Easy Scampi Recipe

Ingredients
1. Uncooked, deveined shrimp of medium size (1 pound)
2. chopped parsley sprigs (4)
3. finely chopped onion (1/4c)
4. fresh lemon juice (1tsp)
5. dry white wine (1/4c)
6. salt and freshly ground pepper (to taste)
7. unsalted butter (3/4c)
8. crushed garlic (3 to 4 cloves)

Method of preparation:-
1. Take a frying pan of medium size, place it over medium heat. Melt butter in it. Saute garlic, onion and parsley in it for about 10 minutes until they turn golden in color. Add shrimp in it and cook it until it turns to pink in color.

2. Take a dish, take out the shrimp from the pan and place it on the dish. Cover the dish and keep the shrimp warm. Add lemon juice and wine to the left over juices and butter.

3. Keep it to simmer for about 2 to 3 minutes. Add salt and pepper to taste. Pour this mixture over the shrimp.

Calamari Recipe

Ingredients
1. Jumbo shrimp, shelled and deveined (1 pound)
2. minced garlic (3cloves)
3. tomato puree (1can or 28 ounce)
4. freshly grated Parmigiano-Reggiano (1/4c)
5. cooked linguini (1pound)
6. red pepper flakes (a pinch)
7. freshly chopped basil (1tbsp)
8. squid (calamari), cleaned and cut into 1-inch pieces (1)
9. uncooked lobster tail, cut into 1-inch pieces (1)
10. tomato paste (1can or 6 ounce)
11. olive oil (2tbsp)
12. diced onion (1small)

Method of preparation:-
1. Take a sauce pan of medium size; place it over medium high heat. Heat olive oil in it and then saute garlic and onion in it until they get soft. Add tomato paste and tomato puree in it. Keep it to simmer for about 20 minutes. Cook it uncovered.

2. After five minutes of cooking add pieces of lobster tail and then after about two minutes add jumbo shrimp and calamari in it. Cook it for about 2 minutes. Add red pepper flakes and basil in it.

3. Take a serving dish, place cooked linguini in it and then place the mixture of calamari over it and then serve it by sprinkle the cheese over it.

Number of servings – 6 to 8

Baked Orange Roughly Italian Style Recipe

Ingredients
1. Orange roughly fillets (1pound)
2. garlic powder (1/4tsp)
3. Italian seasoned breadcrumbs (1/4c)
4. melted butter (1/4c)
5. salt (1/2tsp or to taste)
6. grated parmesan cheese (2tbsp)
7. chopped fresh parsley (1tbsp)
8. grated Romano cheese (2tbsp)
9. cooking spray

Method of preparation:-

1. First heat the oven to 400 degrees F. Take a baking dish of medium size, grease it with non stick cooking spray.

2. Take a bowl, mix Romano cheese, Parmesan cheese, bread crumbs, garlic powder and salt in it. Take orange roughly fillets, apply butter on both sides of fillets. Dip the fillets in the bread crumbs.

3. Take baking dish, place the fillets on it in layer and then sprinkle parsley over it. Place the dish in oven and bake it for 10 to 15 minutes or until the fillets get flake easily with fork.

Shrimp Fettucine Alfredo Recipe

Ingredients
Peeled and deveined cooked shrimp (1pound), grated parmesan cheese (6tbsp), half and half (1c), butter (1tbsp), fettuccini pasta (1pound), minced garlic (4cloves) and salt (to taste), chopped fresh parsley (1tbsp).

Method of preparation:-
Take a large pot, boil water with little salt in it. Then add pasta in it and cook it until it gets tender and then drain the pasta. Take a large frying pan, heat butter in it and then saute the garlic and shrimp in it for about one minute. Add half and half in it and mix it. Add one tablespoon of parmesan cheese at a time and stir it. When all the parmesan cheese is added then add the salt and parsley in it. Sit the mixture until it gets thickened. When the sauce gets thickened then mix the cooked pasta in it and serve it hot.

Fish With Leeks And Green Onion Recipe

Ingredients
1. Sea bass, escolar, haddock or halibuts fillets, orange roughly (4)
2. sliced leek (1large)
3. green onions, halved lengthwise, cut crosswise into 2 inch pieces (10)
4. olive oil (4tbsp)
5. homemade fish stock or bottled clam juice (1c)
6. thinly sliced garlic (4-5 large cloves)
7. Chopped fresh Italian parsley (as desired)
8. salt and pepper (to taste)

Method of preparation:-
1. Take a large saucepan, place it over medium heat. Heat oil of 3 tablespoon in it. Add garlic and leek and saute it for about 3 minutes. Add stock and green onion in it. Keep it to boil for about 8 minutes or until the liquid gets thickens. Add salt and pepper.

2. Take a large frying pan, place it over medium high heat. Heat the left over oil of 2 tablespoon in it. Sprinkle the salt and pepper over the fish and then put it in the pan and cook it for about 5 minutes from each side.

3. Take plates and place fish on it. Heat the onion mixture in the pan and then spread it with leeks over the fish. When the fish gets ready then sprinkle the parsley over it and then serve it.

Crab And Asparagus Risotto Recipe

Ingredients
1. Refrigerated pasteurized crabmeat (1/2 pound)
2. asparagus or green beans (1/2pounds)
3. dry white wine (1/2c)
4. chicken broth (6c)
5. uncooked Arborio rice (2c)
6. grated parmesan cheese (1/4c)
7. olive oil (2tbsp)
8. diced orange pepper (1medium)
9. chopped onion (1/2c)

Method of preparation:-

1. Take a sauce pan, place it over medium heat oil in it and then add onion and pepper in it and cook it for about 3 minutes until they get soft. Add rice in it and cook them for about 2 minutes.

2. Add wine in it and cook it until the wine gets absorbed and then add hot broth of 2 cups. Again cook it until the broth gets absorbed. Add ½ cup of broth and keep it to simmer by stirring it. Stir it until the broth gets absorbed.

3. Now add crabmeat and asparagus with the broth. Then add cheese in it. Now take off the pan from the heat. Cover the pan and keep it for about 5 minutes. Add more cheese in the risotto and then serve it.

Boiled Mackerel With Peppers Recipe

Ingredients
1. Whole mackerel, cleaned (1 1/2pounds)
2. olive oil (2tbsp)
3. thinly sliced onion (1small)
4. thinly sliced scallions (2)
5. extra virgin olive oil (2tbsp)
6. finely chopped mint (2tbsp)
7. thinly sliced garlic (2cloves)
8. salt and freshly ground black pepper (to taste)
9. red and green bell pepper, seeded and sliced about ½ inch wide and 2 inches long (1large)
10. lemon wedges (for garnish)
11. balsamic vinegar (3tbsp)

Method of preparation:-

1. Take a broiler, heat it. Take a broiling tray; broil the mackerel on it for about 20 minutes until its flesh gets easily separate from the bones. Keep the mackerel at the room temperature. Sprinkle salt and pepper and keep it side.

2. Take a frying pan of medium size, place it over medium heat. Add bell pepper and cook it for about 8 minutes until it gets tender. Add garlic, scallions, onion and mint in it.

3. Cover the pan and keep it to simmer for 3 minutes. Then add salt and pepper and then sprinkle the extra olive oil on the top of peppers. When the dish gets ready then garnish it with lemon wedges and serve it at room temperature.
