Chicken Broccoli And Garlic Pasta Casserole Recipe
Ingredients
1. Chicken breasts tenders (strips) (3/4lb)
2. bay leaf (1)
3. whole milk (1 1/2c)
4. chicken broth (1 1/2c)
5. dried thyme (1tsp)
6. flour (3tbsp)
7. chopped garlic (2cloves)
8. butter (2 1/2tbsp)
9. steamed and chopped broccoli (3c)
10. salt and pepper (to taste)
11. cooked penne or small tube shaped noodles (3oz)
12. parmesan cheese (3tbsp)
13. cottage cheese (1/2c)
14. chopped parsley (2tbsp)
15. nutmeg (a pinch)
16. chopped onion (1c)
Method of preparation:-
1. First heat the oven to 350 degrees F. Take a large bowl, mix cooked pasta and broccoli in it and then keep it aside.
2. Take a saucepan, place it over medium heat. Heat butter in it and cook onion in it for about 3 minutes until gets soft. Add garlic and flour in it and cook it for 1 minute and then mix thyme in it. Slowly add broth, bay leaf and milk in it.
3. Turn down the heat to low and keep this mixture to boil for about 10 minutes. Now add chicken in it and cook it for about 2 to 3 minutes until the chicken gets cooked. Take off the pan from heat and season it with salt and pepper and nutmeg.
4. Take bowl of pasta and broccoli and then add parsley and mix it well. Put the casserole into greased baking dish. Sprinkle parmesan cheese and cottage cheese over it. Bake it for about 20 minutes until the top changes to light brown in color.
Citrus And Garlic Chicken Pasta Recipe
Ingredients
1. Penne pasta (1lb)
2. thinly sliced chicken breast (4pieces)
3. oranges (4)
4. onion (1med.)
5. head of garlic (1)
6. orange bell peppers (2)
7. whole wheat cibatta bread (4pieces)
8. fresh sage leaves (10 to 12)
9. fresh rosemary (1sprig)
10. dried rosemary (2tsp)
11. dried oregano (2tsp)
Method of preparation:-
1. Take onion and garlic and cut it into small pieces. Then take orange bell pepper and cut it into ¾ inch cubes.
2. Take a pan, heat oil in it and saute vegetables in it for about 1 minute. Take out the veggies from pan and use the left over oil to coat bread.
3. Place the bread in oven and bake it at 350 degrees F for about 10 minutes. Now cook chicken in the pan. When the chicken gets cooked from one side then squeeze the juices and the zest of 2 oranges over chicken in the pan and then heat up the juices for 1 minute. Then add veggies and spices in the pan.
4. When the chicken and vegetables get cooked then take out them from the pan, add pasta in the pan and heat it in left over oil. When the pasta gets heated then add vegetables and chicken back in the pan. Keep it to heat for 1 to 2 minutes to blend the flavors. Transfer it in serving plate and serve it.
Chicken Ratatouille Pasta Recipe
Ingredients
1. Boneless, skinless chicken breasts, cut into ½ inch pieces (3/4 pound)
2. vegetable oil or olive oil (2tbsp)
3. uncooked penne rigate or mostaccioli pasta (3c about 8 oz)
4. Ragu Light pasta sauce- tomato and herb (1jar)
5. thinly sliced zucchini (1 1/2c)
6. diced eggplant (1 1/2c)
7. green pepper strips (1c)
8. grated parmesan cheese (optional)
Method of preparation:-
1. Take a large saucepan; place it over medium high heat. Heat oil in it and then add chicken and green peppers in it. Cook it by stirring regularly and then add zucchini and eggplant in it and cook it for about 3 minutes by stirring regularly until the vegetables get soft.
2. Mix pasta sauce in it and keep it to boil. Now turn down the heat to low and keep it to simmer uncovered for about 10 minutes until the chicken gets cooked properly.
3. Meanwhile cook pasta in a pot according to instructions of package and then drain it. Now spread the chicken sauce with spoon over hot pasta, dust parmesan cheese over it and then serve it.

1. Diced and cooked chicken (3c)
2. salt (1/2tsp)
3. crushed hot red pepper (1/4tsp)
4. minced garlic (1clove)
5. Dijon mustard (2tsp)
6. balsamic or red wine vinegar (3tbsp)
7. extra virgin olive oil (1/2c)
8. green beans, cut diagonally in half (1/2 pound)
9. ziti or other short tubular pasta (3/4pound)
10. anchovies rolled in capers (1can about 2 ounce)
11. cherry tomatoes, halved (12)
12. chopped fresh basil (3tbsp or 1tp dried)
13. chopped parsley (1/4c)
14. sliced black olives (1/2c)
15. red onion, diced (1/4c)
Method of preparation:-
1. Take a large pot, boil salted water in it and then cook pasta in it for about 8 to 10 minutes. Then add green beans in it and boil it for about 4 to 5 minutes until the pasta gets soft and the beans get crispy.
2. Then drain the pasta and beans in colander and then wash under cold water and drain well.
3. Take a large bowl, mix olive oil, mustard, salt, hot pepper, garlic, vinegar in it. Then add pasta and green beans, basil, parsley, olives, red onion and chicken in it. Mix all these ingredients properly. Take a shallow serving bowl, place the salad in it and decorate it with anchovies and tomatoes and serve it.

