Italian Rice Omelets Recipe
Ingredients
1. Cooked long grain rice (3/4c)
2. eggs (6large)
3. diced grayer cheese (1/2c)
4. salami cut into small cubes (2ounces)
5. butter (2tbsp)
6. finely chopped green onion (2)
7. salt and pepper (to taste)
Method of preparation:-
1. Take a medium size bowl, beat egg with salt and pepper in it until it gets well blended.
2. Take a frying pan, place it over medium heat and pour butter and eggs in it. Tilt the pan to spread the uncooked eggs in the pan. Put the remaining ingredients like rice, salami, grayer cheese and onions in the center of the omelet.
3. Fold the omelet and cook it for 4 to 5 minutes over low heat until the filling gets heated enough. Place it on the serve plate and serve it.

Italian Rice With Tomatoes And Fresh Mozzarella Recipe
Ingredients
1. Italian short grain rice (2c)
2. minced garlic (1clove)
3. lightly packed fresh basil leaves (1/4c)
4. extra virgin olive oil (2tbsp)
5. salt (1/4tsp)
6. ground fresh black pepper (1/4tsp)
7. balsamic vinegar (1tbsp)
8. ripe tomatoes cut into chunks (3lsrge)
9. fresh mozzarella cubed (2egg size pieces)
Method of preparation:-
1. Take a saucepan, boil salted water in it. Put fistful of rice in it. When the water starts boiling, stir it and then reduce the heat to low. Simmer it until the rice gets tender.
2. Meanwhile, heat the olive oil in a large frying pan over low heat. Add garlic and then sprinkle basil in it. After 2 minutes, add salt, pepper, vinegar and tomatoes in it. Coat the tomatoes with flavored oil. Drain the rice.
3. Place the rice in warm serving bowl. Sprinkle the mozzarella cubes immediately a few at a time. Stir it after each addition so that they do not clump together. Then mix the rice in the mixture of frying pan. Mix it thoroughly and serve them hot.

Italian Beans And Rice Recipe
Ingredients
1. Cooked brown rice (1 1/2c)
2. olive oil (2tbsp)
3. chopped onion (1medium)
4. chopped celery (2stalks)
5. minced garlic (1tbsp)
6. hot pepper flakes (to taste)
7. can chopped tomatoes (15ounces)
8. 3 cups cooked (1 cup dry) white beans like great northern or navy beans (2 – 15 ounce cans of beans will make 3 cups)
9. dry parsley (1tbsp)
10. basil (1/2to1tsp)
11. Parmesan cheese (for garnishing)
Method of preparation:-
1. First cook the rice, use 1 1/2cup of brown rice and 3 cups of water. Take onion and celery and then chop them.
2. Take a pan, heat oil in it. Then saute garlic, hot pepper flakes and onions. Saute it until the onions gets tender. Add 3 juicy cups of cooked beans and unstained tomatoes in it.
3. Mix all these ingredients. Add parsley and basil in it according to your desire. Boil all these ingredients and then reduce the heat to low and simmer it for about 10 minutes. Then put it over the brown rice. Sprinkle the parmesan cheese and hot pepper flakes over it.

