Spiedini Di Mare Recipe

Ingredients
1. Shrimp, cleaned and deveined (8large)
2. Choose a meaty fillet such as Tuna or Swordfish (1 about 8 ounces)
3. seasoned bread crumbs (3/4c)
4. olive oil (3tbsp)
5. flour (1 1/2tbsp)
6. softened butter (3tbsp)
7. fresh chopped parsley (1/2c)
8. white wine (1/4c)
9. chicken broth (1/2c)
10. lemon juice (1/2c)
11. salt and pepper (to taste)
12. scallops (8 large)

Method of preparation:-

1. Take skewers; place the two pieces of fish, 2 scallops and 2 shrimps alternating on each skewer. Apply the oil on them and then roll the skewers in the seasoned bread crumbs.

2. Take a sauce pan, heat chicken broth, lemon juice and wine in it. Take a bowl, mix flour and butter in it and then add it into the lemon mixture. Keep it to cook over low heat. Add parsley, salt and pepper in it before serving.

3. Place the skewers on high heat to grill for about 3 minutes from each side. Take a plate, place the grilled skewers on it and pour the sauce over the top and serve it.

Baked Halibut Steaks Recipe

Ingredients
1. Diced zucchini (1c)
2. diced fresh tomatoes (2c)
3. minced onion (1/2c)
4. olive oil (1tsp)
5. chopped fresh basil (2tbsp)
6. peeled and minced garlic (1clove)
7. crumbled feta cheese (1/3c)
8. ground black pepper (1/4tsp)
9. halibut steaks (4 about 6 ounce)
10. salt (1/4tsp)
11. diced zucchini (1c)
12. olive oil (1tsp)

Method of preparation:-

1. First heat the oven to 450 degrees F. Take a baking dish, grease it lightly. Take a saucepan, place it over medium heat. Heat olive oil in it and add onion, garlic and zucchini in it. Cook it for about 5 minutes until it gets tender by stirring it.

2. Take off the pan from heat and then mix basil, pepper, salt and tomatoes in it. Now take the dish, place the layer of halibut steaks on it. Put zucchini mixture over each steak with spoon. Sprinkle the feta cheese on the top.

3. Place the dish in oven and bake for about 15 minutes or until the fish gets flake easily by using fork. Now serve the hot baked fish.

Creamy Pesto Shrimp Recipe

Ingredients
Pesto (1/3c), butter (1/2c), grated parmesan cheese (1c), linguine pasta (1pound), heavy cream (2c), ground black pepper (1/2tsp), Peeled and deveined large shrimp (1 pound).

Method of preparation:-
Take a large pot, add water with little salt in it. Keep it to boil and then add linguine pasta in it. Cook it for about 8 to 10 minutes or until it gets soft. Take a large frying pan, place it over medium heat and then melt butter in it. Mix cream in it and then add pepper. Keep it to cook for about 6 to 8 minutes by stirring it. Now in the cream sauce add the parmesan cheese and mix it properly. Add pesto in it and keep it to cook for about 3 to 5 minutes or until the mixture gets thickened. Now add shrimp and cook it for about 5 minutes or until the shrimp turn its color to pink. When it gets ready then serve it over the warm linguine.

Caesar Baked Shrimp Recipe

Ingredients
1. Large shrimp, cleaned, deveined and butterflied (1large)
2. chopped basil leaves (1tbsp)
3. chopped flat leaf parsley (2tbsp)
4. Caesar or light Caesar dressing (3/4c)
5. artichoke hearts, in brine and quartered (1can or 14 ounces)
6. dried bread crumbs (1/2c)
7. rinsed, small capers (1tbsp)
8. dry white wine (1/4c)

Method of preparation:-
1. First heat the oven to 375 degrees F. Take a glass casserole, mix parsley, capers, wine, light Caesar salad dressing and basil in it. Keep about ¼ of this mixture aside. Add artichoke and shrimp into the casserole. Mix this mixture well to coat with sauce.

