Apple Pastries Recipe
Ingredients
1. Sifted all purpose flour (4c)
2. egg white (1)
3. sugar (2tbsp)
4. coarsely grated apples (6c)
5. cinnamon (1/2tsp)
6. cornstarch (2tbsp)
7. sugar (1c)
8. fine dry bread crumbs (1/2c)
9. commercial sour cream (1/2c)
10. egg yolks (4)
11. salt (3/4tsp)
12. sugar (1/4c)
13. soft shortening (1c)
Method of preparation:-
1. First heat the oven to 450 degrees. Take a jelly roll pan, grease it lightly. Take a bowl, mix, flour, salt and sugar of ¼ cup in it. Add shortening.
2. Take a small bowl, beat sour cream and egg yolks in it and then mix it in the bowl of dry ingredients. Blend this mixture to form stiff dough. Roll the pastry and then place in on the jelly roll pan. Take bread crumbs and sprinkle them over it.
3. Take a bowl, mix cornstarch, sugar of 1 cup, cinnamon and apples in it and then spread this mixture over the bread crumbs. Now beat the egg whites and apply it over the top of the pastry. Dust sugar of about 2 tablespoons on the top.
4. Place the pan in oven and bake for about 15 minutes at 450 degrees. Turn down the temperature of the oven to 350 degrees and again bake for about 20 minutes until the color changes to brown. Take out the pan from oven and cut into squares. Serve them warm or cold.
Chocolate And Polenta Tart Recipe
Ingredients
For Tart Shell:-
1. All purpose flour (1 1/2c)
2. vanilla extract (1tsp)
3. olive oil (2tbsp)
4. egg (1large)
5. butter of (1stick cut it into 1/4inch cubes, kept cold)
6. Zest of (1 lemon)
7. salt (1tsp)
8. sugar (3/4c)
9. instant polenta (1/2c)
For Tart:-
1. Eggs (2large)
2. vanilla extract (2tsp)
3. butter (1 stick at room temperature)
4. all purpose flour (1tbsp)
5. fine polenta (3tbsp)
6. salt (a pinch)
7. granulated sugar (1/2c)
Method of preparation:-
Tart shell:-
1. Take a food processor, put flour, sugar, salt and polenta and lemon zest in it. Blend them to mix all the ingredients. Add cold butter in it and mix it.
2. Take a bowl; mix the remaining ingredients in it. Add the mixture of wet ingredients to the mixture of dry ingredients. Mix all the ingredients well to make a ball of dough. Form the dough disk about 2 inches thick.
3. Cover the dough with plastic wrapper and keep it in the refrigerator for about 2 hours.
For Tart:-
1. First heat the oven to 350 degrees. Take out the chilled dough from the refrigerator and roll it. Place the rolled dough on the pan.
2. Place the pan in the refrigerator and keep the dough to chill. Meanwhile melt the butter and chocolate over low heat by stirring it.
3. Take a mixer, blend eggs, salt and sugar in it on high speed for about 3 minutes. Add vanilla in it and mix it. Add egg mixture to the melted chocolate. Mix polenta and flour in it. Put this mixture into the tart pan.
4. Place the pan in oven and bake it for about 25 minutes. Take out the pan from oven and keep it to cool and then sprinkle the confectioner sugar in it.
Pasta With Pancetta, Sausage And Two Cheeses Recipe
Ingredients
1. Penne rigata, ziti or similar pasta (1pound)
2. ricotta cheese (3c)
3. olive oil (3tbsp)
4. 4 fresh sage leaves finely chopped about (2tbsp)
5. sweet Italian bulk sausage (1/2pound)
6. chopped pancetta (2ounces)
7. finely chopped garlic (2tbsp)
8. salt and pepper (to taste)
9. red pepper flakes (optional)
10. freshly grated Romano cheese, more for garnish (1/4c)
Method of preparation:-
1. Take a pot of salted water. Place it over heat, boil water and then cook pasta in it as per directions for al dente.
2. Meanwhile take a large sauté pan. Place it over medium high heat. Add oil in it and then sauté pancetta and sausage in it until gets brown for about 4 minutes. Add garlic and sauté for another 1 minute.
3. Vigorously mix the ricotta cheese until it gets smooth and then add to the pan with sage, red pepper flakes, salt and pepper. Mix it until the cheese mix up with the sausage. Now drain the pasta.
4. Then add the pasta to the sauce with reserve liquid. Add Romano cheese and mix it well for about 1 minute. Take off the pan from heat and then serve it immediately and garnish it with Romano cheese.