1. Boneless chicken breasts halves, skinned (1pound)
2. water (1c)
3. paprika (1/4tsp)
4. vegetable oil (1tsp)
5. vegetable cooking spray
6. small bowtie pasta (1/2 pound about 2c)
7. pepper (1/4tsp)
8. paprika (1/2tsp)
9. ground ginger (1tsp)
10. cider vinegar (1/4c+2 tbsp)
11. unsweetened orange juice (1c)
12. toasted sliced almonds (1/4c)
13. oranges, peeled, sectioned and seeded (4med.)
14. fresh broccoli, cut into 1 inch pieces (3/4pound)
Method of preparation:-
1. Take pasta; cook it in large pot according to package instructions by adding salt in it until the pasta gets soft. Drain it and place it in a bowl and keep it aside.
2. Take chicken, trim it and then cut it into small strips. Take a frying pan, coat it with cooking spray and heat oil in it. Add chicken in it and saute it for about 5 minutes until it gets soft. Mix ¼ teaspoon of paprika in it. Add chicken to the pasta in bowl.
3. Clean the frying pan with paper towel and boil water in it. Add broccoli, turn down the heat to low, cover the pan and keep it to simmer for about 3 minutes until broccoli gets soft. Drain it and keep it aside to cool.
4. Take a small bowl, mix ginger, orange juice, ½ teaspoon paprika, vinegar and pepper in it. Mix it well. Then pour this mixture into the chicken and pasta. Add the orange sections in it and mix them to coat.
5. Place this mixture into the baking dish, cover the dish and keep it to chill. Before serving add broccoli and almonds in it and mix well. Then serve it chilled.

1. Diced cooked chicken (2c)
2. elbow macaroni (1pkg. about 8 ounces)
3. salt (1tsp)
4. tarragon vinegar (1/3c)
5. vegetable oil (1/2c)
6. sliced celery (1/2c)
7. diced cheddar cheese (1c)
8. frozen peas and carrots (1pkg. about 10 ounces)
9. chopped green onion (2tbsp)
10. chopped parsley (2tbsp)
11. pepper (1/4tsp)
12. dry mustard (1/4tsp)
13. leaf marjoram, crumbled (1/2tsp)
14. sugar (1/2tsp)
Method of preparation:-
1. Take a pot, cook macaroni in it according to instructions of pasta package. Drain macaroni, wash it in cold water and again drain it.
2. Cook frozen carrots and peas in pan according to package instructions until they get soft. Drain carrots and peas, keep them to cool and then add them in cooked macaroni in a large bowl. Then add chicken, celery and cheese in it.
3. Take a jar with tight fitting, mix all the remaining ingredients in it by shaking them. Then pour this mixture over the macaroni and mix it well. Keep it in refrigerator to chill. Now decorate it with tomatoes and crispy lettuce.

1. Chicken, cut up (1 about 3 ounces)
2. chopped onion (1large)
3. chopped ribs (2celery)
4. garlic crushed through press (2cloves)
5. olive oil (3tbsp)
6. carrots, peeled and chopped (2med.)
7. chicken broth (4c)
8. white cannellini beans, drained (2cans about 15 ounces)
9. tomatoes with their juices (1can about 16 ounces)
10. salt and freshly ground pepper (to taste)
11. grated parmesan cheese (1/4c)
12. chopped parsley (1/2c)
13. ditali or other small tubular pasta (1c about 3 ounces)
14. crushed hot red pepper (1/4tsp)
15. dried marjoram (1tsp)
16. dried rosemary (1tsp)
Method of preparation:-
1. Take a large saucepan, place it over low heat. Add chicken broth in the pan, partly cover the pan and keep the broth to simmer for about 45 minutes.
2. Take out the chicken from pan and keep it to cool. Then remove the bones from chicken and throw them. Keep the broth aside and skim off grease.
3. Place the saucepan over medium heat, heat olive oil in it and then cook onion, chopped ribs and carrots in it by stirring regularly for about 5 minutes until the mixture gets soft. Add garlic in it and again cook it for 1 minute more. Now add beans, marjoram, tomatoes with juices, rosemary, reserved chicken broth, hot pepper and 3 cups of water in it. Keep this mixture to boil.
4. Turn down the heat to medium-low and add pasta in it, cover it partly and then keep it to simmer for about 12 to 15 minutes until the pasta gets soft. Mix parsley and cheese in it and then mix salt and pepper in it according to taste.