Italian Rice Fritters Recipe
Ingredients
Uncooked rice (1c), eggs separated (3), vegetable oil (for frying), grated zest (2lemons), granulated sugar (1c) and milk (3c).
Method of preparation:-
Take a saucepan, mix rice, milk and sugar in it. Place the pan over medium heat and then boil it. Now reduce the heat to low. Cover it and simmer until the milk gets absorbed for about 15 to 20 minutes. Take a baking sheet, spread rice on it and keep it in refrigerator for 15 minutes. Take a large bowl, mix chilled rice, 3 egg yolks, lemon zest and salt in it. In another bowl whip egg whites in it until form soft peaks and add it into the rice mixture. Take a frying pan, heat oil in it. Put the batter with spoon into the oil and fry until gets golden brown from all sides for about 3 minutes. Now drain the fritters on paper towel and serve them hot.
Make 36 fritters.
Vegetable Risotto Recipe
Ingredients
Long grain Italian rice (8ounce), veal or chicken broth (4c), sliced mushrooms (5ounces), peeled tomatoes (2), cooked red beans (1small can), pine nuts (1tbsp), red bell pepper (1/2), butter (2ounces), onion (1), salt and freshly ground pepper.
Method of preparation:-
Take bell peppers and mushrooms and cit into slices. Crush the tomatoes. Take rice, wash and rinse them. Measure rice in a container and use double for the broth. Peel and dice the onion. Take a deep pan. Place it over medium heat, melt ½ of the butter in it and then fry onion in it until gets golden brown. Add rice and 2 cups of broth in it. Take another pan saute bell pepper and mushrooms in it. Add tomatoes and cook it for about 6 to 8 minutes. Add these vegetables to the rice mixture. Mix red beans and remaining broth in it. Take a small pan, fry pine nuts in it without oil until gets golden. Place the risotto in a service plate and add pine nuts on the top of risotto and serve it hot.

Gamberi Con Riso Recipe
Ingredients
1. Italian rice avorio (2c)
2. frozen shrimps, thawed and shelled (12oz)
3. boiling water (3 3/4c)
4. grated parmesan cheese (1/2c)
5. black pepper (1/2tsp)
6. salt (1tsp)
7. dried basil (1/2tsp)
8. clean and chopped mushrooms (4oz)
9. deseeded and chopped red bell pepper (1medium)
10. finely chopped garlic (1clove)
11. finely chopped onion (1large)
12. olive oil (2tbsp)
13. butter (1/4c)
Method of preparation:-
1. Take a large heavy frying pan, place it over moderate heat and melt butter and oil in it. When it gets foamy then reduce the heat to low and add onion, garlic and pepper in it and fry them for 5 to 7 minutes or until onions get soft but not brown.
2. Add mushrooms, basil, red bell pepper and salt in it. Cook it for 5 minutes and then add rice in it and again cook it for 5 minutes. Now mix shrimps and cook for 1 minute. Add about 1/3 of boil water.
3. Regulate the heat the heat so that rice is bubbling all the time. Stir the rice with fork. Cook it until liquid gets absorbed and the rice swells. Now take off the pan from the heat and then mix the remaining butter. Place the mixture into the warm serving dish. Serve it immediately with parmesan cheese.

Green Rice Recipe
Ingredients
1. Italian rice avorio (1c)
2. butter (5tbsp)
3. fresh green peas (1lb)
4. spinach thoroughly washed (2lb)
5. chopped fresh basil (1tsp)
6. chopped fresh marjoram (1tsp)
7. grated parmesan cheese (1/2c)
8. black pepper (1tsp)
9. water (7/8c)
10. salt (3tsp)
11. chicken stock (1 7/8c)
Method of preparation:-
1. Take a large saucepan, Place it over moderate heat, melt 2 tablespoon of butter in it. Add rice and fry it by stirring constantly for 1 minute. Pour ½ of stock and 1 teaspoon of all ingredients in it.
2. Regulate the heat so that the rice is bubbling all the time. Stir the rice with fork occasionally. When the liquid gets absorbed and rice swells then add 1/3 of stock. Cook the rice until gets tender and firm.
3. Meanwhile take a saucepan, place it over moderate heat. Cook peas with water and salt in it for about 8 minutes until gets tender and then drain the peas and keep them aside.
4. Take another small bowl, cook spinach with salt over moderate heat for 7 to 12 minutes until gets tender. Do not add water as there is enough water left on the leaves after they are washed. Drain the spinach, extract any excess liquid.
5. Sprinkle pepper over it and place 1/3 of it on the bottom of a shallow heatproof dish. When the rice gets cooked then add 1 teaspoon of marjoram and basil. Toss this mixture until the rice gets coated.
6. Now mash the peas in a blender to make its puree. Spread 1/3 of puree over the rice. Heat the grill to high. Sprinkle the cheese over the top and add remaining butter, cut into pieces.
7. Place the dish under the grill. Grill it for 3 to 4 minutes until cheese gets bubbly and brown. Serve it immediately.