Pasta –Col Ragu Alla Bolognese Recipe
Ingredients
1. Pasta (1to2lbs)
2. butter (1tbsp)
3. extra virgin oil (4tbsp)
4. dry white wine (1c)
5. tomato sauce (1/4c)
6. finely chopped celery (1stalk)
7. finely chopped carrots (1/3c)
8. finely chopped white onions (3/4c)
9. finely chopped non smoked beans (1/4c)
10. ground pork (7oz)
11. extra lean ground beef (1lb)
12. pancetta (200g)
13. salt and pepper (a pinch)
14. broth (1c)
Method of preparation:-
1. Take a pan. Place it over heat. Heat the olive oil and then add vegetables like carrots, onions, beans and celery. Cook them for about 5 minutes or until they begins to soften.
2. Raise the heat to high and then add beef, pancetta and pork in it. Mix it well. After about 5 minutes when the meat has lost most of its red color then add 1 cup of white wine and cook it over high heat by mixing it often.
3. Cook it until the wine gets evaporate and then add tomato sauce, a pinch of salt and pepper. Mix it well.
4. Now lower the heat to simmer, cover the pan and cook it slowly for about 2 1/2hours. Be sure that it does not get dry. If it gets dry then add 1 cup of broth in it. When it gets ready then adds the butter in it.

Pasta Con Seppioline Gratinata Al Forno Recipe
Ingredients
1. Forfalla pasta (bow tie) (12oz)
2. thinly sliced white onion (1small)
3. ground dry bread crumbs (1tbsp)
4. fresh chopped Italian parsley (2tbsp)
5. chopped canned tomatoes (2c)
6. minced garlic (1clove)
7. smaller cuttlefish (1lb)
8. extra virgin olive oil (5tbsp)
9. salt and pepper (a pinch)
Method of preparation:-
1. Take a cuttlefish. Clean it and slice it into half inch strips. Take a sauce pan. Place it over high heat. Put 2 tablespoon of olive oil in it and then cook cuttlefish with a pinch of salt and pepper. Take off the pan from heat and keep it aside.
2. Take a pan, put 3 tablespoon of olive oil in it and then saute onions in it until gets translucent. Add tomatoes in it with a pinch of salt and pepper and cook for about 10 minutes and then add cuttlefish to the tomatoes and again cook it for 3 to 4 minutes.
3. Meanwhile for cooking the pasta, take a pot of water. Boil it with 1 tablespoon of salt and add pasta. Cook it until pasta gets soft or firm to touch. Then drain the pasta and add it to the sauce. Mix it well and pour it all into a baking dish.
4. Take a bowl, mix garlic, bread crumbs and parsley in it and then sprinkle them over the pasta. Bake it in preheated oven for 10 minutes at 350 degrees F. when it gets baked hen serve it in a serving dish.

Pasta Con Salsa Di Pomodoro E Funghi Recipe
Ingredients
1. Pasta (1lb)
2. finely chopped onions (1)
3. olive oil (3tbsp)
4. dried porcini mushrooms (3/4c)
5. canned plum tomatoes (1lb)
6. fresh finely chopped Italian parsley (3tbsp)
7. salt (to taste)
Method of preparation:-
1. Take mushrooms, soak in water. Take a sauce pan, place it over heat. Put oil in it and then saute onions in it.
2. Meanwhile pass the tomatoes through a vegetable ricer (food mill). Strain the mushrooms and then cut them into pieces and then add them to the onions in the sauce pan and then mix them well. Then add tomato sauce, mix it again and then add according to taste. Cook it over simmer for 15 minutes.
3. Take a pot of water. Place it over heat and boil water with1 tablespoon of salt and then add pasta and cook it until gets soft. When the sauce is cooked then takes it off from the heat and then adds parsley.
4. Drain the pasta, add it to the sauce and mix it well. Place it on serving dish and serve it hot with grated parmesan.

Pasta With Sausage, Pepper And Tomatoes Recipe
Ingredients
1. Penne or similar pasta (1pound)
2. dried marjoram leaves (1tbsp)
3. dried thyme leaves (1tsp)
4. whole tomatoes crushed with finger with juice (2cans)
5. minced garlic (6large cloves)
6. dried basil leaves (2tbsp)
7. slightly crushed fennel seeds (2tsp)
8. coarsely chopped red bell pepper (1medium)
9. coarsely chopped green bell pepper (3medium)
10. chopped onion (1small)
11. bulk mild Italian sausage (1pound)
12. olive oil (4tbsp)
13. salt and pepper (to taste)
Method of preparation:-
1. Take a large frying pan, place it over medium heat. Add oil in it and then saute sausage in it until gets lightly brown for about 5 minutes, breaking its lumps as it cooks.
2. Now add onions, red bell pepper, green bell pepper, a tablespoon of basil, fennel seeds, salt and pepper. Saute those until the peppers get slightly tender for about 5 minutes. Add garlic and again saute it.
3. Now add tomatoes and remaining basil, thyme, marjoram, salt and pepper. Stir them well. Now reduce the heat to medium low and cover the pan and simmer until the tomatoes are broken down and peppers get tender about 20 minutes.
4 Take off the lid and cook until sauce gets slightly thicken. Cook pasta in salted water and then drain it. Add it to the sauce. Mix it and serve it immediately.
