Supper Delicious Zuppa Toscana Recipe
Ingredients
1. Bulk mild Italian sausage (1pound)
2. chicken broth (5can)
3. diced onion (1large)
4. thinly sliced potatoes (6)
5. minced garlic (1tbsp)
6. bacon cut into 1/2inch pieces (4slices)
7. crushed red pepper flakes (1 1/4tsp)
8. heavy cream (1c)
9. fresh spinach, tough stems removed (1/4bunch)
Method of preparation:-
1. Take a Dutch oven. Cook the Italian sausage and red pepper flakes in it over medium high heat until gets browned and crumbly for about 10 to 15 minutes. Then drain it and keep it aside.
2. Now take the same Dutch oven. Place it over medium heat. Cook the bacon in it until gets crispy for about 10 minutes. Drain the bacon.
3. Leave a few tablespoon of dripping with the bacon in the bottom of the Dutch oven. Add onions and garlic in the oven in the oven for about 5 minutes until the onions get soft.
4. Now pour the chicken broth in the Dutch oven with the bacon and onion mixture. Boil the mixture over high heat. Add potatoes and boil for about 20 minutes.
5. Now reduce the heat from high to medium and mix the heavy cream and then cook the sausage. When the soup gets ready then mix the spinach into the soup just before serving.

Italian Sausage Soup Recipe
Ingredients
1. Beef broth (2cans)
2. Italian sausage (1 pound)
3. Italian style stewed tomatoes (1can)
4. cubed zucchini (2small)
5. packed rinsed and torn spinach (2c)
6. untrained, great northern beans (1can)
7. sliced carrots (1c)
8. minced garlic (1clove)
9. ground black peppers (1/4tsp)
10. salt (1/4tsp)
Method of preparation:-
1. Take a stockpot, place it over heat and then brown the sausage and garlic in it. Mix broth, carrots, tomatoes, salt and pepper in it. Now reduce the heat.
2. Cover the pot and simmer it for about 15 minutes. Now mix beans with liquid and zucchini in it. Again cover it and simmer it for about 15 minutes or until the zucchini gets tender.
3. Now take off the pot from the heat and then add spinach in it. Cover the pot with lid to allowing the heat from the soup to cook the spinach leaves. Now soup gets ready to serve after 5 to 6 minutes.

Shrimp Alla Speciale Recipe
Ingredients
1. Jumbo shrimp (1pound)
2. dried oregano (1tsp)
3. lemon zest (2tbsp)
4. chopped garlic (3cloves)
5. green pepper, julienne cut (1small)
6. zucchini, julienne cut (1small)
7. diced tomatoes (1can)
8. dry white wine (1/2c)
9. fresh chopped Italian parsley (1/4c)
10. portabella mushrooms (8baby)
11. carrot julienne cut (1small)
12. red pepper, julienne cut (1small)
13. chopped long green onion (1bunch)
14. butter (1tbsp)
15. dried basil (1tsp)
16. extra virgin olive oil (1/2c)
17. stalk of celery, julienne cut (1 )
Method of preparation:-
1. Take shrimp, peel it and devein it and then place it in sealed bag. Add oil of ¼ cup in the bag. Mix garlic of 1 clove, basil, oregano and the lemon zest in it. Now seal the bag and keep it in the refrigerator for few hours.
2. Take a frying pan, heat the left over oil in it. Saute onion, left over garlic, celery, carrots, green pepper, red pepper, zuccihini and mushrooms in it until they get soft.
3. Put the shrimp in it and saute it for about 3 minutes. Add wine and cook it until it gets reduce to half. Then add parsley and tomatoes and heat them. When it gets ready then serve it with pasta or bread.

