees F. set a rack in it. Take an electric mixer, mix flour, yellow and blue cornmeal, salt, pecans, baking powder and sugar in the bowl of mixer. Mix it with mixer at low speed. Put butter in it and blend it.

2. When it gets blended, adds eggs and anisette and again beat it thoroughly to form dough of this mixture. Now place the dough on floured surface and shape the dough in rectangle shape.

3. Take a non stick baking sheet and lined it with parchment paper. Place the sheet in oven and bake it for 30 minutes or until it gets lightly brown and then cool it for 2 hours or for overnight. Heat the oven to 350 degrees F.

4. Take a cutting board and cut the logs on it with serrated knife into ½ inch slices and then place them on the baking sheet pan and bake for 10 to 12 minutes until the edge get lightly brown.

5. Take off the sheet from oven and then place the biscotti on wire rack to cool them. Store them in air tight container.

Number of biscotti -25 to 30

Almond Biscotti Recipe

Ingredients
All purpose flour (2c), almond extract (1/2tsp), eggs (3large), white sugar (3/4c), baking powder (1tsp), almonds (1c) and pure vanilla extract (1tsp).

Method of preparation:-
First of all heat the oven to 350 degrees F. Roast almonds for 5 to 10 minutes or until get lightly brown. Cool and chop these almonds and then keep them aside. Take a baking sheet line it with parchment paper and reduce the heat of the oven to 300 degrees. Take a small bowl, beat the eggs and extract in it and keep it aside. Take a large bowl, mix flour, baking powder, salt and sugar in it with hand beater or with electric mixer. Beat it for about 30 minutes until it gets blended and then add egg to the mixture. Mix it to form dough. Now add almonds and then divide the dough in half. Roll the half of the dough on the floured surface into logs of rectangle shape. Place logs on baking sheet well apart. Place the sheet in oven and bake it for about 35 to 40 minutes or until it gets firm. Take off the logs from oven and then place these logs on wire rack for cooling for 10 minutes. Now cut these logs into ½ inch slices in diagonal shape on the cutting board with serrated knife. Place slices on baking sheet and bake for 10 minutes or until get firm to touch. Take off from oven. Cool and pack in the airtight container. You can put chocolate glaze on biscotti before serving.

Make about 40 biscotti

Chocolate Biscotti With Cranberries Recipe

Ingredients
1. All purpose flour (1 3/4c)
2. baking powder (1tsp)
3. egg yolk (1large)
4. eggs (2large)
5. granulated white sugar (3/4c)
6. cranberries (1/2c)
7. salt (1/4tsp)
8. vanilla extract (1/4c)
9. sugar (3/4c)
10. unsalted butter (1/2c)
11. Dutch processed cocoa powder (1/2c)
12. white chocolate chips (1/2c)

Method of preparation:-
1. First heat the oven to 350 degrees F. Place the rack in the center of the oven. Use parchment paper to line the baking sheet and then keep it aside.

2. Take bowl mix butter and sugar in it until it gets fluffy. Mix it with hand blender or electric mixer. Add eggs and egg yolk in it and mix it well and then add vanilla extract in it.

3. Take another bowl, mix flour, cocoa powder, baking powder and salt in it. Mix it well and then add butter mixture in it. Put cranberries and white chocolate chips in this mixture and then make dough of this mixture.

4. Place the dough in floured surface and then divide it into 2 half. Form each half into a log 10 inches (25 cm) long. Now roll the dough in cylindrical shape. Place these rolls on baking sheet well apart.

5. Place the baking sheet in the oven and bake it for about 25 to 30 minutes. After baking take off the sheet from the oven and then place it on wire rack to cool it for about 10 minutes.

6.Now place the logs on cutting board with spatula. Cut these into ¾ inch thick slices with serrated knife. Place these slices on baking sheet and bake for about 8 to 10 minutes until get crispy and dry.

7. Take off the sheet from oven and then place it on wire rack to cool. After cooling store these biscotti in air tight container.

Make about 24 to 30 biscotti.

Italian Beef And Cheese Casserole Recipes

Ingredients
1. Lean ground beef (2lb)
2. cook and drained noodles (1egg)
3. softened cream cheese (1pkg)
4. cottage cheese (1 1/2c)
5. tomato can (2can)
6. chopped onion (1large)
7. chopped green pepper (1)
8. salt (1tsp)
9. pepper (to taste)
10. shredded cheddar cheese (1/2c)
11. grated parmesan cheese(1/2c)
12. sour cream (1c)

Method of preparation:-
1.Take a pan. Put oil in it and then add meat in it. Heat it until it gets lightly brown. Add salt, green pepper and onion in it. Add tomato sauce, keep it on simmer for about 30 minutes and then take it off from heat.

2. Now put it in small bowl and blend it with cream cheese, cottage cheese and sour cream and then keep it aside.

3. Take a buttered casserole. Place ½ of the cooked noodles in it. Add cheese mixture with spoon in it and ½ of the parmesan cheese and then put the remaining noodles. Now pour the meat sauce in it. Use fork to lift the noodles in the casserole for mixing the sauce with noodles.

4. Sprinkle the left over parmesan cheese and top it with cheddar cheese. Bake it for about 20 minutes at 350 degrees or until it gets bubbly.

Hot Italian Roast Beef Sandwich Recipe

Ingredients
1. Boneless sirloin tip beef roast (5pound)
2. butter (1tbsp)
3. crushed dried red pepper (1 to3tsp)
4. ground thyme (1tbsp)
5. water (1/3c)
6. cut up tomatoes with juice (1can)
7. salt (1tsp)
8. semi hard rolls or bread (as per choice)

Method of preparation:-
1. Take a Dutch oven. Heat and melt the butter in it over medium heat. Place the roast in it and brown it on all sides.

2. Mix all the ingredients expect roll, cover it and cook it until the roast gets tender for about 3 to 4 hours. Cook it on low heat. Add more water if it is necessary. Keeps it roasting while simmering it in broth.

3. Take out the meat from broth. And keep it for 20 minutes to cool. Now trim the fat from the meat and cut them into thin slices. When it is ready, heat the broth and serve it on rolls.