2. Now take a small bowl, mix bread crumbs with the kept over mixture. Mix it well and then spread it over the artichoke and shrimp in the casserole.

3. Place the glass casserole in oven and bake it for about 20 minutes until the top turns lightly brown in color. When it gets ready then serve it over the rice.

Swordfish A La Siciliana Recipe

Ingredients
1. Swordfish steaks (2pounds)
2. pitted and minced green olives (10)
3. olive oil (5tbsp)
4. minced garlic (1clove)
5. minced onion (1small)
6. raisins (3ounces)
7. diced, ripe tomatoes(1/2 pound)
8. pine nuts (2 ounces)
9. salt and pepper (to taste)
10. capers (1/4c)

Method of preparation:-
1. First heat the oven to 400 degrees F.Take slightly warm water, soak raisins in it. Soak them for about 30 minutes and then drain them. Place them aside.

2. Take a large sauce pan, place it over high heat. Heat olive oil in it. Saute garlic and onion in it until they get soft. Mix olives, raisins, capers, pine nuts and tomatoes in it. Turn down the heat to low and cook it for about 15 minutes by covering the pan.

3. Take a baking dish, grease it lightly with oil and then place the steaks, seasoned with salt and pepper on the dish. Add the cooked sauce over the steaks on the dish. Place the dish in oven and bake it for about 15n to 20 minutes or until the steaks get firm.

Shrimp With Angel Hair Pasta Recipe

Ingredients
1. Shrimp, boiled and peeled (1lb medium)
2. cooked angel hair pasta (16 ounces)
3. parmigiano-reggiano, grated (1/2c)
4. feta cheese (3/4c)
5. salsa (16 ounces)
6. chopped fresh basil (1/2c) or ground basil (1tsp)
7. plain yogurt (1c)
8. shredded provolone cheese (3/4c)
9. half and half (1c)
10. finely chopped fresh Italian parsley (1/3c)
11. lightly beaten eggs (2)
12. butter (1tbsp)
13. oregano (1tsp)

Method of preparation:-
1. Take a pan, grease it with butter. Take a bowl of medium size, mix provolone cheese, feta cheese, oregano, Italian parsley, yogurt, eggs, basil, half and half in it. Mix all these ingredients properly.

2. Place half of the pasta on the greased pan and add half of the shrimp and then pour the salsa over it. Now add the left over pasta over it to cover the mixture and then put the mixture of egg over the pasta.

3. Add left over shrimp and salsa on the top and then spread the parmigiano-reggiano cheese over it. Now place the pan in oven and bake it for about 30 minutes. Take it out from oven and keep it for 10 minutes and then serve it.

Seafood Pasta Recipe

Ingredients
1. Jumbo shrimp, shelled and deveined (1 pound)
2. minced garlic (3cloves)
3. tomato puree (1can or 28 ounce)
4. freshly grated Parmigiano-Reggiano (1/4c)
5. cooked linguini (1pound)
6. red pepper flakes (a pinch)
7. freshly chopped basil (1tbsp)
8. squid (calamari), cleaned and cut into 1-inch pieces (1)
9. uncooked lobster tail, cut into 1-inch pieces (1)
10. tomato paste (1can or 6 ounce)
11. olive oil (2tbsp)
12. diced onion (1small)

Method of preparation:-

1. Take a sauce pan of medium size; place it over medium high heat. Heat olive oil in it and then saute garlic and onion in it until they get soft. Add tomato paste and tomato puree in it. Keep it to simmer for about 20 minutes. Cook it uncovered.

2. After five minutes of cooking add pieces of lobster tail and then after about two minutes add jumbo shrimp and calamari in it. Cook it for about 2 minutes. Add red pepper flakes and basil in it.

3. Take a serving dish, place cooked linguini in it and then place the mixture of calamari over it and then serve it by sprinkle the cheese over it.