Cioppino – Italian Fish Stew Recipe
Ingredients
1. Fresh fish (flounder, haddock, perch), boned and cut into 1 inch pieces fresh fish (1/2pound)
2. shrimp in the shell (1pound)
3. chopped parsley sprig (6)
4. freshly grated Parmigiano-Reggiano cheese (2tbsp)
5. lemon wedges (8)
6. scrubbed clean, clams in the shell (6)
7. red wine (1/2c)
8. oregano (1tsp)
9. marjoram (1tsp)
10. rosemary (1tsp)
11. chopped garlic (2cloves)
12. thinly sliced celery (2stalks)
13. chopped onion (1)
14. tomato juice (3c)
Method of preparation:-
1. Take a pot, add tomato juice in it and keep it to simmer over low heat. Now add fish, oregano, garlic, onion, marjoram, celery and rosemary in the pot.
2. Cover the pot and keep it to simmer for an hour until the broth gets thickened. Add shrimp, wine and clams in the pot and keep the mixture to boil. Now turn down the heat to low and keep it to simmer and cook the shrimp until it changes its color to pink.
3. Take heated serving bowls, place the shrimp in it and add cheese, parsley and lemon wedges on the top and then serve it.
Scallops With Garlic Recipe
Ingredients
1. Bay scallops (1pound)
2. chopped garlic (4cloves)
3. extra virgin olive oil (1tbsp)
4. fresh ground black pepper (1/4tsp)
5. salt (1/4tsp)
6. freshly chopped parsley (1/2c)
7. heavy whipping cream (8oz)
8. diced tomatoes (1can or 15oz)
9. butter (3tbsp)
10. chopped shallots (2)
11. angel hair pasta (1pound)
Method of preparation:-
1. Take a heavy frying pan, place it over heat and then heat olive oil and butter in it. Saute shallots and garlic in it for about 1 minute. Now sauté the scallops for about 2 minutes in it.
2. Then mix tomatoes and add salt and pepper in it. Add whipping cream in the pan and then mix it. Cook the mixture until the cream gets thick enough.
3. Take a pot, boil water in it and add pasta in boiled water and then cook it for about 3 minutes. Drain the pasta and place it on the serving plate.
4. Place scallops and add sauce on the top of it. Then sprinkle the chopped fresh parsley over it and serve it.
Tuscan Salmon Recipe
Ingredients
1. Salmon fillets (4 about 6oz)
2. chopped fennel (1bulb)
3. fresh spinach (1pound)
4. extra virgin olive oil (5tbsp)
5. lemon juice (1/2c)
6. fresh ground black pepper (1tsp)
7. salt (1/4tsp)
8. fresh dill chopped (3tsp)
9. chopped garlic (3cloves)
10. chopped sun dried tomatoes (1/2c)
11. marinated artichoke hearts (1small jar)
Method of preparation:-
1. First heat the oven to 400 degrees. Take a baking dish, grease it with olive oil. Take salmon; place it on the dish with skin side down. Apply the olive oil over the salmon and keep it aside.
2. Take a frying pan, heat oil in it and add garlic, fennel and artichoke hearts in it and then saute them. Now take off the pan from the heat and mix lemon juice, salt, pepper, sun-dried tomatoes and dill in it. Pour this mixture over the salmon in the dish.
3. Place the dish in the oven and bake it until the fish gets flake easily with fork for about 15 to 20 minutes. Take spinach, wash it and then steamed it.
4. Place the steamed spinach on the serving plate. Now place salmon on the spinach. Pour the mixture over the top of salmon and then serve it.
Shrimp Fra Diavolo Recipe
Ingredients
1. Peeled and deveined shrimp of medium size (1pound)
2. penne pasta or spaghetti (1pound)
3. chopped carrot (1)
4. butter (1tbsp)
5. diced plum tomatoes (1can or 28oz)
6. chopped celery (1stalk)
7. chopped red bell pepper (1/2)
8. chopped green onions (1bunch)
9. chopped green bell pepper (1/2)
10. extra virgin olive oil (3tbsp)
11. crushed red bell pepper flakes (1tsp)
12. chopped parsley (1/4c)
13. salt (1/2tsp)
14. fresh ground black pepper (1/2tsp)
15. dried oregano (1/2tsp)
16. minced garlic (1 1/2tsp)
17. tomato paste (2tsp)
Method of preparation:-
1. Take a large frying pan, heat butter and olive oil in it. Add onions, celery, garlic, carrots and bell peppers in the pan. Saute them for about 10 minutes until they get soft.
2. Add shrimp in it and mix it for about 5 minutes. Add red pepper flakes, pepper and salt in it. Then add tomato sauce and tomatoe paste in the pan. Cook the mixture and then sprinkle the oregano in the pan.
3. Take a pot and fill it with water. Add pasta in it and cook it for about 10 minutes or until it gets soft. Take a serving plate, place the pasta in it and then place the mixture of shrimp on the cooked pasta. When it gets ready to serve then spread the chopped parsley on the top.
